    Homemade mayo is so easy to make and you only need a handful of ingredients, most of them being pantry staples. You do need an immersion blender for this recipe, but you can find them pretty reasonably and will definitely get a lot of use of it.

    Here are the ingredients for homemade mayo:

    • 1 large egg
    • 3/4 cup avocado oil
    • 1 teaspoon dijon mustard
    • 1/2 teaspoon apple cider vinegar
    • pinch of salt

    To make homemade mayo, simply add all your ingredients in the order listed to a wide mouth jar. I like to use a jar that I will be storing the mayo in and love these weck jars. Make sure you add in the ingredients as listed, with the egg on the bottom. That way it will blend first and create the emulsion.

    After you add all the ingredients into the jar, place the immersion blender in the jar with the blade being on top of the egg yolk. Then, turn it on. You will see it start to make an emulsion and the egg will start to blend with the oil after 5-10 seconds.

    After about 30-45 seconds, slowly raise the immersion blender so you get all the oil and you have homemade mayo! This recipe will make about 1 cup of mayo.

    It should be thick and creamy. If needed, throw it in the fridge for a couple of hours to let it thicken.

    They are all remarkably similar, and a copycat version can be made in just a few minutes from everyday ingredients, so forget about buying all those branded products. Just whip up your own homemade burger sauce, adjusted perfectly to suit to your own taste, and tuck in.

    I like a smooth burger sauce with a little bit of heat, but if you want some texture and extra heat then you can have it, with a few simple additions.

    How To Customize Dairy

    For the vegan mayo: If youre looking to avoid oil, you could either use your favorite oil-free mayo , or you could use thick, unflavored/unsweetened dairy-free yogurt. The end result will depend on the yogurt quality. You want to use something super thick and creamy with no flavor or sweetener.

    For the pickle juice: I wouldnt recommend skipping this if you can help it. If needed, you could start by replacing it with the same amount of relish or 1 tsp white vinegar or rice vinegar.
