Whats In The Times Up Tomato Blend Reaper Hot Sauce
Theres a long list of ingredients to bring this bold sauce to life:
- Distilled vinegar
- Xanthan gum
This is a hot sauce that relies heavily on powders, instead of fresh ingredients. And theres a likely reason. The Carolina Reaper is potent, and fresh garlic and onion tend not to be as bold and aggressive as their powdered equivalents. Garlic and onion powder, are, in fact, a benefit to make sure the flavor delivers as expected.

How Hot Is Measured
If youre not familiar with the Scoville scale, its simply a system for indicating how spicy something is. A jalapeño is between 2,500 and 8k. An orange habanero is between 150k-325k. Many super hot sauces put these peppers to shame, and thats where I now find myself.

Mad Dog 357 Plutonium No9 9000000 Shus
The warnings are plastered across the packaging of Mad Dog 357s Plutonium No. 9 hot sauce . Coming in at a whopping 9,000,000 SHUs, this can hardly be considered an actual condiment.
In fact, it states that this is not to be consumed directly, but rather used only as a food additive. Not just this, but the stuff might need to be heated to 140°F just to get it out of the bottle.
No thanks. This stuff is just too high maintenance for us. We have not bothered buying this sauce, both because it is certainly intolerable to eat, but also because the price is pretty wild. I guess extracting pure capsaicin is a costly process.
This is the end of the road for the hottest hot sauces in the world, but we wont be surprised if someone finds a way to eke out another million Scoville Heat Units in the next batch of liquid misery.
Just when you think youve seen the hottest pepper and the hottest hot sauces, something new breaks the boundaries. We know where our limits are when it comes to pepper heat, but some like it much, much hotter than we do, and we can understand.
We hope this helps you find where your favorite bottle of hot sauce falls on the Scoville scale. Let us know what sauces you love and how hot they are!

Wicked Nightmare stars a trio of chili pain: the habanero, the ghost pepper, and the Trinidad Scorpion. Each is hotter than the next, and Wicked Nightmare also uses additional chili extract that gets the bottles total Scoville heat units up to over 2 million! Ouch. Whether thats a trick or a treat is up to your heat tolerance. Though follow the warning on the bottle its meant as a food additive in cooking, not to be eaten on its own. Take it seriously.
The packaging hits the perfect pure creepy note: a giant skull in icy hues of white and blue. It feels like something that just jumped out of the closet. Even the cap has an air of spooky and strange medicinal uses due to the built-in dropper.

Tabasco Hot Sauce 2500 Shus
Another household staple is Tabasco Brand hot sauce. They make a variety of new flavors, branching out from their original recipe, but the original is truly special.
Tabasco can bring a bland meal to life with just a few small dashes. Just three ingredients go into this sauce zingy vinegar, red pepper and salt. The proportions work just right for sandwiches, pizza and pretty much anything else.
The heat level is stepped up a bit for Tabasco, reaching a claimed 2,500-5,000 SHUs on the Scoville scale, depending on the batch. This is tolerable to most but is noticeably spicier than Franks.

