How To Make Dairy

Step 1 If you havent already, start by preparing the alfredo sauce. Set aside. Prepare pasta according to package instructions. When pasta is cooked, reserve one cup of cooking water before draining . Drain and set aside while you finish the rest.

Step 2 -While pasta is cooking, slice the mushrooms and cut the chicken. Add mushrooms to a very large skillet and cook over medium-high until they start to soften, about 3 to 5 minutes, stirring often . Remove from skillet and set aside.

Step 3 In the same skillet, add olive oil and chicken pieces. Season with salt. Cook for about 5 to 7 minutes or until chicken is cooked through.

Step 4 Reduce heat to very low heat. Return mushrooms to the skillet. Add alfredo sauce and mix with chicken and mushrooms.

Step 5 Add linguine and ¼ cup reserved pasta water. Mix again gently until all the pasta is well coated with the sauce and chicken + mushrooms are well distributed. If necessary, add more pasta water, a little at a time until you reach the perfect consistency . I recommend using tongs to mix the pasta with the sauce.

Step 6 Turn off the heat, taste, adjust seasonings if needed and serve immediately with chopped parsley.

I decided to use zoodles since both my husband and I are trying to avoid refined carbs like pasta. I just love zucchini anyway I can get it, and one of my favorite ways to eat it is as noodles. Its great to replace pasta in Italian dishes , stir fry dishes, and more.

I just have a little hand held veggie spiralizer, and it works great. When I make zoodle dishes, I use one medium-sized zucchini per person.

When making zoodles, you dont want them to get soggy. So, the best way to prepare them is to bake them in the oven for about 30 minutes at 275 degrees to remove the water.

I use a layer of paper towels on the cookie sheet. Then, I place the zoodles on the paper towels, and cover them with a second layer of paper towels. This pulls out the moisture from the zoodles so they dont turn to mush.
