Worlds Best Mac and Cheese so creamy, cheesy, and delicious! Just like the original at Beechers in Seattle! Pasta tossed in a quick homemade cheese sauce with Jarlsberg and Jack cheese. We added pancetta crazy good! Everyone cleaned their plate!

Remember this recipe.

Earlier this year we took a trip to Seattle for a few days. We had the best time! Seattle is a great town. I could totally live there. We spent the better part of our first day in town down at Pike Place Market. If youve never been to Pike Place Market, you must go. It is great. They have to most beautiful flowers that Ive ever seen. There are also TONS of fun places to eat. We ate our way down the street and back up again. One of our favorite spots was Beecher. They make their own cheese and claim to have the best Mac & Cheese in the World. We couldnt pass up the chance to try the Worlds Best Mac & Cheese!

The Mac & Cheese was really, really good. Super creamy and cheesy. We both really enjoyed it. Beechers published the recipe on their website, so I whipped up a batch when we got home. I did make a couple of little changes. I didnt have the Beecher cheese, so I substituted Jarlsberg cheese, and I also added some pancetta. We both LOVED this! Especially the yummy pancetta in the pasta.

Worlds Best Macaroni And Cheese

Prep Time: 5 minutes

Generous 1/8 tsp. Chipotle PowderPinch Garlic PowderPanko

1. Grate 1 c. of Beechers Flagship and 1/4 c. of Monterey Jack. Set 2 tbsp. of each aside for later.

A note on Beechers Flagship: Its a blend of cheddar and gruyere. So if youre not fortunate enough to have Beechers in your store, you could substitute a 1:1 white cheddar and gruyere mix.

2. Cook macaroni for two minutes less than directions .

3. While the macaroni is cooking, melt the butter in a small saucepan over medium heat. Ive had this with real butter and with a butter substitute, and I couldnt tell a difference so use whichever you prefer. Once the butter is melted, whisk in the flour. Allow to brown 2-3 minutes.

4. Slowly whisk in milk. As with the butter, Ive had this with whole and skim milk and couldnt taste a difference.

I add the milk a little at a time and mix until smooth between each addition. Once youve mixed in all your milk, allow the sauce to cook until it bubbles and thickens. .

5. Remove the sauce from the heat and whisk in the remaining cheese, salt, chipotle powder, and garlic powder.

6. Pour the cheese sauce over your macaroni and mix.

7. Transfer macaroni to a baking dish and top with the cheese you set aside in step 1. Then sprinkle with panko crumbs. This will give your macaroni a wonderful crunch!

Yum!! Now youre ready to serve it up. Grab a fork and enjoy the rich, gooey goodness!

Beecher’s features a gourmet cheese shop and café in both their Pike Place Market and Flatiron facility. It is considered an anchor of the Pike Place Market, and has become a tourist attraction in its own right. During the day, crowds typically gather in the store, watching through windows as the cheesemakers prepare batches of cheese.

A portion of the cheese curds used in the manufacturing process is set aside to sell directly to visitors at the retail store. The principal cheeses created and sold by Beecher’s are their Flagship and Flagship Reserve varieties “Just Jack”, a form of Monterey Jack cheese “Blank Slate”, a type of cream cheese unpasteurized, raw-milk versions of their Flagship cheeses, and different cheeses seasoned and flavored with spices and herbs. Some of their seasonal varieties have included cheeses similar to Brie.

Beecher’s also has other locations in the Puget Sound region, including a store at the Bellevue Square shopping center, SeattleTacoma International Airport, and Paine Field in Everett. The company’s locations accept mobile ordering through its own app.

We tasted this in Seattle at the Pike Place Market in the Beechers store. It is the best! I had to get their recipe and I found it on the internet It is a very rich creamy comfort food. I do not have Beechers cheese so I improvised with what is available and it came out as tasty as the original. Serve this with a crisp salad. Enjoy!

The cheese factory is housed in a small, glass-walled facility in Seattle’s Pike Place Market, on Pike Place between Stewart Street and Pine Street. The location includes a retail shop and a café that features cheese-based meals. Passers-by in the heavily touristed market can watch the cheese making process. Beecher’s produces over 500,000 pounds of cheese annually. Their manufacturing facility now operates twenty-four hours a day to keep up with their demand. The New York facility is significantly larger than Seattle’s and can produce over three tons of cheese a day.

Additionally, Beecher’s is in the process of developing new types of crackers, designed to not overpower the taste of the cheese with which they are paired.
