This General Tsos Chicken is near and dear to my heart. Its actually the first meal my husband, Jared, ever made for me back when we were dating. How lucky am I to have a husband that loves to cook and makes a great chef! With a recipe as good and easy as this, you wont ever have to, or want to, order-out for Chinese food again. Jared actually worked for a Chinese take-out restaurant when he was in high school. He learned how to make a bunch of the dishes, so keep a look out for some of his recipes when you are browsing Favorite Family Recipes. General Tsos Chicken was his favorite to make and to eat when he worked there.

Though it is unclear whether there was actually a General Tso, one thing is certain. He never ate anything resembling this recipe.

Though this is one of the most popular Chinese takeaway dishes in America, you would have difficulty finding this dish in China.

How To Make General Tso Sauce

Whisk the Ingredients. Whisk together the soy sauce, honey, rice vinegar, chili sauce, chicken broth, and cornstarch in a small bowl.

Warm the Sauce in a Pan. Add to a sauce pan or pot and heat 3-5 minutes over medium high heat, or until the sauce thickens.

Enjoy! Use as desired. Easy enough, isn’t it?

What Is General Tsos Chicken

This dish is named for Chinese military general Zuo Zontang, or General Tso, from the Hunan Province in China. Famous Chinese Chef Peng Chang-kuei is said to have made this chicken dish in his honor. Since then it has been somewhat Americanized but still tastes delicious! Crisp, lightly fried pieces of chicken are soaked in a sweet and spicy sauce mixture and generally served over rice. The sweet and spicy flavors blend beautifully in the pan as you cook it and taste even better as leftovers the next day!

General Tso’s Chicken Requires A New Coating Approach

None of the existing techniques I found gave me quite the coating I was looking for, so I decided to start expanding my search, pulling out all of the chicken-frying tricks in the book.

What about double-dipping? I started my chicken pieces in a thick marinade made of egg white, soy sauce, wine, baking powder and cornstarch , then dipped it into a mixture of cornstarch, flour, and baking powder .

After that I moved it back to the wet mixture, and again into the dry, creating an extra thick coating.

Extra thick coatings produce extra crunchy chicken for sure. Too crunchy, unfortunately. Getting close to a quarter inch thick in parts, the coating made the General Tso’s taste more like tough crackers than anything. Extra leavening didn’t help.

Next I went for a different approach, looking to Korea for some clues. I had already spent a good deal of time perfecting a recipe for Korean fried chicken, and that recipe tackles a similar problem: how to get battered, deep fried chicken wings to stay crisp when coated in sauce.

The solution there? Use a thin slurry of cornstarch that’s been cut with vodka, an idea that I first saw in British chef Heston Blumenthal’s Perfection series at Amazon. The vodka can help fried foods get crisp in two important ways.

My Local General Tso Sauce Story

Patty and I visited a local Asian fusion restaurant recently. We enjoy the place and I ordered sushi. Patty ordered the General Tso Chicken and was sadly disappointed. As the dish cooled ever so slightly, the General Tso sauce began to thicken and harden on the plate and on the chicken, becoming overly sticky and almost taffy-like.

The cook obviously used far too much brown sugar or molasses, or whatever this person had selected as a sweetener. Sadly, this is our typical experience with many Chinese American restaurants when it comes to General Tso sauce, so I elect to make it myself at home so that I can control the amount of sweetness and other ingredients.

    Easy General Tso’s Chicken

    The spicy-sweet sauce is what sets General Tsos apart from its Chinese chicken counterparts. The best part about it is that its made with ingredients you probably already keep in your pantry.

    Youll start with chicken broth and soy sauce , then whisk in hoisin, brown sugar, rice vinegar, and nutty toasted sesame oil. Finish the sauce with earthy ground ginger, spicy red pepper flakes, and cornstarch, which thickens the sauce until its glossy and clings to the crispy browned chicken. Here, we finish the dish with blistered scallions and pass on the dried red chiles you usually see in your takeout box theyre more for looks than flavor.

    Best Keto General Tso Chicken Ever

    I have had so many people ask for me to make a culinary lion worthy General Tso Chicken Recipe, and I kept putting it off. No longer!!!

    You can use chicken thighs or chicken breasts to make this recipe I personally prefer thighs

    I bread the chicken using Pork King Good Breadcrumbs aka crushed pork rinds and a simple egg wash.

    The sauce has that sticky sweet and spicy texture that I love, and it coats the chicken perfectly. The sauce is somewhere in between an orange chicken and a sweet and sour chicken but with a kick.

    The breading will hold onto the chicken but if you manhandle it you might have some breakage lol.

    The original General Tsos chicken recipe was invented by the late chef Peng Chang-kuei. The Hunan-style dish with its spicy-sour flavor was named after a war hero named Zuo Zongtang in the mid-1950s. By the 1970s, the dish became a hit thanks two New York restauranteurs, David Keh and chef TT Wang who made chef Pengs dish sweeter for the American palate.

    When you order General Tsos from your neighborhood Chinese restaurant, you can expect to be served batter-coated and deep-fried boneless chicken pieces tossed in a thick sweet-and-spicy sauce . General Tsos spicy kick is what sets it apart from sesame chicken which has a mild, sweet sauce thats better-suited for kids.

    Whatever the history of this dish, you can rest assured Ive taken some liberties to make it keto friendly.

    Traditionally you would see this recipe served alongside a bowl of white rice. To make it a keto complement, I recommend serving this dish over some riced cauliflower.

    To make this Chinese classic weeknight-friendly, we skipped the hot pot of oil and opted for a dusting of cornstarch instead. Youll toss cubed chicken in cornstarch until its completely coated, then sear it in a hot skillet. Be patient here, and dont flip the chicken until the crust turns golden brown, which will ensure you achieve that classic crispy texture. You can use either a nonstick or stainless skillet, but I usually reach for nonstick as extra insurance against sticking.

    How To Fry Chicken For This Recipe

    Getting the perfect fried chicken for General Tsos chicken is really easy! Just follow these simple steps:

  • First, make sure to cut the chicken into 2-inch pieces so they will all cook evenly. You can use chicken breasts or boneless skinless chicken thighs.
  • Next, dredge the chicken in flour or a mixture of flour and cornstarch. Use a medium bowl to hold your flour mixture.
  • Then, deep fry or fry in a pan on the stovetop. You can use all kinds of oil: sesame oil or vegetable oil. Toasted sesame oil is very strong so you may want to use just a little bit along with vegetable oil for flavor.

    Some people arent quite sure how to pronounce General Tso. Some say General Cho, others I have heard say General Sow, or even General Toes. I have always pronounced it General Soh, but Jared has always called it General Chow. I always thought he was way off but I have come to find out he is technically right. At the Chinese restaurant where he worked, it was pronounced Chow and the owners of the restaurant assured him that this is the correct way of saying it. There is the Americanized way of saying and the correct Chinese way of saying it, which is indeed Chow. No matter how you say it, people will figure out what you are trying to say sooner or later!