Da Bomb Beyond Insanity 135000 Shus
Well-hated in the hot sauce community for years and years, Da Bomb is notorious for its aggressive heat. Yes, weve tried it, and it is just as bad-tasting and brutally spicy as all the unfortunate Hot Ones guests make it seem.
The reason for this is that the ingredients in Da Bomb are more an effort to shock you, while the flavor is just an afterthought. The heat comes from habaneros, but also pepper extract, which gives it an almost metallic, battery-acid flavor.
It isnt good.
It doesnt need to be in anyones fridge. But theyve probably sold millions of the dang bottles. Oh well, thankfully there are other sauces that are even hotter, but with delicious flavor, too.
Da Bomb comes in at a relatively tame 135,000 SHUs on the Scoville scale, though we think that it tastes hotter. This can happen, since the Scoville scale doesnt always tell the whole store for how a hot sauces heat level feels. Da Bomb burns on the same level as the Last Dab hot sauces, though those claim to be 10X hotter on the Scoville scale. *shrug*
Satans Blood 800000 Shus
And now weve enteredare you kidding me? territory. This is only loosely described as a hot sauce since the ingredients consist of pepper extract, an emulsifier, and vinegar. Satans Blood is not intended to be used to enhance the flavor of food. The only goal was to make food fiery hot.
I would have to say that they succeeded.
I think the reason I bought it was the sinister packaging, coming in a bottle that looks like an evil witchs poison vial.
Yes, I have tasted this substance. It was not pleasant. It was hardly even food. But it was probably the hottest, most concentrated spicy food Ive ever eaten. This is why I included an asterisk next to the Scoville rating
Though Satans Blood has been officially rated at 800,000 SHUs on the Scoville scale, the experience is much more intense than previously mentioned hot sauces. This is almost entirely made of pepper extract, a concentration of capsaicin in liquid form. No flavor, just heat.

Mad Dog 357 Gold Edition
Scoville units: 1 millionPeppers used: Carolina Reaper, scorpion, ghost
David Ashley has been making hot sauces for over 30 years, and his most potent concoction on the market uses a blend of reaper, scorpion, and ghost peppers, plus something called Plutonium Extract. That may sound like something Homer Simpson deals with at the Springfield Nuclear Power Plant, but its actually Ashleys proprietary extract of peppers from around the globe that counts 9 million on the Scoville scale. The bottle comes with a bullet attached to the neck, and you can decide the implications of that. Buy it here.

Why Do You Ferment Hot Sauce
Fermented hot sauce has a deeper and more complex tangy flavor that you wont find in vinegar-based hot sauces. And since its a living product, the flavor continues to develop in the fridge and become even more delicious as it ages.
Time is your friend, as the fermentation process produces more flavor than you could ever get without it.
Plus, fermented hot sauce contains all that wild bacteria thats so good for you!

Several store-bought brands of hot sauce are fermented, including Tabasco, Huy Fongs Sriracha, and Franks RedHot.
However, you can make your own at home with just three ingredients: chile peppers, salt, and garlic.
Though I call this a hot sauce, you can actually keep the fermented product more as a paste , or turn it into a thin and pourable hot sauce or Louisiana-style hot sauce.
The recipe also doubles/triples/quadruples easily, so if you find yourself flush with peppers, you can ferment a big batch and make a few different styles of hot sauce for yourself, or divide it into smaller jars for gifts.
Homemade hot sauce is one of those things that people really delight in , because, well, its not another jar of jam.

Can Hot Sauce Kill You
Well, this is not an easy question. Because the hottest pepper in the world, the Carolina Reaper comes with 2.2 million SHUs while Mad Dog comes with 9 million SHUs. Dingo Widow Maker 682000 Shus
Debuting on season 11 of Hot Ones, the Widow Maker took the number 9 spot on the spicy wing lineup. This means it is undoubtedly spicy to the everyday person, but it only marks the halfway point on our hot sauce Scoville scale list.
Dingo Sauce Co. is based in Western Australia and makes a variety of hot sauces. The aptly named Widow Maker hot sauce uses a blend of 6 different varieties of superhot peppers as the first ingredient. This means serious heat.
However, the sauce also incorporates complementary flavors like lime, garlic and brown sugar, making this a sauce some might actually use. We like the sauces that offer both heat and flavor.
Dingos Widow Maker comes in at an impressive 682,000 SHUs on the Scoville scale, making it one of the hottest all-natural hot sauces in our collection. Without the use of pepper extract, its not common to see Scoville ratings this high.
Daves Ghost Pepper Naga Jolokia Hot Sauce

Despite its name, the Ghost Pepper is far from an ephemeral, barely there apparition, the formerly hottest pepper on the planet is the very definition of here and now. This entry is a blend of Naga Jolokia peppers and pepper extract with roasted garlic pulp for a slightly tamer sauce than the million SHU bottles. But not by much. Use it by the drop not the dollop.
