If you have a plate of smoky ribs in one hand, chances are an ice-cold soda is in the other. Grab one bottle of Dr. Pepper and put this soda to fantastic use in a sweet sauce that’s perfect on ribs.

The Dr. Pepper reduces with ketchup, mild chili powder, sweet paprika, cider vinegar, brown sugar, among other ingredients. Watch your pot and stir to avoid overflowing because of the carbonation in the soda or burning because of the high sugar content. Add liquid smoke to taste.

Baste your ribs with this sauce and to let it cook into place for smokey and perfectly sticky ribs.

Homemade St Louis Style Bbq Sauce

St. Louis style sauce differs from Kansas City style sauce, despite these cities both being in Missouri. BBQ is funny that way, from one side of a state to another, flavor profiles change. In this case, youll find the St. Louis style homemade bbq sauce recipe to be a bit more tangy and less sweet than the Kansas City style sauce.

The tangy profile comes from the addition of yellow mustard and a touch more vinegar. Its excellent on spare ribs or pork steaks because the acidity matches very well with the fattiness of those meats. As much as I love this homemade bbq sauce recipe on ribs, it certainly shouldnt be limited to just those. Read on

When To Put Barbecue Sauce On Ribs

We like the method this recipe uses, which is to put the barbecue sauce on the ribs after they’re boiled but before they go in the oven. This will allow the ribs to get all the barbecue flavor while the sauce bakes into the ribs.

If you want, you can serve these BBQ ribs with an extra side of barbecue sauce for dipping.

The Best Ribs For Baking

Youll commonly see two main types of ribs. Both can successfully be made in the oven.

Spareribs

The first type is spareribs, which are also called St. Louis-style ribs . These ribs are larger and meatier than other varieties of ribs. They also tend to be fattier since they come from the ribs closer to the belly of the pig. Note that spareribs often require a longer cook time than baby back ribs.

Baby Back Ribs

The second type of ribs is baby back ribs, also called loin back ribs. These ribs are smaller and leaner than spareribs and come from the ribs closer to the loin of the pig. Because their meat comes from the loin region, baby back ribs tend to be more tender and expensive than spareribs. Learn more about the different types of pork you can find at your local butcher.

What Are The Four Types Of Barbecue

You may have heard of different types of barbecues: Carolina, Kansas City, Texas, and Memphis. There are others of course, but these are the most popular styles. But what makes them different?

  • Carolina Barbecue is slow roasted pork thats pulled, shredded, or chopped and sometimes rubbed with a spice mixture before being smoked. It is more vinegar-based with the sauces and the taste. Sometimes the same vinegar/sweet/spicy sauce is serving on the side for dipping.
  • Memphis Barbecue relies on both wet and dry rubs/sauces for its meat. But either way, the meat is cooked on low and slowly for a long time. Its often served on sandwiches with a tangy tomato-based sauce.
  • Kansas City Barbecue is also made from a tomato base but is sweetened by molasses. Kansas City also relies on all kinds of meat for its barbecuing purposes, not just pork. The meat is dry rubbed before being smoked and is served with a thick, sweet sauce on the side.
  • Texas Barbecue is cooked low and slow in pits with a dry rub instead of a sauce. This kind of barbecue isnt generally served with much in the way of sauce either.

How to Cook Baby Back Ribs with Homemade BBQ Sauce

So, the hunt for the perfect Spicy Barbecue Sauce continued. As I experimented with different ingredients, I kept coming up ultimately dissatisfied with the end results.

Today, I decided to try again. I had a very long list of ingredients that I wanted to try this time. As I was adding things to the sauce and tasting as I went along, I suddenly realized that I had exactly what I wanted.

I stopped there and very happily asked my husband to taste the sauce. He was thrilled with it. I will be quadrupling this recipe next time I make it and freezing the extra to have for future meals.

This is a pretty spicy sauce as it is written however, if you like more heat, feel free to increase the Tabasco and cayenne. I served this sauce over pulled pork and it was an instant hit.

This homemade barbecue sauce gets its spiciness from Tabasco sauce and cayenne pepper. Ketchup and brown sugar provide a sweet backdrop for the spice and tang from apple cider vinegar. A dash of smoked paprika adds a smoky flavor that makes such a difference.

    • 1-2 cups of brown sugar

    • Half a teaspoon of dried ginger

Put all the ingredients together in a blender. Blend until smooth but not watery. And thats it you have a delicious BBQ sauce ready to go on your ribs as you put them on the grill.

Remember to follow the 3-2-1 method while cooking your ribs on a smoker. Put the sauce on only in the last hour of the cooking process. Moreover, once youve added the sauce, do not turn up the heat a lot or leave your ribs on the grill for long, or you may end up with over smoked ribs.

