How to make vegan alfredo sauce from scratch?

  • Sauté onion and garlic

    First, soak the cashews for 5-10 minutes in hot, boiling water .While the cashews are soaking, finely chop onion and garlic. Add olive oil into a small frying pan and heat it over medium heat. Sautée onion for 3 minutes, then add garlic and sautée for additional 5 minutes or until they are tender and fragrant.In the meantime, cook your favorite pasta according to package instructions. I used 450 gr of pasta.

  • Blend

    Next, drain soaked cashews. Rinse them with cold water and drain them again. After that, add sautéed onion and garlic, drained cashews, nutritional yeast, lemon juice, salt, black pepper, and water to a high-powered blender. You can use the starchy pasta water to achieve creamier results. But itll be perfectly fine with fresh tap water, too, if you are not planning to use it for pasta.Blend until smooth and creamy. Taste and adjust the salt as per your taste. Also, you can add more water and blend again if you prefer your sauce thinner. Or add more seasonings if you like ) to make it even more delish.

    Its easy to make your homemade vegan pesto, improving the taste of almost everything. Use it as a pasta sauce or to add extra flavour to soups, sandwiches, stir-fries, or even tofu scrambles. You can make a large batch with fresh basil or any other herb whenever you have them and freeze the vegan pesto for later use, so you always have some on hand.

    This recipe is an easy method to make vegan pesto with a no-nuts option. Although a dairy-free recipe, this pesto has a rich and cheesy flavour.

  • Run the Vitamix food processor on low speed and slowly add about ¼ cup of the oil.
  • Stop and scrape the edges.
  • Then blend again slowly, adding the remaining ¼ cup of oil.
  • Store in an airtight container or freeze.
  • We freeze the pesto in ice cube trays and use it right out of the freezer for cooking.

    This cauliflower Alfredo recipe honestly may be one of my most-made recipes on my website. Its simple, easy, and healthy. Over the many times Ive made this recipe, Ive played around with it to see how different ingredients have different effects. This recipe as listed does contain cashews, or cashew butter. However you can easily make this cauliflower Alfredo sauce nut-free by simply leaving out the cashews. The flavor will not be effected significantly, and the overall calories of this Alfredo sauce will be lowered.

    • Drain the cucumber well: If you dont, the sauce will get watery and unpleasant much sooner. The only time its not AS important is if you plan on eating it all in one go.
    • Its best to marinate: While its not essential, I DO recommend leaving the tzatziki to marinate for 2+hours for the best overall flavor.
    • If your yogurt isnt thick enough: You can manually strain it through several layers of cheesecloth or a nut milk bag, allowing the excess liquid to drain for a thicker yogurt. This will take several hours based on how thick the yogurt is.
    • If your cucumber has lots of seeds: You might prefer to de-seed it first before grating. That way, it wont water down the dairy-free tzatziki.

    This is another one that may be found in Whole Foods, it really depends on the store.

    But as far availability it isnt too hard to find, and it can be bought online. This is a cheese sauce, so it has somewhat of an alfredo flavor but still can be a little too cheesy.

    It is good, very thick if you prefer that style of sauce, and is a little more affordable than Victoria Vegan.

    Daiya makes a variety of cheese-like sauces but this is their only alfredo flavor.

    Traditional Alfredo sauce typically has nutmeg in it, but I kept it as an optional ingredient to keep it simple. I noticed some people were surprised by this when I shared the recipe with them, but its actually a very common component in Alfredo sauce recipes.

    Lately Ive been making spices optional in recipes when I can, not because I dont use them liberally myself, but just to offer flexibility when possible. I do recommend the nutmeg for that familiar flavor in your keto Alfredo sauce. Even if youre not expecting it, it fits in amazingly well!

    Speaking of flavor, you may want to add more salt and pepper at the end, to your taste. You probably need more than you think!

    When adding salt, keep in mind that the low carb Alfredo sauce will be more concentrated when tasting it plain. It will mellow out when you mix it with other ingredients, especially lightly sweet veggies, like zucchini noodles. For this reason, I recommend adding a little more salt than you may think is needed.

    I cant eat cashews. What can I use instead? You can simply swap the cashews for almonds and make almond cream. Or, you can substitute this almond cooking milk. Or you can try making this cauliflower alfredo sauce, instead!

    Change things up: Try making it a lemon pepper pasta. Just add in some lemon zest with the garlic and season the sauce with some fresh cracked black pepper. Or mixing some sun-dried tomatoes and spinach fora.

    Wow, what a difference! Hey, so it has a hair less carbs, but who cares when all of my ingredients are quality ingredients and not heavy on the heart. Nothing wrong with indulging occasionally, but you could eat my alfredo sauce weekly with much less guilt.

    My first version of this authentic vegan tzatziki sauce was a tofu based one. This was at the beginning of my creative journey before I knew the magical power of cashews. Since we do not have nut allergies, cashews are my go to for ultimate creaminess. I have other players in the creamy game , but my core creaminess comes from my fave little cashew.

    Looks: More like bechamel than queso, clearly a thickener in there, probably flour.

    Nose: Not much, just pepper and flour.

    Taste: Oh God, what is that? What IS that? This is awful. Reaching for the water.

    The Whole Foods marinara was one of my favorites in the marinara competition, and this was clearly another attempt at a premium product. It just had a very strange aftertaste that I found off-putting like maybe the garlic was over roasted and bitter? Or maybe it was just unexpected after all the non-garlic sauces? I generally like garlic, so Im scratching my head a little bit over my reaction to this one. Something about it tasted very off though.
