He brought his know-how north, up to New Jersey, where he opened The Hambone Opera in the Trenton Farmers Market. There, McKay uses 18-inch logs of local wild cherry wood to smoke meat for 12 to 13 hours. Lewis BBQ is one of my favorite BBQ spots not only in Charleston, but in the entire Southeast. John Lewis hails from Texas where he grew up close to the Mexican border. His counter service place has the best Texas style meats and a wide selection of sides. The brisket and pulled pork were both delicious, but the pulled pork was my favorite. Perhaps Lewis love of Mexican flavors influenced the creation of his green corn chile pudding side. It is the perfect consistency between a corn bread and a pudding and the flavor was spectacular.

For a slightly more upscale, nicely decorated BBQ joint try Poogans Smokehouse. Cant decide what to order? Then go with the Four Porksmen. With pork, sausage, bacon and ribs, as Sasha Eats says the sandwich has it all and he would definitely order it again!

Carolina Gold sauce is probably one of the most distinctive regional barbecue sauces. Its defining aspect is mustard, and incontrovertibly so. Cooper’s Old Time Pit Bar

Coopers operate six locations cross Texas and is home of the big chop. Family owned and operated by the Wootan family coopers is all about the meat. Opened by Tommy Cooper in 1962, they serve a range of classic barbecue dishes, and Ribeyes are available after 5 Thurs Sat. Coopers is different to other Texas barbecue joints. They dont use post oak, instead opting for mesquite branches, mesquite burned to embers, with the meat placed directly on top. This method is called cowboy style reflecting the style used on cattle drives in the past. The big chop is seasoned simply with salt and pepper, before sitting over hit fire to sear for an hour, then slow cooking in a cooler part of the pit.

Nibbling In North Carolina

North Carolina makes a mediocre showing despite making up one of the four pillars of American barbecue styles KC, Memphis, Texas, and Carolina. Raleigh finishes at No. 20, but other Tar Heel cities land farther down the list.

Why didnt North Carolinas signature sauce rank higher? Maybe its because North Carolina cue culture is spread out in the state rather than concentrated in one area like Kansas City or Memphis.
