  • Dredge the shrimp in flour and then dip in the beaten eggs. Quickly roll the shrimp over the breadcrumbs. Make sure that the shrimp are properly coated.

  • Preheat oven to 190 C or 375 F. Line a baking tray with foil and lightly brush a little olive oil
  • Remove the shell from the shrimp. I like to leave a little bit of shell on at the tail end so they look nice and easier to handle when you eat them. Then devein by removing the black part along the centre back of each shrimp. Wash thoroughly and pat dry with kitchen paper. Sprinkle some salt and pepper on the shrimp.
  • Dip the shrimp in the egg, and then the breadcrumbs. Push the breadcrumbs gently on each shrimp so it sticks. Then repeat, by dipping again in the egg and then the breadcrumbs. This is called double coating. When done, arrange the shrimp on the baking tray, and drizzle a little olive oil over the shrimp.

Cooking The Coconut Shrimp

In a large deep skillet add the vegetable oil and heat it up over medium heat until it is hot.

Carefully add the shrimp into the hot oil and fry them for 4-6 minutes per side until they are a deep golden brown colour.

After the shrimp are cooked, transfer them to a plate lined with paper towels to drain the excess oil.

Serve the coconut shrimp with a side of the honey soy dipping sauce and sprinkle with some freshly chopped parsley.

This is one of those meals that I have often…like really often. It’s not complex, very simple, and relatively easy to make but the sauce—the easy three-ingredient sauce that accompanies these shrimp gives it an extra edge. As mentioned in a previous post, I feel like I’m a sauce queen. What I mean by this is I’ll throw together a quick sauce for anything I feel like dipping. So let’s get into exactly how I made the dish.

Well HELLO there! Happy FAT Tuesday, you guys!

I WISH I was in NAwlins right about now, sporting multi-colored beads and sippin on some delicious and smoky bourbon. Wouldnt that be nice?!

Instead, I have Bourbon Balls to keep me occupied while staring at a stash of beads that I got at Mardi Gras many moons ago.Dont worry, I didnt flash a thing to get them beads. But I did knock out the three girls in front of me, the ones that were flashing their twins, and I practically stole the beads that were meant for them

I just read what I wrote right above and I sound like a bully.But I needed a souvenir and I wasnt willing to work for it, know whaddamean?

Also? In order to heal my New Awlins nostalgia woes, I made us shrimp. Naturally.

Also, also?? This was somewhat of an excuse to use up a pound of shrimp. I always buy too much I make Lemon Shrimp Spinach Spaghetti more often than I care to admit but a little at-home-Red-Lobster seriously hit the spot.

These shrimp, coated in spicy batter with panko crumbs, become insanely delicious and super crunchy, youll want to make a meal out of em. Dip em in Garlic Sauce and youll want to marry em!

Oh wait you might be one of those people who think they dont like shrimp. Im here to tell you that once you make THIS, you wont want to stop eating it.

For The Honey Mustard Sauce:

In a small bowl add Dijon mustard

yellow mustard

Heat a large skillet on medium heat and add canola oil.

The canola oil should be about ½ inch deep in the pan.

Add more if needed.

If at anytime the oil gets too hot and starts to smoke, turn off the heat and move the skillet onto an unsued burner.

To the pan, add a couple drops of tempura batter and when it sizzles,

dip the shrimp in the batter and

carefully add the shrimp to the pan.

When the shrimp turns a golden color on the bottom side, turn them over .

If at anytime the oil gets too hot and starts to smoke, turn off the heat and move the skillet onto an unsued burner.

Let the shrimp cook on the other side until it also turns a golden color .

Remove the shrimp from the skillet and lay them on a paper towel-lined plate.

Serve while the shrimp are warm with honey mustard dipping sauce.

Fried Seafood Dipping Sauce

This s a simple and quick dipping sauce to make and goes great with all fried seafood. Has a nice tang and a hint of heat.

