Myron Mixons Basic Hickory Bbq Sauce
Myron Mixon is a celebrity in the BBQ world and a 4-time BBQ champion in his own right. Hes also a real showman when it come s to ruling the airwaves with top-rated series such as BBQ Rules and BBQ Pitmasters on the Discovery channel. He recently shared his winning BBQ sauce that is reportedly excellent for pork, beef, and lamb. Its a woodsy hickory flavor BBQ sauce that has hints of sweet and strong residual flavors.
But does his recipe really measure up? Even the top champions all borrow from each other from time to time. Heres what goes into his award-winning recipe.
- 2 cups ketchup
- 2 tablespoons garlic powder
- 2 tablespoons fresh-ground black pepper
- 2 tablespoons kosher salt
Place everything into a blender and then give the mix these ingredients by pulsing a few times. After that, you transfer this mixture to a medium pot and simmer on medium heat is mixed well. It doesnt need to boil but simmering is just fine. After a couple of minutes, allow the sauce to cool and then transfer to a clean jar. It can store up to 6 months in the fridge.
How good is this sauce?
What makes this sauce a bit of a mystery is that it mentions hickory, but the recipe doesnt have hickory added. It lends its flavor more to a very fine pasta sauce. Some Pitmasters have mentioned that its missing 2 tablespoons of Apple Jelly. Perhaps if you add liquid hickory flavor, it will give this BBQ sauce more definition.

Flavorful This sauce is a sweet and spicy BBQ sauce because it has sweet and also some cayenne and paprika for spice. Its also a little tangy thanks to the apple cider vinegar and Worcestershire sauce. In a nutshell, this easy BBQ sauce has it all!
Keeps well Make up a big batch and keep this sauce in the fridge for up to two weeks, if it lasts that long!

When they beg you for the recipe, you can then tell them Its a secret and mumble the old saw that ends in and then Id have to kill you.
Although the original KC sauces were probably vinegary, hot, and not sweet, similar to Arthur Bryants Original Barbeque Sauce , since the 1970s, the prototype has been KC Masterpiece tomato based, and sweet. The style has spread coast to coast and nowadays, when you say barbecue sauce, although there remain many regional and creative styles, most people think of the KC style.
The best have multiple sources of sweetness multiple sources of tartness multiple sources of heat and it gets layers of flavor from all the above as well as ketchup, Worcestershire, garlic, and salt. Most Kansas City sauces are brass bands with multiple layers of flavors, sweets, and heats. Because they are thick and tomatoey, they sit on top of the meat, not penetrating very far. For this reason you dont want to use too much. Just one or two layers, max. Let the meat shine through. Dont drown it in sauce.
Thats the idea behind my recipe. Its not KC Masterpiece, but it is a KC Classic.

Us Southerners Are Crazy Over Bbq Sauce
Depending what part of the South you are in, you will find a mustard based sauce, sweet and tangy sauce, tomato based sauce, the brown sugar and molasses sauce, the smokey spicy sauce I could go on and on
In the Carolinas, you can not have pulled pork without vinegar based barbecue sauce.
