How to make authentic Italian spaghetti sauce (gravy) from scratch

The question of herbs is always a divisive one. Fresh or dried? Parsley? Oregano? Basil?

I tried a number of iterations using fresh and dried versions of each in various combinations. I ended up settling on a mix of dried oregano and fresh basil leaves and stems.

As it turns out, some herbs are better dried than others. Basil and parsley both taste terrible in their dried formslike papery, bland shadows of themselves. Oregano, on the other hand, fares just fine. The flavor is a little different from fresh oregano, but it’s intense and herbal in its own way, and for my money, is an indispensable element of a good Italian-American red sauce.

Why the discrepancy between the herbs? The difference mainly comes down to how the particular herbs grow. Basil and parsley both have thin, delicate leaves and grow in environments where there is plentiful water and little chance of the leaves completely drying out. Heartier herbs from drier climateslike oregano, marjoram, or rosemaryon the other hand, are far more robust. As a consequence, the aromatic compounds within those herbs also tend to be less volatile so that the plants can retain them even as they lose moisture to the atmosphere.

The end result, as far as we cooks are concerned, is that those heartier herbs from drier places can hold onto their flavor far better when dried than tender leafy herbs.

Faq: How To Make Homemade Spaghetti Sauce With Fresh Tomatoes:

If you would rather use fresh tomatoes instead of canned tomatoes, remember that one 28-ounce can of tomatoes equals about 10 to 12 whole tomatoes, peeled. For this recipe, you will need 20-24 whole tomatoes, peeled, if you want to replace the canned tomatoes with fresh tomatoes. To avoid spending 20 minutes cutting up tomatoes, just toss them into a food processor . Oh- You can chop up your onion and garlic in the food processor, as well. It will save you some time!

How To Properly Serve Spaghetti Sauce On Spaghetti

You know the pasta emoji? Its all wrong. NEVER, serve spaghetti or any pasta like this If you want your pasta to taste the best, then follow my directions below. Dont be tempted to use a colander , or dish the spaghetti onto the plate and then add the sauce. It tastes entirely different this way, and its not better, I can assure you. If you dont believe me, try it both ways.

What Tomatoes Are Best For Homemade Spaghetti Sauce

If using fresh tomatoes, you can never go wrong with a good Roma tomato for spaghetti sauce. Romas are good, meaty tomatoes with few seeds and cook down well into a sauce after they are heated. Dip them in boiling water for 30 seconds to make removing the skins easier before cooking. If using canned tomatoes, my VERY favorite is San Marzano tomatoes. These tomatoes come straight from Italy and they are by far the best. I like getting the 28 oz. can of the whole, peeled tomatoes and crushing them myself with a spatula after they soften and simmer down.

I say this ALL the time but it’s so true, you NEED to buy the best quality ingredients for this to work.

You can’t make the best Italian tomato sauce with low-quality tomatoes. I use chopped canned tomatoes for this quick 10-minute recipe. There are two brands of tomatoes that I use and love Cirio and Mutti which are always canned in a thick tomato juice not water. Both are high quality and reasonably priced.

Spaghetti Sauce Marinara Sauce And Pizza Sauce Whats The Difference

The main difference between the 3 of these sauces is the spices used and the cooking method.

Spaghetti/Pasta sauce is a slow simmer sauce that has a few herbs like basil involved. This is usually a thicker sauce, and you usually add meats and peppers to it. This would never go over a pizza.

The marinara sauce is usually a quick-cooking sauce that only cooks for an hour or less. has a sweeter, deeper flavor. This can be used over pasta or even over pizza.

Pizza sauce is an uncooked tomato sauce. Pizza sauce is typically made with tomato pasta or thicker tomato sauce. It uses different spices from spaghetti sauce, featuring oregano, Italian seasoning, garlic salt, onion powder, and sugar.

  • Heat the olive oil in a 5+ qt. pot over medium heat, and add the onion.
  • Saute for 10 minutes or so, stirring often and being careful not to burn it.

How To Thicken Spaghetti Sauce

If your spaghetti sauce seems a little runny and you want to thicken it up, there are 3 different methods to do so. Often times your sauce can see runny when youve made it using fresh tomatoes, so if you are using fresh tomatoes read up on this. Here are the 3 methods.

1.) Add a very small amount of starch. This can be cornstarch or flour/water roux.

2.) You can add a little bit of tomato paste to thicken things up more and improve the flavor. Add it a spoonful at a time, string after every spoonful.

3.) Increase the temperature to boiling for 5 minutes and stir your sauce. Reduce the temperature and simmer it for at least 10 minutes. This should thicken it up nicely.

Tips For Making The Best Homemade Tomato Sauce

  • Do NOT add sugar! None not even a spoonful. If you find the acidity to be high in the tomatoes, add 1/4 cup of minced carrots.
  • Do NOT add water to the pot. No, no, no! Do not rinse out the tin containers and add that to the sauce. It will water down your sauce and dilute the flavor.
  • If you dont have fresh or dried parsley, feel free to use Italian seasoning instead.
  • Do not use plain olive oil or any other kind of oil. You need a good quality EXTRA VIRGIN OLIVE OIL! It adds great flavor to this recipe. Ive never used anything but EVOO.
  • If you taste test it at the end of the cooking time and feel it needs more garlic, add a sprinkle of garlic powder.
  • If you fancy, add 1/2-3/4 cup of dry white wine at the point of cooking the onions and garlic, cover and continue with instructions.
  • You may add meat add 1 lb- 1.5lb about 3 minutes after adding the onions and garlic.
  • Serve The Sauce On The Spaghetti

    If you want to use a colander, reserve some pasta water. Otherwise, use a pasta fork to take the pasta directly from the pot and place into the sauce . Just remember, the spaghetti goes into the sauce, not the other way around. You can have it over very low heat to keep the pasta super hot .

    Mix well. If the pasta soaks up the sauce and seems too dry, add a little pasta water.

    Add sauce until the pasta is completely coated.

    There are two ways to serve spaghetti: twirled , or simply placed as is, into a bowl .

    To serve restaurant style, use a large fork, or tongs to twirl the pasta inside a ladle.

    Then simply place onto the bowl, or plate.

    Top with a sprig of basil, and serve!

    Family-style or homestyle, is easier: just place the spaghetti into a plate or bowl.

    You can still add that sprig of basil.

    However, either way, a good grating of Parmigiano Reggiano, or Pecorino Romano is an added bonus!

    Simmer The Canned Tomatoes

    Add the San Marzano whole canned tomatoes to the sautéed garlic, turning the heat back to a medium-high. We are looking for a vigorous simmer. Stir occasionally for the next 15-20 minutes. Use the back of a wooden spoon to break up the tomatoes while simmering in the saucepan. You can also use a potato masher.
