How To Make Green Hot Sauce

Green Hot Sauce is made just like Red Hot Sauce, you just use jalapeños instead of fresnos. The green sauce is a little more mild than the red. To make green sauce:

  • Slice jalapeño peppers into 1 pieces, seeds and pith included, and toss into bowl of food processor with 1 clove garlic, and pulse until finely chopped.
  • Add chopped chilis and garlic, 2 cups vinegar, water, salt, and lime juice and zest to a large stockpot and bring to a boil.
  • Reduce heat and simmer for 20 minutes.
  • Remove from heat and let cool completely to room temperature.
  • Transfer to blender, and puree.
  • Stir in 1/4 cup vinegar, and pour into sterilized bottles. Place dropper lid on bottle, and tightly put cap on. For a thinner sauce, strain through a fine sieve before bottling.

    Keep Sauce In A Plastic Container

    You can store your hot sauce in plastic containers such Tupperware or other name brands. The acidity of the hot sauce should not dissolve the plastic but if you are planning on using plastic containers to distribute and sell your sauce you will want follow certain procedures to sanitize and seal your bottles.

    I will often use small travel size plastic containers if I have several varieties of sauces that I am working on. These are very inexpensive, available at most stores and dont take up much storage space. As I have said before I dont need to permanently store, sterilize or sanitize a plastic container for a sauce if I dont care for the recipe.

    A lot of sauces from small independent manufacturers have a unique bottle shape to them. If you have a select blend of peppers, spices and vinegar type you may want to seek out a unique bottle type to make your sauce stand out even more, if you are setting yourself up for a profitable business.

    Use Scissors And A Hairdryer

    Using scissors and a hairdryer to shrink-wrap hot sauce bottles is very similar to the above method and may be preferred if you dont have an impulse heat sealer and a heat gun. Here are the steps:

  • Fold your preferred shrink-wrap around the bottles neck and cut it slightly larger than its size.
  • Cut off the excessive parts of the shrink wrap. It should cling tightly to the bottle to prevent air pockets.
  • If theres a seam to be sealed, take the hair dryer, and use it to heat directly along the wrapping film overlap.
  • Heat the whole shrink-wrap film evenly until it shrinks. It might take longer than the heat gun, but you can give it a clean look with patience and practice.

    My Process To Make Hot Sauce Is Simple

    Homemade Hot Sauce!

    First, you add a bunch of hot peppers, garlic, , salt and water to a food processor and chop it coarsely to make a thick and pulpy salsa.

    Transfer the mixture to a clean glass jar, cover it with cheese cloth, and place a rubberband around the lip to hold it in place.

    Set aside for 24 hours to kick start the fermentation, then stir in the vinegar and let it ferment for a weekstill covered with cheese cloth.

    At that point, transfer the mixture to a blender and blend until fairly smooth.

    If you want a thinner hot sauce or your blender cant make the sauce smooth enough, you can strain the sauce through a fine-mesh strainer. For a thin and smooth hot sauce you can run it through a cheesecloth lined strainer to remove all pulp. Make sure to squeeze out all the liquid from the pulp if you use cheesecloth!

    If you want to keep the pulp, just add more water to thin it out the desired consistency while youre blending.

Feel free to mix and match different types of peppers to get the flavors and heat levels you desire, but make sure you stick to the same color family. Why? Some folks use nothing but hot peppersso it really is up to you to pick your poison here. Remember: you can always have an extra super spicy pepper nearby to drop into the blender if you want to up the ante. I recommend checking out a Scoville scale and making your plan based on that.

    Different kinds of hot sauce are going to spoil at very different rates. In general, any hot sauce will have a pretty decent shelf life. Thats because most contain vinegar and chili peppers as essential ingredients. Its safe to say that an opened bottle of vinegar-based hot sauce could last three-to-five years if its refrigerated, and unopened could last even longer.

    Shrink bands are the plastic perforated seals that are over the cap and extends to the neck of a bottle as seen on many hot sauces and medications. They are available to purchase through Uline and can be applied with a heat gun but again will be another process for your operations. If you are producing large quantities of hot sauce you will probably want to pursue equipment to make this process much quicker.

    Shrink bands are typically purchased in large quantities of 1,000 or more and will cost just a few pennies each. These seals are only for tamper evident packaging and do not seal the product from air, but it will give consumers the confidence your sauce is fresh.
