Another thing you probably didn’t know about Greek yogurt, is that the authentic Greek stuff is made using sheep’s milk. Or sheep’s milk combined with a small percentage of goat milk. Technically you dont have to peel English cucumbers, but I findthe peel too fibrous in the tzatziki and compromises the texture so I recommendpeeling it first.

Can I add other herbs to tzatziki?

Absolutely! I wouldnot omit the dill, but you can add other herbs in addition to the dill such asmint, parsley, oregano and chives.

Can I make this tzatziki sauce recipe ahead of time?

Yes, please do! Tzatziki sauce taste best after the ingredients have had time to meld into each other. Plan on making at least an hour ahead of time but can be made 24 hours ahead of time. You can also chop the cucumbers and leave them to drain in the refrigerator ahead of time so then you just have to toss with the rest of the ingredients.

How long does homemade tzatziki last?

Greek tzatziki should be stored in an airtight container in the refrigerator. When properly stored, tzatziki will last about 5 days, but is freshest within the first 2. After 2 days, the tzatziki will become a little runny as the cucumbers continue to release moisture nothing to be too concerned about, but just a fair warning. I love traditional dips made with sour cream and all those other sinful ingredients, but tzatziki has always been my favorite! I love how satisfying tzatziki sauce is with its flavorful combination of garlic, lemon and dill.

I honestly can never get enough dill I love the stuff!

The scent of dill really brings back happy memories of when I was a little girl growing up on my grandparents farm. My grandmother always had fresh dill weed growing in her garden so she could use it for her pickling.

One of the most important things to keep in mind when making tzatziki sauce is the moisture content of the cucumber used in the recipe.

Too much moisture from the cucumber will make your sauce way too watery and you certainly don’t want that.

Cut the cucumber in half lengthwise, then using a spoon scoop out the seeds in the middle. I like to leave the skin on my cucumbers so I rarely peel them it’s up to you though you can peel it if you like.

Give the cucumber pieces about 25-30 minutes to drain any more of the excess moisture.

How To Make It

This Greek sauce with yogurt and cucumbers can be mixed together in a few easy steps. Simply:

  • Shred the cucumber. Using the large holes on your box grater, grate the entire peeled cucumber and transfer to a strainer, pressing down with a spatula to strain out all the juices.
  • Whisk the yogurt and seasonings. In a medium bowl, whisk together the yogurt, lemon juice, garlic, salt and pepper.
  • Fold in the cucumber and dill. Use a spatula to fold in the cucumber and dill into the yogurt mixture. If you have the time, cover with plastic wrap and store in the fridge for a few hours. Transfer to a serving bowl and enjoy as a dip, spread or sauce!

    Ingredient Tips For Tzatziki Recipe

    • What type of cucumber should I use? You can use either ¾ of an English cucumber or 1 slicing cucumber which is the most common cucumber you see at the grocery store. I recommend peeling and seeding whichever cucumber you use, so it really doesnt matter which one you choose. Some Greek tzatziki recipes dont call for peeling OR seeding the cucumbers but this will leave you with an unappetizing texture and watery tzatziki unless you let the cucumber drain overnight and Im too impatient for that.
    • What yogurt do you use for tzatziki? You must Greek yogurt in tzatziki sauce. Greek yogurt is strained yogurt which makes it much thicker and higher in protein than regular yogurt. If you use traditional plain yogurt, your tzatziki sauce will be too runny.
    • Can I use nonfat Greek yogurt? Yes, you may use either Greek whole-milk yogurt, low-fat or non-fat yogurt in this tzatziki sauce recipe and all will produce excellently thick, creamy results.
    • Do I have to use salt? Yes, you not only need salt for flavor but to help remove excess moisture from the chopped/grated cucumber. You probably wont not need additional salt once the tzatziki sauce is assembled.
