Whenever I prepare pasta sauce at home from scratch, the ingredients that I am using can differ sometimes. It depends on what I can find in my pantry at that very day.

Take the tomatoes for instance.

Sometimes I add chopped fresh tomatoes and canned tomato puree. But whole canned tomatoes or chopped canned tomatoes are also a great alternative!

How To Make Spaghetti Sauce From Scratch

  • Brown the beef: heating 1 Tbsp olive oil in a large deep skillet over medium-high heat. Add beef in large crumbles, leaving space between.
  • Season with salt and let beef brown nicely on bottom.
  • Crumble beef: Then begin breaking beef up . Let it continue to cook until it has cooked through .
  • Drain beef: Transfer browned beef to a paper towel lined plate, leave about 1 Tbsp fat in pan. Or add 1 Tbsp olive oil.
  • Saute aromatics: Add onion and saute 4 minutes or until almost softened, then add garlic and saute 1 minute longer.
  • Add other ingredients: stir in crushed tomatoes, tomato paste, water, beef, basil and oregano. Season with salt and pepper to taste.
  • Simmer sauce: Bring to a light boil, then reduce heat to low , cover with lid and let simmer until onions have softened through, about 15 minutes.
  • Adjust consistency as desired: If you have more time let it simmer longer. Thin with a little water as needed, thicken with a little tomato paste as needed .
  • Finish with cheese: Stir in parmesan at the very end and let melt through. Serve over pasta of choice topped with more parmesan and parsley.

Perfectly Cooked Spaghetti Recipe

  • 160g spaghetti

Pasta brands cook at different times you’ll need to follow the pack instructions rather than using a generic timing.

  • Bring a pan of water to the boil and season it with salt.
  • Add the spaghetti and stir it gently until all the strands sink beneath the water level. Stir again to make sure they’re not stuck together.
  • Cook following the pack instructions but taking 2 mins off the time suggested.
  • Check the pasta when the time is up by biting into a strand it should be cooked through but still firm. Cook for a further 1-2 mins if you need to, or if you prefer your spaghetti softer.
  • Drain, reserving a little pasta water to add to the sauce. Add the pasta to the sauce straight away so it doesnt stick together as it cools.

    A Simple Spaghetti Sauce

    Simply pour the sauce into a small saucepan while youre going about boiling your pasta. Let it come to a boil, then reduce the heat so that the sauce gently bubbles. Keep the simmer going for about 10 minutes or so, until youve noticed that the sauce has reduced and thickened a little, but is still saucy.

    What Ingredients Go Into Homemade Spaghetti Sauce

    • Olive oil use for sauteing.
    • Lean ground beef I recommend 85% lean ground Angus beef.
    • Salt and pepper to season the beef and sauce and highlight its flavors.

    • Canned crushed tomatoes Ive actually done a side by side taste taste with several brands and Hunts is best. If you want to puree a can of San Marzano tomatoes that would be delicious too.

    • Fresh basil and fresh parsley this gives the sauce so much fresh flavor. Fresh basil in spaghetti sauce is a must in my book.
    • Dried oregano since you wont be using much we go with dried, but feel free to substitute fresh if youve got it .

    Should You Put Sugar In Spaghetti Sauce

    The reason for sprinkling a pinch of sugar into a simmering saucepan of tomatoes is simple: sugar cuts the acidity of the tomatoes and creates an overall more balanced sauce. The exact acid levels in tomatoes can vary quite a bit depending on whether theyre fresh or canned, the tomato variety, and the time of year.

    What Gives Spaghetti Sauce Flavor

    Loads of garlic, plenty of Italian seasonings like basil, oregano, and rosemary, and a mixture of beef and pork.

    I use a jar of Italian Seasoning its just a blend of herbs. You can put in a mix of your favorite Italian herbs instead if you like.

    The beef and pork in this spaghetti sauce recipe add a delicious richness to the sauce and they get so tender as they simmer away for hours with the sauce.

    I dont drain the fat from the meat after cooking as that helps add flavor to the sauce as well.

    Tips For The Best Spaghetti Sauce

    Since spaghetti has long been one of my favorite foods Ive picked up on lots of different things here and there to perfect it. Heres my tips:

    • Really brown the beef. Dont add it all in one thin layer and toss and turn it constantly. Instead add it in large clumps, let the bottom really sear and brown thenstart to break it up.
    • Use crushed tomatoes instead of tomato sauce or puree. It has a better, more tomato-y flavor.
    • Dont be skimpy with the garlic, and add a fair amount of onion. These really build flavor here.
    • Preferably use fresh basil.
    • Allow time to simmer. This will offer time for those flavors to meld and compliment each other and time for the sauce to reduce and thicken a bit.
    • Stir parmesan right into the sauce. Again we are building flavor and even though its only 1/4 cup it gives it special something.

    Were making spaghetti meat sauce because I think the meat adds so much rich flavor to the sauce. Even when I make meat sauce, we still sometimes add my turkey meatballs. So good!

    To start, youll brown some ground beef and ground Italian sausage in a large dutch oven or other heavy-bottomed pot.

    Once the meat is browned, add in your diced onion and minced garlic. < Dont skimp on the garlic!

    Stir in some crushed tomatoes, tomato paste, Italian seasoning, sugar, and salt.

    Sugar might seem like an odd addition, but its just a bit and it helps to balance out the acid in the tomatoes.

    Now comes the hardest part of all waiting!

    This needs to simmer for at least 2 hours, but preferably closer to 4 hours. The longer it simmers, the more flavorful the sauce gets. The more tender the meat gets. The more amazing your world will be.

    Be sure to sneak little spoonfuls of this spaghetti sauce every time you walk through the kitchen. Its delicious.

  • Dont add oil. The first thing to know is that adding oil to the water has no effect, as it floats on the top of the water. The second thing to know is that adding oil to cooked spaghetti will make any sauce slide off it again, not what you want.
  • Stir the pasta after you’ve added it to the water. Pasta releases starch as soon as it starts to cook. When you put it in boiling water it does this straight away, making the surface of the pasta sticky, which is why you always have to stir the pot to separate the pieces. As the spaghetti continues to cook, the starch dissolves into the water so it doesnt stick any more.

    Cook on LOW for as long as you can.

    I tend to cook for at least 4 hours.

    Stir every 30 minutes.

    After about an hour, I leave the lid cracked to let some of the moisture out and thicken the sauce.
