Mexican Salsa Verde/green Mexican Hot Sauce

How to make Mexican Red Hot Sauce- Salsa Picante- Spanish Video- CC in English

In non-Mexican regions, this is known as tomatillo sauce. Mexican salsa verde or green Mexican hot sauce is made with fresh tomatillos and peppers. Stale tomatillos can make your sauce bitter.

If fresh tomatillos are unavailable, canned tomatillos are the next best option. The creamy variant is made with avocados. Other variants involve roasting or broiling the tomatillos in the oven.

You can use this salsa verde to make green enchiladas for a twisted Mexican breakfast. Why should enchiladas always be red?

Ingredients:

  • Salt to taste

Directions:

  • Bring the pepper and garlic to a boil in water. This can take about 15 minutes.
  • Add tomatillos, and cook them until they turn yellow.
  • Turn off the heat and let them sit for a while.
  • Combine salt and raw garlic in a mortar. Add cooked garlic and mash them as well.
  • Add peppers and make it into a paste.
  • In a processor, blend the onion, peppers, cilantro, and tomatillos into a fine paste. If your processor is small, do this step in batches, and combine all the batches in a bowl.
  • Serve with quesadillas or tacos. You can store it in the fridge for 3 days.

Ingredients For The Best Salsa:

  • Vine ripe tomatoes: We will add a smokiness to these by cooking on the stovetop
  • Jalapeno peppers: You definitely want some kick to this salsa! I omit the seeds and this still makes it spicy. We also cook these on the stovetop!
  • Poblano pepper: I love a smoky poblano pepper, it adds so much depth to a salsa. Another item to add to the stovetop.
  • Green onion: I prefer the milder taste of green onions for salsa, and the fact that they add a little crunch.
  • Limes: Definitely some tang to make good salsa!
  • Fresh cilantro: Dont skimp! Grab a big bundle and chop it up
  • Canned tomatoes:The addition of fresh tomatoes and canned together, really adds more flavor depth! I use Rotel.
  • Sea Salt: Definitely need to salt up the salsa!

How To Make Chipotle Hot Sauce

Sure, you could start with some dried Morita chiles, but canned chipotles in adobo are much more convenient so well be using those.

If youre new to chipotles in adobo heres what they look like out of the can:

These are smoked jalapenos resting in a tangy adobo sauce and youll get 6-8 chipotles in each can. Are chipotles spicy?

Occasionally youll come across larger sizes, but these smaller 7 oz. cans are the most common in traditional supermarkets so I usually buy a few at a time.

Im in the habit of scraping out most of the seeds as they tend to harden over time.

So well do that with seven of these chipotles and add them to a blender along with:

1/4 small onion1/4 teaspoon cuminpinch of salt

I usually saute the onion and garlic in some oil before adding it to the blender. And note that this was a larger onion so I only used about 2/3 of the onion in the photo below:

Once everything is in the blender give it a good whirl.

Itll need at least 30 seconds to liquefy everything so if it still seems chunky then give it a bit more time.

Once its combined youll have the perfect opportunity to take a taste for sweetness. And heat!

Youre already getting some sweetness from the orange and the cooked onion, but you can always add a bit more if you want 1/4 teaspoon of sugar would be a good starting point. I dont have much of a sweet tooth so I did not add any additional sugar to this batch.

You can reuse older bottles or you can get new ones for about

Buen Provecho.

DIRECTIONS:

  • Place the arbol peppers, guajillo peppers, and garlic in a saucepan with the water. Turn the heat to high, and once the water starts boiling, turn the heat down and simmer for about 20 minutes, or until peppers are very soft.
  • Remove saucepan from heat and allow to drop to room temperature. Once it has cooled, place the peppers, garlic, spices, dried herbs, vinegar, and one cup of the cooking water into a blender. Puree until you have a very fine texture.
  • Pour this mixture into a glass container using a strainer, to remove any pieces of pepper skins left.
  • Pour the mixture into the saucepan again, turn to medium-high heat, and gently simmer for about 5 minutes. This is just enough time to reduce the salsa to the desired consistency and allow the spices flavors to blend.
  • Allow cooling. Pour the sauce into a sterilized bottle and secure with an airtight cap or lid.

