Owner of Inferno Farms and holder of the Guinness Book World record for most Carolina Reaper pepper eaten in one minute, Greg Foster, comes on the craft hot sauce podcast. On the podcast Greg shares some of his earliest spicy memories, lessons learned from culinary and hot sauce mentors, and whats going through his mind before eating bowls of reapers in front of 1000+ people.

Red Dirt Pepper Company Story Written By Brian Caudle

My name is Brian Caudle, my wife is Beth Caudle. We are the owners of Caudles Red Dirt Pepper Company in Landrum, South Carolina .

We started this company by accident in 2018. It started with a cayenne pepper falling from its plant and I thought that our red dirt it landed on was what made this pepper hotter than a normal cayenne.

I started researching and looking up to see what the Cayenne pepper ranks on the Scoville scale, and found out its about 30,000 50,000 Scoville Heat Units . When I saw that the Carolina Reaper comes in at 2 million I laughed out loud!

Looking deeper into the Carolina Reaper I saw that it was grown in Fort Mill, South Carolina just 2 hours from Landrum. So I thought since South Carolina has the hottest Pepper in the world it had to be because of the red dirt!

Since then, Ive learned its not the dirt, its the person who grows them, Smokin Ed Curry, the Michael Jordan of the pepper world. He has a Guinness World Record for hottest peppers created from his scientific method of growing super-hot peppers.

People love making craft hoods here, which is where my idea of making hot sauces and love of making hot sauces from scratch stems from. Like Hank Wlliams Jr said, Its a family tradition, its a way of lie in these here hills.

I enjoy the whole community of pepper heads and the way we do things. I am a part of a lot of groups on Facebook, blogs like this site and find other ways to learn and encourage others in the pepper world.

How Long Will This Hot Sauce Keep

Xtreme Regret Scorching Hot Sauce from Elijah’s Xtreme!! No regerts!!

It should keep a few months easily in the fridge, or even longer. Its all about the acidity. To be technical, target level ph for shelf stable foods is below 4.6 ph, but should probably be lower for home cooks, around 4.0 or so, to account for errors.

I have not measured the ph of this sauce, but I wont have it around very long anyway. If youre concerned, add more vinegar to lower the ph.

The best ph meters that I recommend are from Thermoworks. Get yourself a ph meter from Thermoworks today. I am a happy affiliate.

Can Hot Sauce Kill You

It is possible to overdose on capsaicin, the chemical that makes chili peppers hot. However, the only way you can die from eating hot sauce is if the sauce if sufficiently hot and you eat it in sufficient quantity.

A study performed in 1980 calculated that it would take consuming 3 pounds of superhot pepper powder to kill a person weighing 150 pounds. It is highly unlikely anyone could consume that amount, as their body would react before reaching such a limit.

There have been reports of people ending up in the hospital in extreme situations after eating superhot chili peppers, particularly those with previous medical conditions.

There is also the story of a man who burned a hole in his esophagus from eating super hot peppers, but that was from vomiting, not from the peppers themselves.

While it is true that eating extremely hot peppers and hot sauces can cause vomiting, nausea and stomach pain, the reality is that they cannot tear or burn through any of your body parts.

Hot To Make Superhot Hot Sauce

Roast the Peppers. Heat an oven to 400 degrees. Set the superhot chili peppers and garlic on a baking sheet and bake them about 15-20 minutes, or until the skins slightly char. Keep an eye on these. You dont want them to burn, and watch out for any fumes.

Alternatively, do this on your grill outside.

Process the Ingredients. Add peppers to a food processor. Squeeze garlic out of their skins and into the food processor they go. Add basil leaves and process.

Vinegar. While processing, add in vinegar until it is nicely pureed. Watch out for the fumes!

Salt and Strain, if Desired. Add salt and stir. Push the sauce through a strainer or use a food mill to really strain it, if desired. Adjust with more vinegar or water to your desired consistency.

NOTE: I dont always strain. It really depends on how thick you want your hot sauce.

Bottle It Up. Pour into bottles and enjoy. Give to your friends! The longer you let it sit, the more the flavors will meld.
