Necessity was the mother of invention when local chef and Minnesota Maker Craig Kaiser received a shipment of habaneros instead of jalapenos in his restaurant produce order. He didnt know what to do with the stack of Habaneros immediately, so he pickled them for later. When he got back to the pickled peppers, he made hot sauce and served it to his staff for family meal. The result was a refreshing, tart, bright, orange hot sauce with a hint of garlic that was a hit. You will find Cry Baby Craigs hot sauce in place of many of the national hot sauce brands at local restaurants, and chefs are using it in their recipes due to its distinctive flavor and forward heat from the pickling of the peppers.

    Derusha Eats Cry Baby Craig’s Hot Sauce

    MINNEAPOLIS We’ve all been there: we meant to order one thing, and instead we get something else.

    A Twin Cities Chef had that happen with hot peppers, but he turned that mistake into a growing business.

    This week Jason DeRusha Eats Cry Baby Craig’s Hot Sauce.

    Craig Kaiser thought he had it all figured out.

    If he popped habaneros, it was because of his job as a top chef at Minneapolis’ Cafe Maude.

    “I also missed being a dad. And that was the main focus. I started coming to the end of my rope of not having time with him,” Kaiser said.

    Nearly four years ago, Kaiser and his wife had a baby son, Craig Junior.

    Around that time at work things went amiss.

    “A delivery shows up and it was wrong,” Jason DeRusha asked.

    “Yes I ordered jalapeños and they sent habaneros. It’s typically too hot of a chili to use in our cuisine. But I didn’t want to waste them,” Kaiser said.

    So he put them in a brine and pickled them. One slow day, he made the habaneros into a sauce.

    “It yielded about two quarts. And it was just for fun. And between the staff and I it disappeared in about two weeks. That’s when it dawned on me, maybe I’m on to something,” he said.

    His wife went back to work, and Kaiser quit his job to stay home with his baby.

    “He was waking up from a nap, and we were talking about names and that’s when it came up. Wah-wah, and I’m like, Cry Baby Craig. So, it stuck, it was a fluke,” Kaiser said.

    Dad and Cry Baby Craig make deliveries together to a couple dozen local restaurants.

    Your Package: What To Expect

    Your seafood package will arrive in a styro insulated box, with 5.5 pounds of dry ice, a thermo-reflective liner, bubble wrap, and air cushions. It will be in a chilled state. Remove it from the box and place in the refrigerator right away to thaw gradually and keep chilled.     Time once more for another hot sauce review, everyone. Welcome back. I am starting to look at a few sauces that I have just a single bottle from the various companies. Ive managed to pick up a few of these, many of them thanks to my subscription from Fuego Box. One such is the sauce that Ive got on order for you today. Its Cry Baby Craigs Habanero & Garlic Hot Sauce. Lets get to it.

    So, I have high hopes for this sauce. Habaneros are my favorite of the hot peppers. And garlic is my favorite additional flavor. So, on paper, this should be exactly up my alley. Lets see if it all pans out for me .

    Looking at the ingredients, its a pretty short list. We start out with distilled vinegar, and then move on to habaneros. Pretty standard start. We continue with water, sugar, garlic, salt, spices, pepper, and xanthan gum. So yeah. Its very straightforward. No strange fruits. No exotic spices . No other out-there add-ons. This is about as cut-down as you can get before you get to something like Franks.

    Opening up the bottle, I get the scent of vinegar along with the scent of the peppers. Its a bit more vinegar scent than Id really prefer, but its not really overpowering. And remember that I just really dont like the scent and flavor of vinegar. All my favorite sauces manage to hide it with the other flavors in the sauce. I can also smell the garlic in there. Thats certainly a good sign.
