I hadnt tried butter chicken up until a few years ago, but I pretty much fell in love with it right away. Still, I hadnt dared to try making my own butter chicken at home until I purchased the KFI Butter Chicken Cooking Sauce from Costco.
The Costco KFI Butter Chicken Cooking Sauce comes in a two-pack. When I purchased it, it was on sale for $4.79 Canadian, which I feel is a very reasonable price. I feel that the regular price of $6.79 is still very fair. Even at full price, you can feel fairly comfortable purchasing it to see if you like it without fearing youll end up wasting a lot of money if you dont.
Costco KFI Butter Chicken Cooking Sauce
Compared to making your own butter chicken sauce from scratch, this jar of sauce is obviously way more convenient. You basically just cook your chicken and add the sauce. Thats it. I like my butter chicken with rice, so I also made some rice to go with it . I cant say its as convenient as the pre-made Costco butter chicken that you simply throw in the oven and heat up, but its pretty close. This sauce still saves a ton of time and makes a quick and easy dinner.

Coco Ichibanya Curry Mix
A nice coco curry recipe is not complete without the use of Japanese curry roux or the proper curry mix. These are now widely available on the market in small cubes, with the Ichibanya brand, and which can be instantly used in curries.
If you are not into utilizing market products, then it is safe to say that you can also prepare this mix at home with your own ingredients. The spices used in this blend are ordinary kitchen cabinet items, mixed in a specific proportion. You can make this mix at home by using the following ingredients:
- 8 tablespoons of cumin
- 1 teaspoon of clove
- 1 teaspoon laurel
Blend all the spices in a blender until it forms a smooth powder. Now you are half done. The real Ichibanya curry mix is known for its solid texture, and for that we need the following ingredients: 3 tablespoons of butter or ghee and 4 tablespoons of all-purpose flour.
Mix every 2 tablespoons of curry powder with 3 tablespoons of butter and 3 tablespoons of flour in a bowl until well incorporated. This will give a crumbly mixture which can either be stored as it is or shaped into a small cube, as it appears on the market. Whichever form you choose, just make sure to keep the mix in a sealed container to protect it against excessive moisture.

Over medium heat, add the coconut milk, red curry paste, fish sauce, and brown sugar. Whisk together and bring to a gentle boil. In a small bowl, add 1.5 TBSP cornstarch to 1.5 TBSP cold water and whisk to dissolve. Add to sauce and simmer until thickened, stirring occasionally. Approx 5 minutes.
Instructions. To make the green curry sauce, in a high-powered blender, add the coconut cream, cilantro, green curry paste, garlic, lime juice, vinegar, sugar, sea salt, and chili flakes. Blend until very smooth. Transfer to a small saucepan and bring to a low simmer, cooking about 2 to 4 minutes, until slightly thicker and reduced.
Add yellow curry powder and turmeric saute for 30 seconds, stirring often. Add coconut milk, maple syrup, salt and stir until incorporated and bring to boil. Add chicken, stir, reduce heat to low and cook uncovered for 15 minutes, stirring occasionally. In a small bowl, whisk cold water with cornstarch and pour over sauce.
