Most of our recipes call for a very small amount of adobo sauce, because its super potent! Many times we only use the adobo sauce, not the chipotle chilis. In this sauce, weve called for only 1 teaspoon of adobo sauce. You can freeze the remainder of the chipotle chile in adobo sauce for future use. See below for more recipes to use up the can!
Can You Freeze It
You sure can! It may separate a bit when thawed, but you can whisk it back together again, or pulse it a few times in the food processor. If you use low or non-fat sour cream and/or Greek yogurt, the chipotle crema will be separate more and need more mixing to combine. You can also store it for about one week in the fridge.
How To Store Homemade Sauce
When I make this sauce, I like to make a big batch that I can enjoy throughout the week. I find that homemade sauces and salad dressings hold up best when stored in a glass container or jar, so try to opt for one of these if you can.
To store this sauce, simply transfer it into an airtight container and it will keep in the fridge for up to one week. I wouldnt recommend freezing it, as dairy-based sauces usually wind up clumpy when thawed out.

Chipotle Peppers In Adobe Sauce
12 dehydrated chipotle peppersBoiling water to cover chilies1 cup of ketchup or tomato puree with 1 tsp. sweetner ½ cup water1 medium white or yellow onion thinly sliced4 large garlic cloves peeled and smashed½ cup cider or white vinegar½ tsp. salt
1. Thoroughly wash the chipotle peppers, remove the stems and place them in a bowl. Cover them with boiling water and weigh them down with a small lid or plate. Let them soak for 20 minutes.
2. Remove 4 soaked chipotles, leaving the rest in the soaking liquid, and place them in a food processor or blender. Add the ketchup and half cup water. Blend until you have a uniform paste.
3. Add the blended chipotles and tomatoes into the pot with the remaining chipotles soaked in water.
4. Add the onions, garlic, salt, peppercorns and vinegar to the pan. Mix well.
5. Bring it to a boil, reduce the heat and allow chipotles to simmer for about 1 hour and 45 minutes. Check them at one hour. If the sauce has dried too much, add extra water as needed.
6. Place the chipotles and adobo in sterilized freezer safe containers. Hint keep the containers small most recipes only call for 2 peppers and a small amount of sauce. You can also puree and freeze them in ice cube trays for future use. Once you open your jar be sure to use it within a month.
How To Make Chipotle Hot Sauce
Sure, you could start with some dried Morita chiles, but canned chipotles in adobo are much more convenient so well be using those.
If youre new to chipotles in adobo heres what they look like out of the can:
These are smoked jalapenos resting in a tangy adobo sauce and youll get 6-8 chipotles in each can. Are chipotles spicy?
Occasionally youll come across larger sizes, but these smaller 7 oz. cans are the most common in traditional supermarkets so I usually buy a few at a time.
Im in the habit of scraping out most of the seeds as they tend to harden over time.
So well do that with seven of these chipotles and add them to a blender along with:
1/4 small onion1/4 teaspoon cuminpinch of salt
I usually saute the onion and garlic in some oil before adding it to the blender. And note that this was a larger onion so I only used about 2/3 of the onion in the photo below:
Once everything is in the blender give it a good whirl.
Itll need at least 30 seconds to liquefy everything so if it still seems chunky then give it a bit more time.
Once its combined youll have the perfect opportunity to take a taste for sweetness. And heat!
Youre already getting some sweetness from the orange and the cooked onion, but you can always add a bit more if you want 1/4 teaspoon of sugar would be a good starting point. I dont have much of a sweet tooth so I did not add any additional sugar to this batch.

As of a result, after inspecting the sauce that I ordered to go one day, I realized it had specks of dried herbs in it like a bottle of ranch dressing. That gave me the clue that it had to be ranch with chipotle peppers and sure enough, it took off from there. I used plain yogurt instead of sour cream or all mayo to lighten it up but you could certainly use either of those if you dont have plain yogurt on hand. I keep mine in a squirt bottle in the fridge so I can give a quick drizzle to whatever dish I need some for its easier than having to grab a spoon or knife to spread it. Itll keep for a couple of weeks in the fridge but I doubt it will last that long!

A Few Tips About This Honey Chipotle Sauce:
Yes, you can freeze it, like most things, freeze up to 3 months. You may have to reblend it after its been frozen, though.
If you dont freeze it, it will be good probably up to two weeks in the fridge. How long its good for depends on the brand of chipotle peppers in adobo sauce and how many preservatives it contains. The more preservatives, the longer it will be good. Sorry, I know, thats weird to think about, but its true. Somewhere to from 7-14 days is the most likely.
Is Chipotle Sauce Spicy
Just like jalapeños themselves, cans of chipotle in adobo will vary in spiciness from can to can. Theyre mild to medium in heat, but in this recipe, theyre definitely cooled down by the sour cream. For a less spicy sauce, remove the seeds from the chipotles before adding them to the food processor.

You Can Use It On Anything
For salmon, brush it on and bake on a foil-lined sheet at 400F for 15-20 minutes. If desired, add more sauce after you are done! Get recipe instructions for honey chipotle salmon here.