    How To Make Smoked Ribs:

Season the Ribs: Were going for layers of delicious flavor here, so even though well be slathering these ribs in our bourbon BBQ sauce, we want to start by seasoning the ribs with salt, pepper, and garlic powder.

Allow the ribs to sit in the fridge overnight with the seasoning to get the best results! The seasoning will really soak into the meat and make things extra delicious.

Smoke: Get your smoker heated up to 250 degrees, and if it has a water pan, fill it with water. Next, load it with your preferred type of wood chunks/chips/pellets, whatever your smoker takes.

Begin smoking the ribs, uncovered and without any BBQ sauce yet, for about 3 hours or until they reach an internal temp of 175 degrees. Make sure to check about every 45 minutes if you need more water for the steam pot or wood.

    Spicy Mustard Bbq Sauce

For as long as I remember, Ive always loved my Mamas Coca-Cola BBQ sauce. It is what I grew up on her chicken, meatloaf and so many other dishes. But then, on a trip to South Carolina after my husband and I were married, I ventured over into the other side of BBQ sauces away from the red and sweet to the yellowish orange and tangy. While I wont say that it replaced the BBQ sauce that Ive loved since I was a little girl, I readily admit that when I now love to make all sorts of BBQ sauces at my house depending on what Im planning to serve. I also like to make a selection so that guests have an option.

If you are looking for another BBQ sauce to add to your line up for an upcoming party or just to try something a little different from your usual sauce that you serve, you might want to make this to try as an option. It is one that I certainly enjoy!

Captain Morgan Barbecue Sauce: Get a Little Captain In Ya!

Serve with: a local Kansas City beer.

Optional. If you are cooking indoors, or if your meat does not have a lot of smoke flavor, or if you just want more smoke flavor, you can add 1/3 cup of liquid smoke to this recipe.About the vinegar. I like my sauce tart. Trust me, although it may taste tart from the bottle, it is perfect on meat. If you are not big on vinegar, cut it in half.About the honey. The recipe above is to my taste but I have found that most people like it better if I add another 1/2 cup of honey for a total of 3/4 cups.About the steak sauce. There are many different brands and they all have different flavor profiles, but what we want here is the meaty depth of savoriness that they call umami, so use whatever you have on hand.About the hot sauce. A simple sauce like Tabasco is all you need. I like the chipotle flavored version.About the oil. You may use butter or bacon fat for a bit more flavor, but keep in mind, they can get rancid with time, and they will likely shorten shelf life to about 1 week. Use a bottled vegetable oil and it can keep months.About the salt. Remember, kosher salt is half the concentration of table salt so if you use table salt, use half as much. to read more about salt and how it works.

Slathered with this special homemade bbq sauce and slow cooked for hours, no one will be able to resist these ribs! What happens with you dont feel like dealing with lugging out and setting up the grill but still want ribs? Bust out the slow cooker my friends

Its confession timewhen I first made this recipe, I was new to make ribs. I had never made them before! Have I enjoyed eating ribs? Heck yeah! But have I ever ventured into the making ribs world? I always thought it was something I needed to leave to the masters.

Last year my husband went through a phase where he watched hours of this show called BBQ Pitmasters on Destination America. Id come home and there would conveniently be a marathon on, so of course I had to watch too! I saw as all the pit masters try to find the perfect balance of sweet, spicy, savory, juicy, and create award winning bbq. It was fascinating! The passion they all shared for cooking meat was remarkable.

So when I received baby back ribs from Omaha Steaks to work with, I channeled my inner pit boss and came up with a recipe. Im pleased to say I think this recipe will knock your socks off. Not knock your socks off in an omg thats so spicy way, but in an omg this is bbq I can make at home? way.

How To Remove The Membrane/skin Off Baby Back Ribs

This is a controversial and personal step when cooking ribs. I grew up eating ribs with the skin left on and only started removing them about 10 years ago advice from a chef. Personally, I love the chewiness of the membrane when left on, BUT, I also love the ease of eating ribs with it removed.

    Go with what YOU love!

    • Turn ribs over with bone/rack-side facing up. Carefully slide a blunt knife under the membrane at one end of the rack.
    • Lift to loosen the membrane off of the bone.
    • Using a sheet of paper towel to hold onto the membrane, peel it off the back of the ribs.
    • It should come off in one piece.

A great rib sauce should cook on the ribs, low and slow so that it can sink into the pores of the meat and create a sticky crust on the surface. That’s the case with this sauce, made on a base of ketchup and flavored with sugar, spices and liquid smoke for a true BBQ taste.

Keeps for 1 week in the fridge.
