This roadside barbecue joint in Brentwood, New Hampshire, looks like it was plucked straight out of Hill Country. The red barn-like building is filled with Lone Star State knickknacks: tin signs, old license plates, posters celebrating iconic barbecue joints. Everything chicken, kielbasa, excellent turkey, sought-after ribs is smoked low and slow over 100 percent hickory without any help from gas or electricity. That labor-intensive process is what makes the ever-popular brisket and pulled pork so darned good. Its like a little piece of Texas in the heart of New England.
Florida: Jenkins Quality Barbecue
Florida may be best known for stone crabs and Cubanos, but as a big farming region, the Sunshine State has a long history of slow-cooked meat. Unlike other Southern areas known for cue, the state has no defined barbecue regions. Individual barbecue joints here have unique styles and techniques that are all their own. Since 1957, Jenkins Quality Barbecue has been scorching palates with its unique hot mustard sauce. New Jersey: The Hambone Opera
Michigander Jeffrey Lee McKay went down to Texas to learn the science of lumber. He spent time working at Big Johns Wood in Whiskey Flats studying the different heat and smoke properties of different varieties of timber. He brought his know-how north, up to New Jersey, where he opened The Hambone Opera in the Trenton Farmers Market. There, McKay uses 18-inch logs of local wild cherry wood to smoke meat for 12 to 13 hours. He calls his unique style Texas heat meets Kansas City sauce, combining the Lone Star State’s favored techniques for smoking his tender pulled pork, chicken, brisket and ribs with KCs famous, tangy tomato-based sauce.

South Carolina is known for whole hog BBQ and mustard based sauces. While the whole hog isnt cooked everywhere, pork is still the most common type of cue you will find in the state. BBQ is a staple in Charleston with places serving the more traditional Carolina fare and others bringing in regional favorites.
Lewis BBQ is one of my favorite BBQ spots not only in Charleston, but in the entire Southeast. John Lewis hails from Texas where he grew up close to the Mexican border. His counter service place has the best Texas style meats and a wide selection of sides. The brisket and pulled pork were both delicious, but the pulled pork was my favorite. Perhaps Lewis love of Mexican flavors influenced the creation of his green corn chile pudding side. It is the perfect consistency between a corn bread and a pudding and the flavor was spectacular.
For a slightly more upscale, nicely decorated BBQ joint try Poogans Smokehouse. Cant decide what to order? Then go with the Four Porksmen. With pork, sausage, bacon and ribs, as Sasha Eats says the sandwich has it all and he would definitely order it again!

Carolina Gold Sauce Aka Carolina Mustard Sauce
Carolina Gold sauce is probably one of the most distinctive regional barbecue sauces. Its defining aspect is mustard, and incontrovertibly so. The playground-yellow condiment is a legacy of the 18th century German settlers to South Carolina, who preferred to eat their smoked meats with mustard. Today, many restaurants in the area serving this style of sauce still have German names, Goldwyn points out.
Mustard sauce can be found in restaurants from Columbia down to Charleston , although this isnt necessarily a consistent trail. As far as I know, mustard sauce is kind of a one-off that pops up in different parts of SC, Scott says.
However, mustard-based BBQ sauces are not just relegated to South Carolina. Miller points out that North Florida has a mustard-based sauce as well, likely from German immigrants . Goldwyn adds that youll also see it pop up in pockets of Georgia.
In addition to mustard, the sauce typically features cane sugar instead of molasses, which preserves its bright hue and acidic punch. In keeping with most Southern styles of barbecue, its usually served over pork.

Goody Coles Brentwood New Hampshire
Frequently rated as the best BBQ joint in New Hampshire and having won numerous regional awards, Goody Coles is certainly worth a visit to anyone, local or otherwise, who has some time in the area. Founded in 2003, it is the realization of a dream for the husband and wife team who left careers in the corporate world to start Goody Coles. Housing one of the worlds largest smokers, the Oyler Barbecue Pit, the smell of smoked hickory wood is evident as soon as you pull up in the parking lot. All their meat is smoked for a minimum of 12 hours, packing it with incredible flavour and tenderness which isnt a guarantee at all US BBQ joints.

Cooper’s Old Time Pit Bar
Coopers operate six locations cross Texas and is home of the big chop. Family owned and operated by the Wootan family coopers is all about the meat. Opened by Tommy Cooper in 1962, they serve a range of classic barbecue dishes, and Ribeyes are available after 5 Thurs Sat. Coopers is different to other Texas barbecue joints. They dont use post oak, instead opting for mesquite branches, mesquite burned to embers, with the meat placed directly on top. This method is called cowboy style reflecting the style used on cattle drives in the past. The big chop is seasoned simply with salt and pepper, before sitting over hit fire to sear for an hour, then slow cooking in a cooler part of the pit.
Nibbling In North Carolina
North Carolina makes a mediocre showing despite making up one of the four pillars of American barbecue styles KC, Memphis, Texas, and Carolina. Raleigh finishes at No. 20, but other Tar Heel cities land farther down the list.
Why didnt North Carolinas signature sauce rank higher? Maybe its because North Carolina cue culture is spread out in the state rather than concentrated in one area like Kansas City or Memphis.
North Carolina, while not the best ranked, is still a destination for those who prefer a hint of tang and a kick of vinegar.

In summer 2010, he set up his own shop in a mobile truck in Indian, Alaska. Goodsell garnered such a huge following for his traditional Southern-style pork, chicken and brisket that he soon opened a year-round brick-and-mortar in Anchorage voted Best BBQ by Anchorage residents four years in a row. Jack Daniels Original No 7 Recipe Barbecue Sauce
The label says HICKORY SMOKE FLAVOR and it means it. This is as smoky a sauce as youll find in a bottle, but not so much it drowns other flavors out its fairly peppery and has a lot of body as well. If you like super-sweet sauces, this one might not be for you though a quick simmer with a bit of honey and butter might do the trick.
Rufus Teague Whiskey Maple
Another incredibly unique flavored-blended barbecue sauce, this Rufus Teague offering is infused with two of the greatest flavors known to mankind: bourbon and maple.