You can use this sauce immediately, although the flavors will be better about two weeks later. This sauce can last stored in your refrigerator for about 6 months. Enjoy!

Buen Provecho!

Rehydrate The Dried Chilies

First, rehydrate the dried chili peppers. Cut off the stems and remove the seeds from the peppers. Then add them to a bowl of hot vegetable stock or lightly salted boiling water. Simply toss them into the liquid and allow them to steep for 20-30 minutes.

Alternatively, for more depth of flavor, first, dry roast the peppers in a skillet for just 40-60 seconds per side, then rehydrate them for 15-30 minutes .

Save the liquid as you can use a little to help blend the salsa Roja.

Tips For Making The Best Salsa Macha Recipe

Mexican Hot Sauce I Authentic and Healthy
  • Use gloves. When you are handling the peppers during that first step, make sure to wear food-safe gloves to avoid getting the spice on your hands. Many people tend to forget and touch their eyes or mouth and let’s just say- it doesn’t always end well for them. Using gloves is much safer!
  • Want to make more? You can easily double or triple the number of ingredients you use to make several jars of this salsa macha.
  • Don’t roast all of the peppers together. If you decide to double the number of peppers to make a large serving of salsa macha, make sure to roast the peppers in batches so that you get the most flavor out of them. You don’t want to overcrowd the pan.

Making Salsa On The Stovetop:

The key to this recipe is to char the tomatoes and peppers on the stovetop. Yes, stovetop. I tried to do it in the oven once and roast the tomatoes & peppers, bad move.

The stovetop method will take you about 20 minutes, but sooooooo worth the wait. Youll need to rotate the veggies from time to time, so all the sides are pretty even. Here is what the vegetables will look like once they are done:

How Do You Make Salsa Roja

As mentioned above, this recipe is made by taking the tomatoes, garlic, and jalapeno listed in the recipe, and blending them until everything is chopped up well.

The next step is heat that mixture in a pan over medium heat with a bit of oil until it boils and then remove it from the heat.

The final step is to add the diced onions and cilantro on top and then serve it!

You can put leftovers in the refrigerator and eat over the next few days as well!

Salsa Valentina/valentina Hot Sauce

Before we jump to the recipe, here is a little background. Valentina is a Mexican brand of pourable hot sauce. This sauce goes great with Mexican chicken wings and with other Mexican appetizers. Movie theaters have Valentina sauce dispensers so that you can top your popcorn with it. That says it all!

Do you have to run to the store every time to get it? Not really! You can make it in your kitchen and impress your guests with your homemade Mexican hot sauce. The process involves fewer ingredients and takes less than 15 minutes. But you will have to start the preparation a week ahead to give time for the peppers to marinate and release all the flavor into the sauce.

Ingredients:

  • To a bowl, add serrano peppers, guajillo peppers, and garlic. Season them with salt.
  • Pour vinegar and seal the bowl with a plastic sheet for 4 days.
  • Blend them with a touch of pepper until it is smooth.
  • Strain it into a bowl.
  • Serve immediately or store it in the refrigerator by packing in sealed glass containers.

Avoiding Skin Or Eye Irritations While Prepping Chiles

How to Make Homemade Hot Sauce

Most of us have experienced the pain of handling chili peppers and then absentmindedly rubbing our eyes. The pepper’s naturally occurring chemical capsaicin gets on hands and fingers and becomes an irritant. While perhaps a right of passage for inexperienced home cooks, experiencing that pain once is enough to know you don’t want it to happen a second time.

As a precaution, use latex gloves when prepping the peppers. In a pinch, you can put a plastic sandwich bag over the hand that’s handling the peppers.

If you do use your bare hands, wash them thoroughly with soap and hot water right after handling the peppers.

The hot sauce also includes the addition of onions, tomatoes, oregano, and cumin to round out the flavor.

Mexican Hot Sauce Ingredients

  • 1 Pound Dried Chili Peppers chopped, A mix of Guajillo Peppers, Pasilla Chili Peppers, New Mexico Red Chili Peppers
  • 5 Garlic Cloves minced

Add all the ingredients to a pan over medium high heat. Simmer for 10 minutes until the chilies are soft. Let the mixture cool to room temperature, then blend till smooth. Add additional vinegar to get the perfect consistency / taste. Strain the mixture and bottle.

