Having spent enough time working in fancy-pants restaurants to know how they work, I could tell you that the first thing a high-class chef would do to upgrade beef Stroganoff is ditch those plain old white button mushrooms for something classy, like teeny tiny flavor-packed mousserons, or perhaps some nice seasonal chanterelles.

What’s that? You can’t get mousserons? That’s ok. Neither can I, these days, and to be frank, despite their pedestrian pedigree, white button mushrooms can offer plenty of flavor so long as you treat them right. Typically, you’d thinly slice mushrooms and sauté them for a dish like this in order to maximize brown-able surface area. But I’m the kind of guy who likes to get a bit of textural contrast in my dish as well.

Instead of slices, I decided to go with nice, chunky, meaty quarters which still offer plenty of mushroom flavor, but give you something interesting to chew on as well. Cooking them in the skillet you just finished cooking the beef in gives you the opportunity to scrape up all those tasty browned bits from the bottom of the pan using the liquid that the mushrooms expel during the early phases of their cooking.

A cornstarch slurry is made by mixing cornstarch with a small amount of cold water. To use a flour or cornstarch slurry, remove the beef stroganoff from heat, add the slurry and stir it in. Put the beef stroganoff back on heat, stirring constantly, and bring it to a simmer. Cook for an additional 2-3 minutes or until the sauce has thickened. You can also use other thickeners like instant mashed potatoes, breadcrumbs, or sour cream. But be aware that using too much of these thickeners may change the flavor and texture of the dish.

Cajun Baked Turkey Breast

Heat oven to 350 degrees. Loosen skin from breast of a 4- to 7-pound bone-in turkey breast to form a pocket. In a small bowl, combine 4 tablespoons canola oil, 2 tablespoons Worcestershire sauce, 2 cloves minced garlic and 2 tablespoons Cajun seasoning. Rub half the mixture under skin and remaining mixture on outside of breast. Place breast on rack in roasting pan. Roast 1 1/4 to 1 3/4 hours, or until a thermometer inserted in thickest part of breast registers 165 degrees. Remove from oven loosely tent with foil and let stand 10 minutes before slicing .

Using the same pan as the beef, you want to add more butter and once melted you add the diced mushrooms. You want to mushrooms to get a little extra cook time before adding the onions and garlic.

The mushrooms will sauté and create a bit of brown bits on the pan and this is when you want to add the red wine to the pan to delaze and loosen those brown bits.

Once the wine has soaked up into the mushrooms, add the onion and garlic to the mixture and sauté them for 3-4 minutes.

How To Make Pioneer Woman Slow Cooker Beef Stroganoff

  • Season the beef cubes with salt and pepper.
  • In a large skillet, melt the butter over medium-high heat. Add the beef cubes and cook until browned on all sides.
  • Add the onion and garlic and cook for 2-3 minutes, until softened.
  • Stir in the flour and cook for 1 minute.
  • Transfer the beef mixture to the slow cooker.

    I’m totally guilty of making this stroganoff all the time. It’s become one of those instinctual recipes that I’ve made so many times I just know the measurements by heart.

    Making beef stroganoff without mushrooms is how I like to prepare it, because mushroom have a lot of moisture I don’t like messing around with all the extra water they produce in the pan.

    You want all your browned bits from searing the meat to go toward the beef broth base for your sauce. You don’t want those bits of flavor to get lost in mushroom water.

    What Kind Of Meat Should You Use In This Recipe

    This recipe calls for either beef sirloin or tenderloin steak to provide the meat for the stroganoff, and the exact choice is up to you.

    Beef sirloin is the typical steak cut that is used in these kinds of recipes and provides plenty of that tasty meaty steak flavors that this recipe needs.

    If you prefer to use tenderloin and can actually get your hands on some for a good price, thatll work really well too. The tenderloin will be a lot more tender and delicate, though, and will have a bit less of that beefy flavor, so make sure that you brown it up really well.

    You could also use some regular stewing meat, something like top round instead, but just remember that top round is going to be a lot less tender, plus will require a longer cooking time to help it break down any connective tissue.

    What Cut Of Beef Is Best For Stroganoff

    The best cuts of beef for stroganoff are tender, juicy cuts such as:

    • boneless rib eye also called scotch fillet

    • boneless sirloin

    • sirloin steak tips

    • beef tenderloin

    Some recipes recommend beef round steak which I do not recommend. The beef flavour is ok but but its not a good cut for fast cooking like in stroganoff, its dry with an unpleasant texture. Its best slow cooked.
