Creamy Stovetop Mac and Cheese (Easy, Homemade Macaroni and Cheese)

I tried a few different recipes for creamy baked mac and cheese and finally settled on this one that I found in Southern Living, minus the red pepper and the granulated garlic. I like to keep it simple: cheese, butter, milk, noodles.

This recipe served us just fine until a couple of years ago when I read the now-famous Julia Moskin article in the New York Times, which recounted the author’s search for the perfect macaroni and cheese recipe. Moskin tried several different versions and ended with the advice, “When in doubt, add more cheese.”

Thus, the evolvement of my cheesiest mac and cheese recipe began. After a few experiments, I’ve tweaked it to this version that includes extra-sharp Cheddar in the sauce, and more cheese once the sauce and noodles are combined.

It’s creamy. It’s buttery. It’s cheesy. It’s luscious. It’s absolutely divine.

My family and friends think this is the BEST baked mac and cheese this or that side of the Mississippi, north or south of the Mason-Dixon line.

And yes, it’s also fattening so we don’t have it very often. But when you want comfort food, this is your dish.

Be Careful With The Roux

Though a roux is important for thickening up your cheese sauce, you want to make sure that you dont add too much of your flour and butter mixture because otherwise the sauce can get too thick, which negatively impacts the creaminess. Too much butter and flour will make your sauce more like glue than a creamy, rich sauce.

How To Know When Your Bchamel Sauce Is Done

You know that béchamel sauce is done when it has the right consistency or has thickened enough to coat the back of a spoon . To test for doneness, simply coat a spoon with sauce and rub your finger through the spoon as if drawing a path . If it leaves a mark, the béchamel sauce is done! You can add the cheese and finish the sauce. Adding the cheese too early can break the sauce turning it into an oily mess.

  • Preheat the oven. Preheat to 325 degrees and lightly grease a square baking dish.
  • Cook the macaroni. Slightly undercook your noodles . Drain and set aside.
  • Make the roux. Melt the butter in a medium saucepan over medium heat. Blend in the flour, salt, and pepper. Cook for 2 minutes.
  • Add milk and cheese. Stir in milk and half and half, slowly, stirring constantly. Remove from heat. Add 1 cup shredded cheese to the sauce and stir just until melted. Add the cooked macaroni noodles and toss to coat them in the sauce.
  • Pourinto baking dish. Pour half or the pasta mixture into the prepared baking dish. Sprinkle ½ cup cheese over the top. Pour remaining pasta over it and sprinkle with remaining cheese.

    Making cheese sauce is super easy and quick. Here is what you have to do:

    Step 1: First of all, melt butter in a heavy-bottomed saucepan.

    Step 2: Add all-purpose flour to the melted butter. You have to whisk constantly until you get a crumble or paste-like consistency. Make sure you adjust the heat to prevent the mixture from burning.

    Step 3: Now, take the saucepan off the heat and slowly pour in the milk. You have to whisk to prevent lumps from forming constantly. Once everything is well combined, place the saucepan back on the heat and let it simmer until the mixture starts to thicken up.

    Step 4: Now turn off the heat and add shredded cheese and your choice seasonings. Mix well until everything unifies, and you get a delicious, creamy, and cheesy sauce.

    • Make as directed , transfer to baking dish and cool completely. Cover tightly with foil and refrigerate 1-2 days ahead.
    • Before baking, let dish sit on counter for 30 minutes.
    • Bake at recipe temperature for 25-35 minutes, until hot and bubbly.

    As a caveat, this recipe, as with most mac and cheese recipes, loses some of its creaminess when made ahead. This dish has been tested when made right away, which yields the best results.

    I would increase the amount of sauce slightly if you need to make this recipe ahead of time.

    • Shred, crumble, or finely dice the cheese before heating to ensure quick, smooth melting. The colder the cheese is, the easier it will be to cut.
    • The less you heat cheese, the better. When making soup, sauce, or fondue, add the cheese last then heat it only as long as it takes to melt. If it gets too hot it will get tough. Often, you can remove the pan from the burner the residual heat will melt the cheese.
    • Allow the shredded cheese to come to room temperature before adding it to a hot mixture.
    • Starch will keep the cheese from curdling. If using all-purpose flour, add it to the mixture before the cheese it needs to be cooked for a few minutes to remove the starchy taste.
    • Adding an acidic ingredient such as wine or lemon juice will help prevent the cheese from becoming stringy. This is why most cheese fondue recipes have a base of white wine. Simply sprinkle some lemon juice over the shredded cheese before heating it.
    • Reduced-fat cheeses melt differently than regular full-fat cheeses. Reduced fat cheese will take longer to melt and will not have the same velvety consistency in the sauce. Be sure to shred reduced-fat cheese very finely, and allow it to melt over very low heat while stirring constantly.

    The Difference Between Sharp And Mild Cheddar

    You might end up at the store buying cheese and leaving confused. Cheese comes in a plethora of different varieties, but today we are talking about cheddar because that is what I used in this particular recipe. Cheddar cheese can range from mild to old and can be categorized by a variety of different sharpness levels. I gave the option between mild or sharp cheddar because I feel their flavor profiles work best for this sauce.

    Sharpness attributes to how tangy or how much bite the cheese has, which comes from how long the cheese has been aged. Aging is the only difference between mild and sharp cheddar, therefore the longer the cheese has aged naturally, the sharper and more pronounced the cheddar flavor becomes. Mild Cheddar is typically aged for around 2 to 3 months, whereas an extra sharp could go through the aging process for as long as a year.

    • Baking macaroni and cheese is optional. I always bake my mac and cheese further as it tastes so good. But if you dont have an oven or the time, then just mix and serve.
    • Do top with breadcrumbs when baking as they add a lovely crispy and crunchy layer.
    • Feel free to add seasonings, herbs and spices of your choice. I keep it simple with crushed black pepper and a bit of ground nutmeg. A dash of mustard powder also perks up the flavor.
    • To add some fiber and extra nutrition to in the dish, simply mix in some steamed veggies.

    Make The Mac And Cheese Sauce

    Next, prepare a roux by heating a large pot or dutch oven over medium/high heat, and then add butter. Then, when the butter is melted, add flour and whisk until the butter and flour form a crumble.

    Slowly add milk to the pot, whisking constantly. Continue to whisk the roux over medium/high heat for about 4-6 minutes or until the roux thickens.

    When the roux is thick, remove from heat and add the cheddar gruyere cheese, and continue whisking until the cheese has melted.

    How To Make Cream Cheese Pasta Sauce

  • Cook Pasta: In a saucepan over medium heat bring about 6 cups of water to a boil. When the water boils, add 1 teaspoon of salt and the noodles. Then cook the noodles to al dente according to the package instructions. When the pasta is cooked, reserve 1-2 cups of the pasta water and drain the pasta.
  • Sauté Garlic: In a skillet, melt butter on medium heat and sauté garlic very lightly without allowing it to brown. This should be no more than 30 seconds.
  • Melt the Cream Cheese: Add cream cheese and 1 cup of reserved pasta water to the skillet. Use a whisk and allow the cream cheese to melt into the sauce as you whisk that together to emulsify the sauce.
  • Finish: Add parmesan cheese, whisking until it melts, then season with ground black pepper and salt. Be sure to taste your sauce as you season. Parmesan is salty so you may not need as much salt as you think. Remove the sauce from the heat.
  • Toss with Pasta: Add the cooked pasta and parsley to the sauce and toss using kitchen tongs until the sauce coats the pasta. If the sauce is too thick, add more of the reserved pasta water to thin it out.