1/4 c crystal or lousiana hot sauce
2 Tbsp lemon juice, fresh

Steps:

  • 1. Combine all ingredients into a bowl and mix together. If you like it spicy, you can add more hot sauce, or even a spoon full of horseradish.

  • Heat vegetable oil on a large skillet: It needs to be hot to achieve that golden brown color. To check if the oil is hot enough, drop a little bit of the breading onto the hot pan. If it sizzles immediately, its ready.
  • Fry the shrimp on both sides. For about 2-3 minutes per side. Do it in batches to prevent overcrowding.
  • Transfer to a plate lined with paper towel to absorb any excess oil.
  • Tip: As you fry, adjust the heat as needed when you add cold food, the temperature will drop slightly. Likewise, if browning too fast, decrease the heat. Dont overcrowd the pan fry in batches.

    Buying Guide: What Size And Type To Use

    The shrimp you see here are 21/25 shrimp, which refers to the size. This means there are between 21 and 25 pieces per pound. I usually select this size because its the largest I can reliably buy thats already peeled and deveined, but with the tails still on.

    You may absolutely use larger shrimp here, but I dont recommend going any smaller, or else it will be too tedious to flip and manage.

    Also, make sure to use RAW shrimp and not pre-cooked, otherwise the end result will turn out overcooked and rubbery.

    Both farmed and wild varieties are welcome here. Wild tends to have more flavor, but farmed is usually a little cheaper.

    Make The Dipping Sauce

    This part is really easy! Just combine the sauce ingredients in small serving ramekins.

    To make the sweet chili orange sauce, combine orange marmalade and Thai sweet chili sauce. To make the creamy sweet chili sauce, combine mayo, Thai sweet chili sauce, and sriracha.

    How Many Coconut Shrimp In A Serving

    An appetizer portion of coconut shrimp is 2 to 3 colossal shrimp. The colossal shrimp I buy is 12-15 per pound. Plan to serve 2 to 3 ounces of raw shrimp per person for an appetizer portion.

    As a main dish or entrée, I serve 6 of the colossal shrimp, along with a baked potato or another side dish. This means I serve 6 ounces of raw shrimp per person for the main meal.

    Whatever shrimp is purchased for coconut shrimp, plan for at least 2 ounces for an appetizer and 6 ounces for a main dish. The larger the shrimp, the less work that will be involved in preparing them.

    Deep Fry Those Coconut Shrimp

    Fry in about two inches of oil in a cast iron skillet or another pan with a heavy bottom, flipping after about one to two minutes, then frying for only a minute and then taking out to cool. Make sure the shrimp doesn’t curl up tightly into a coil, that means it’s overcooked and can be tough and rubbery. A gentle, loose curl lets you know that the shrimp is perfectly cooked.

    A cast iron skillet is my choice because it holds heat well and evenly, so when you drop the shrimp into the oil the cast iron is able to hold on to the heat and bring it back up to temperature quickly.

    When you take out the shrimp, it’s important to put them on a wire cooling rack. Why? Remember the two things that ruin a perfect coconut shrimp: wimpy shrimp, and soggy, greasy breading.

    Doing it the old school way on a paper-towel-lined plate causes soggy greasiness! One part of the shrimp is steaming into the paper towel with no wear for that moisture to go, and then sits in a greasy little pool on the paper towel until all the frying is done. No bueno.

    That’s why having a wire rack sitting over a paper towel lined baking sheet is better! The excess oil can drip down to the paper towel while air is able to circulate around the entire shrimp so there is no sogginess.

    And boom you have the tips to make delicious, crispy, perfectly cooked coconut shrimp.

    How To Cook Easy Breaded Shrimp

    You’ll need a rather large pan that’s been coated with a light oil of your choice . Be careful not to overcrowd the pan. You may have to cook the shrimp in batches. As a general rule of thumb, I usually cook about 15 shrimp in the pan at a time with a few tablespoons of oil. You will also need to flip them after a couple minutes and add a bit more oil, moving the shrimp around the pan with a spatula to ensure the pieces are coated.
