How to make a creamy chipotle sauce from scratch

Most of our recipes call for a very small amount of adobo sauce, because its super potent! Many times we only use the adobo sauce, not the chipotle chilis. In this sauce, weve called for only 1 teaspoon of adobo sauce. You can freeze the remainder of the chipotle chile in adobo sauce for future use. See below for more recipes to use up the can!

Can You Freeze It

You sure can! It may separate a bit when thawed, but you can whisk it back together again, or pulse it a few times in the food processor. If you use low or non-fat sour cream and/or Greek yogurt, the chipotle crema will be separate more and need more mixing to combine. You can also store it for about one week in the fridge.

How To Store Homemade Sauce

When I make this sauce, I like to make a big batch that I can enjoy throughout the week. I find that homemade sauces and salad dressings hold up best when stored in a glass container or jar, so try to opt for one of these if you can.

To store this sauce, simply transfer it into an airtight container and it will keep in the fridge for up to one week. I wouldnt recommend freezing it, as dairy-based sauces usually wind up clumpy when thawed out.

How to Make Chipotles in Adobo Sauce at home.

Sure, you could start with some dried Morita chiles, but canned chipotles in adobo are much more convenient so well be using those.

If youre new to chipotles in adobo heres what they look like out of the can:

These are smoked jalapenos resting in a tangy adobo sauce and youll get 6-8 chipotles in each can. Are chipotles spicy?

Occasionally youll come across larger sizes, but these smaller 7 oz. cans are the most common in traditional supermarkets so I usually buy a few at a time.

Im in the habit of scraping out most of the seeds as they tend to harden over time.

So well do that with seven of these chipotles and add them to a blender along with:

1/4 small onion1/4 teaspoon cuminpinch of salt

I usually saute the onion and garlic in some oil before adding it to the blender. And note that this was a larger onion so I only used about 2/3 of the onion in the photo below:

Once everything is in the blender give it a good whirl.

Itll need at least 30 seconds to liquefy everything so if it still seems chunky then give it a bit more time.

Once its combined youll have the perfect opportunity to take a taste for sweetness. And heat!

Youre already getting some sweetness from the orange and the cooked onion, but you can always add a bit more if you want 1/4 teaspoon of sugar would be a good starting point. I dont have much of a sweet tooth so I did not add any additional sugar to this batch.

You can reuse older bottles or you can get new ones for about

Buen Provecho.

What Are Chipotle Peppers In Adobo Sauce

The secret to this homemade sauce is chipotle peppers in adobo. But what is that exactly? Well, its a combination of things. Chipotle peppers are red jalapeños that have been smoked and dried. And the adobo is a velvety, tangy, and sweet sauce made from dried chili peppers.

Together, they make for a zesty, spicy, ridiculously flavorful pair, which is why theyre sold in jars that way.

Simply put, mix dry ranch dressing mix with milk, mayonnaise and chipotle peppers. Because you are using whole peppers, I highly recommend using a mini food processor to get a smooth dressing.

If you dont have one, mince chipotle peppers as fine as you can and whisk it all together.

You can also add half of an avocado, if you wish. A nice way to sneak in some extra veggies!

To make this a skinny or light version, substitute 1/2 cup skim milk for whole milk and 1 cup plain Greek yogurt.

Measure and prep ingredients. There really isnt much prep for this dressing recipe. You dont even need to chop anything, but if youre looking to make this even easier, try coating your measuring spoon with oil or cooking spray before measuring the honey.

Blend the ingredients. Throw everything into the bowl of a food processor or blender, and process until smooth.

Transfer to a storage container. This dressing is quite thin, which I think is great for stretching it over your salad and keeping things healthy, but youll want to keep that in mind because it can get a bit messy when transferring.