Refrigerate this hot sauce, use within a few days.

Spice Level Of Salsa Roja And Salsa Verde:

You have control over the spice level in these! If you follow the recipe as is, the heat level is Medium-Hot! It just depends on how spicy the chile peppers you are using are.

  • To increase heat: Add more Serrano peppers! Or reduce the amount of tomatoes in the Salsa Roja, and substitute with 1/4 cup water per tomato taken out.
  • To decrease heat: Reduce Serrano peppers, remove the seeds, or simply eliminate. For the Salsa Roja, you can also add in an extra tomato.

What Are Ancho Chiles

An ancho chile is a poblano pepper that’s been allowed to stay on the vine until it’s turned red. After it’s harvested, it’s dried and turns a deep red/purple/brown. Anchos are commonly used in Mexican, Tex-Mex, and Southwestern cuisine.

Their color and their mild heat make them useful in sauces like red chile sauce. For an added dimension to the flavor of this recipe, using half guajillo chilies will bring in some fruity notes that complement the anchos’ earthy notes.

Although ancho and pasilla chile peppers are two different species of pepper, in Michoacan, Mexico, anchos are called pasillas. Parts of the U.S. where Michoacans immigrated sometimes interchange the terms pasilla and ancho.

Salsa Roja Recipe Mexican Red Table Sauce

Adobo Sauce – Popular Mexican-Style Sauce

This easy homemade salsa roja recipe is the ultimate Mexican salsa, perfect for tortillas, tacos and burritos, with tomatoes, jalapeno, lime juice and more. Serve as a salsa or sauce!

Ive talked about guacamole recipes in Mexican restaurants, how there is a basic form of the recipe, yet every Mexican place does it their own way. The same is true, if not MORE so, for Salsa Roja, or Mexican Red Table Sauce. If youve been to a Mexican restaurant, youve seen it.

Its the red stuff that typically comes in a large squeeze bottle, the bottle slightly condensed with moisture because it has just been removed from the refrigerator in the back, most likely freshly made that very morning. So very fresh.

It is similar in consistency to a thin salsa, with a bit more processing to give it that sauce like quality that is so perfect for pouring over your burritos, drenching your tacos, dripping over chorizo con huevos, huevos rancheros, Mexican migas, basically any Mexican cuisine served at your favorite local Mexican restaurant. This is Mexican salsa at its finest.

Salsa Roja is one of my favorites.

As mentioned, Salsa Roja varies from restaurant to restaurant. Weve been to a LOT of Mexican places, as well as Tex-Mex, and while there is a general similarity to MOST of these red sauces, each recipe is unique in flavor. Some of it comes down to an additional ingredient here and there, but mostly it is down to proportions.

How To Make Salsa Roja The Recipe Steps

Process the Ingredients. First, add the tomatoes, onion, peppers, garlic cloves, cilantro and lime juice to a food processor, then process them until they are fairly smooth.

Into the Pot with Seasonings. Next, heat a large pot to medium heat and add olive oil. Add the salsa and it will sear quickly. Add cumin and bit of salt.

Boil and Simmer. Bring the whole thing to a quick boil then reduce heat to a simmer. Simmer for 15-20 minutes. Remove from heat. Season with salt if needed and stir.

Thats it! Cool and refrigerate until ready to use. Serve it up in a squeeze bottle like they do in Mexican restaurants for fun!

It doesnt take much work at all. Just a bit of processing and simmering to let the fresh flavors develop and mingle with one another. Such a perfect, simple recipe. Great with any Mexican food.

Cool and pour it into a sauce container. I like to serve them up in the same plastic squeeze bottles you find in the Mexican restaurants.

Here is a link to the ones I use SET OF 2 24 Oz. Condiment Squeeze Bottles. It makes it feel that much more authentic. You can also serve this up as a salsa with some salted tortilla chips. The flavor is the same and honestly, it works as a simple salsa serving. This will easily last a week in the fridge, if you havent eaten it all.

Get cooking, friends! For your next Taco Tuesday, serve up some Salsa Roja and slather it on! Homemade salsa is the best. Perfect on Carne Asada Tacos!
