    Water Bath Canning Instructions

    Canning Spaghetti Sauce

    1. Place jars on a rack inside your water bath canner.

    2. Make sure at least 1 inch of water is covering the tops of the jars.

    3. Once you’ve got rolling boiling water, add lid and process pint jars for 35 minutes or quart jars for 40 minutes.

    NOTE: See recipe notes for altitude adjustments above 1,000 feet in elevation.

    4. Turn off heat and remove the lid from the canner. Allow jars to rest inside the water bath for 5 minutes.

    NOTE: If you remove jars immediately, you run the risk of cracking the jars or the siphoning of liquid, which can inhibit a proper seal.

    5. After the five minutes have passed, using a jar lifter, carefully lift jars out of the canner and place them in a draft-free area on a kitchen towel folded in thirds. Never place hot jars on a cold countertop.

    4 large green peppers, seeded
    4 large onions, cut into wedges
    2 cans tomato paste
    1/4 cup canola oil
    2 teaspoons dried parsley flakes
    2 teaspoons dried basil
    2 teaspoons crushed red pepper flakes
    2 teaspoons Worcestershire sauce
    1 cup plus 2 tablespoons bottled lemon juice

    Steps:

    • In a Dutch oven, bring 2 quarts water to a boil. Using a slotted spoon, place tomatoes, one at a time, in boiling water for 30-60 seconds. Remove each tomato and immediately plunge into ice water. Peel and quarter tomatoes place in a stockpot., Pulse green peppers and onions in batches in a food processor until finely chopped transfer to stockpot. Stir in next 11 ingredients. Add water to cover bring to a boil. Reduce heat simmer, uncovered, 4-5 hours, stirring occasionally., Discard bay leaves. Add 2 tablespoons lemon juice to each of 9 hot 1-qt. jars. Ladle hot mixture into jars, leaving 1/2-in. headspace. Remove air bubbles and adjust headspace, if necessary, by adding hot mixture. Wipe rims. Center lids on jars screw on bands until fingertip tight., Place jars into canner with simmering water, ensuring that they are completely covered with water. Bring to a boil process for 40 minutes. Remove jars and cool.

    My favorite canning spaghetti sauce recipe is adapted from The Encyclopedia of Country Living by Carla Emery. This recipe is very close to theSpaghetti sauce without Meat recipe listed on the National Center for Home Food Preservation website, so you know it’s a safe canning recipe.

    Salt and pepper can be adjusted to taste. It’s okay to substitute an equal amount of fresh basil for some of the celery, green peppers or mushrooms.

    You can also cut this spaghetti sauce recipe in half or to a fourth. Just keep the processing time the same, or freeze the marinara sauce in freezer bags or freezer safe containers instead of canning.

    Mix Or Your Own Seasoning

    Either works equally well. The spaghetti sauce mix for canning has the advantage of being tested and VERY easy to use. It’s basically a type of corn starch, onion powder, salt and seasoning. It doesn’t have any preservative to improve the canning, so the advantage is just that it is easier and safe. Remember, this recipe is for NO meat!

    After the skins come off , place the tomatoes in a colander set over a bowl or the sink and let them drain for 30 minutes to an hour until most of the watery liquid has drained off.

    You can speed up this process by using your hands to mash and squeeze the tomatoes or a spoon works too.

    This particular recipe for canned spaghetti sauce hasnt been officially tested for water-bath canning. However, after MUCH research, weve found that if you add lemon juice to the jars this recipe is acidic enough for canning. Tomatoes are in the gray area of having enough acidity, so they might be just fine on their own. But adding a bit of lemon juice ensures their acidity. If youre still worried, you can pressure can them or add more lemon juice or red wine vinegar.

    We had a wonderful blessing this weekend we were given four bushels of tomatoes! After being disappointed in our tomato harvest these unexpected tomatoes were welcomed with opened arms. Youll not get one complaint from me about having to spend my day canning spaghetti sauce, they were a God sent blessing.

    I have been canning spaghetti sauce for years, and almost can do it in my sleep, so I wanted to pass on a step-by-step guide for those of you just starting out canning tomatoes. This spaghetti sauce canning recipe has been passed down through three generations of my family and still is in its original form. Enjoy!

    Step #1 Read the recipe and gather your supplies to be certain you have everything.

    Step #2 -Wash and visually examine your canning jars and lids. You are looking for cracks and chips that would prevent them from sealing properly or cause breakage during the canning process. This recipe makes 12 quarts.

    Step #3 I have found using tomatoes that are at their peak give this sauce the best flavor. Wash and core 1/2 bushel of tomatoes.

    Step #4 Using a food mill puree the tomatoes, separating the seeds and skin from the pulp. You will be only be using the pulp for this recipe. Add the sauce to 21-quart canner.

    Step #5 Using a food processor puree 4 medium sweet peppers, 2 hot peppers, 3 large onions and 2 heaping tablespoons of chopped garlic. Add peppers, onion and garlic mixture to pureed tomatoes.
