To the jar add at least 3 additions to the store bought sauce to give it a fresher taste. I like to add 1 tablespoon real butter, 1/3 cup cream, 2 t fresh, minced garlic, 1/4 c fresh grated Parmesan, 1/2 c steamed fresh broccoli, a sprinkle of garlic salt, fresh black pepper, and a little bit of fresh or dried basil.

KITCHENER People searching for Alfredo sauce at local stores might be out of luck. Valerie Johnston needed a jar to make shrimp fettuccine, but there was none to be found. I went down the pasta aisle where all the sauces are and that portion of the shelf was empty, she said.

  • Johnston searched two other stores, but still wasnt successful.
  • I thought it was really weird when I went to the second and third store, she said.
  • Somethings up with this. Johnston was finally able to snag two jars.
  • Shes not alone in her search.
  • Some other local residents have posted about the shortage on social media.
  • Simon Somogyi, a food supply expert, said companies are limiting production due to the pandemic. Theyre prioritizing flavours that we like to eat and that typically, in the case of pasta sauce, is marinara, he said. Kraft Heinz makes 63 different Classico pasta sauces.

    • Eight of those are Alfredo.
    • Chief Administrative Officer Av Maharaj said theyve reduced sauce types in order to increase overall volume.
    • Its more efficient to make fewer products, but more of those, than many products and fewer, he explained.
    • He said the company is producing 9,000 more cases a month than it was before the pandemic.

    • Heat a large saucepan over high heat until very hot. Add just enough cold water to cover the bottom of the pan. Let the water evaporate but make sure there are a few drops left in the pan. This will keep the cream from scorching and burning on the bottom of the pan. Remove the pan from the heat.
    • Add the cream to the pan and return it to the heat. When the cream comes to a boil, reduce heat to medium/ medium high and continue to boil until it is reduced by half. During that time, add the garlic.

    • 15 ounces diced tomatoes, drained
    • 1/2 pound boneless, skinless chicken breasts, sliced into strips

  • Cook pasta according to package directions, drain and set aside.

  • In a blender, blend together the chicken broth and the sun-dried tomatoes until smooth.

    Oil Packed Vs Dry Sundried Tomatoes

    Sun-dried tomatoes are always in my pantry these days. For this recipe, I use dry sun dried tomatoesnot the kind packed in oil. I buy them from Whole Foods or Trader Joes, and they are great in cream sauces like this because of how much flavor they add to a dish.

    Youll find sun dried tomatoes two ways in the supermarketdry or packed in oil. Both are great, however for WW purposes, I use dry since they are zero points. The oil packed ones are unbelievably delicious because, well, oil.

    Dry packed sun dried tomatoes need to be rehydrated. They are chewy like dried fruit, but unlike dried fruit, they are zero points. Cooking them in the cashew milk rehydrates them while infusing the cashew milk with the bright, tomato flavor.

    You can use the oil in a marinade or salad dressing, but my favorite way to use them is to add both tomatoes and oil to fresh pasta with a little bit of cheese. The tomatoes packed in oil are preserved differently so they are good to go right away, and can be easily added to salads, pastas, etc.

    How To Make Sun Dried Tomato Pasta

    • Cook pasta. Cook pasta on the stove in salted water according to package instructions until al dente. Reserve ¼ cup of pasta water . Drain water from the pasta and add sun dried tomato oil to keep it from sticking.
    • Make the sauce. While the pasta is boiling, prepare the sauce. Heat butter, shallots, and garlic in a large skillet over medium heat. Let simmer until the shallots are translucent. Add thyme, oregano, black pepper and crushed red pepper and stir to combine.
    • Add remaining sauce ingredients. Turn the heat down to low. Add half & half and slowly warm up. Add half of the pasta water. Allow the mixture to heat slowly, but dont allow it to simmer. Add the pesto. Slowly add the Parmesan in small increments, until completely melted together.
    • Tosstogether. Add fettuccine and mix until combined. Toss chopped tomatoes and lemon juice in with the pasta. Serve immediately. Add fresh parsley to the top for serving if youd like.
