How to make Mexican Red Hot Sauce- Salsa Picante- Spanish Video- CC in English

In non-Mexican regions, this is known as tomatillo sauce. Mexican salsa verde or green Mexican hot sauce is made with fresh tomatillos and peppers. Stale tomatillos can make your sauce bitter.

If fresh tomatillos are unavailable, canned tomatillos are the next best option. The creamy variant is made with avocados. Other variants involve roasting or broiling the tomatillos in the oven.

You can use this salsa verde to make green enchiladas for a twisted Mexican breakfast. Why should enchiladas always be red?

Ingredients:

  • Salt to taste

Directions:

  • Bring the pepper and garlic to a boil in water. This can take about 15 minutes.
  • Add tomatillos, and cook them until they turn yellow.
  • Turn off the heat and let them sit for a while.
  • Combine salt and raw garlic in a mortar. Add cooked garlic and mash them as well.
  • Add peppers and make it into a paste.
  • In a processor, blend the onion, peppers, cilantro, and tomatillos into a fine paste. If your processor is small, do this step in batches, and combine all the batches in a bowl.
  • Serve with quesadillas or tacos. You can store it in the fridge for 3 days.

Ingredients For The Best Salsa:

  • Vine ripe tomatoes: We will add a smokiness to these by cooking on the stovetop
  • Jalapeno peppers: You definitely want some kick to this salsa! I omit the seeds and this still makes it spicy. We also cook these on the stovetop!
  • Poblano pepper: I love a smoky poblano pepper, it adds so much depth to a salsa. Another item to add to the stovetop.
  • Green onion: I prefer the milder taste of green onions for salsa, and the fact that they add a little crunch.
  • Limes: Definitely some tang to make good salsa!
  • Fresh cilantro: Dont skimp! Grab a big bundle and chop it up
  • Canned tomatoes:The addition of fresh tomatoes and canned together, really adds more flavor depth! I use Rotel.
  • Sea Salt: Definitely need to salt up the salsa!

How To Make Chipotle Hot Sauce

Sure, you could start with some dried Morita chiles, but canned chipotles in adobo are much more convenient so well be using those.

If youre new to chipotles in adobo heres what they look like out of the can:

These are smoked jalapenos resting in a tangy adobo sauce and youll get 6-8 chipotles in each can. Are chipotles spicy?

Occasionally youll come across larger sizes, but these smaller 7 oz. cans are the most common in traditional supermarkets so I usually buy a few at a time.

Im in the habit of scraping out most of the seeds as they tend to harden over time.

So well do that with seven of these chipotles and add them to a blender along with:

1/4 small onion1/4 teaspoon cuminpinch of salt

I usually saute the onion and garlic in some oil before adding it to the blender. And note that this was a larger onion so I only used about 2/3 of the onion in the photo below:

Once everything is in the blender give it a good whirl.

Itll need at least 30 seconds to liquefy everything so if it still seems chunky then give it a bit more time.

Once its combined youll have the perfect opportunity to take a taste for sweetness. And heat!

Youre already getting some sweetness from the orange and the cooked onion, but you can always add a bit more if you want 1/4 teaspoon of sugar would be a good starting point. I dont have much of a sweet tooth so I did not add any additional sugar to this batch.

  • Place the arbol peppers, guajillo peppers, and garlic in a saucepan with the water. Turn the heat to high, and once the water starts boiling, turn the heat down and simmer for about 20 minutes, or until peppers are very soft.
  • Remove saucepan from heat and allow to drop to room temperature. Once it has cooled, place the peppers, garlic, spices, dried herbs, vinegar, and one cup of the cooking water into a blender. Puree until you have a very fine texture.
  • Pour this mixture into a glass container using a strainer, to remove any pieces of pepper skins left.
  • Pour the mixture into the saucepan again, turn to medium-high heat, and gently simmer for about 5 minutes. This is just enough time to reduce the salsa to the desired consistency and allow the spices flavors to blend.
  • Allow cooling. Pour the sauce into a sterilized bottle and secure with an airtight cap or lid.

You can use this sauce immediately, although the flavors will be better about two weeks later. This sauce can last stored in your refrigerator for about 6 months. Enjoy!

First, rehydrate the dried chili peppers. Cut off the stems and remove the seeds from the peppers. Then add them to a bowl of hot vegetable stock or lightly salted boiling water. Simply toss them into the liquid and allow them to steep for 20-30 minutes.

Mexican Hot Sauce Ingredients

  • 1 Pound Dried Chili Peppers chopped, A mix of Guajillo Peppers, Pasilla Chili Peppers, New Mexico Red Chili Peppers
  • 5 Garlic Cloves minced

Add all the ingredients to a pan over medium high heat. Simmer for 10 minutes until the chilies are soft. Let the mixture cool to room temperature, then blend till smooth. Add additional vinegar to get the perfect consistency / taste. Strain the mixture and bottle.

Refrigerate this hot sauce, use within a few days.

Spice Level Of Salsa Roja And Salsa Verde:

You have control over the spice level in these! If you follow the recipe as is, the heat level is Medium-Hot! It just depends on how spicy the chile peppers you are using are.

  • To increase heat: Add more Serrano peppers! Or reduce the amount of tomatoes in the Salsa Roja, and substitute with 1/4 cup water per tomato taken out.
  • To decrease heat: Reduce Serrano peppers, remove the seeds, or simply eliminate. For the Salsa Roja, you can also add in an extra tomato.

Its the red stuff that typically comes in a large squeeze bottle, the bottle slightly condensed with moisture because it has just been removed from the refrigerator in the back, most likely freshly made that very morning. So very fresh.

How To Make Salsa Roja The Recipe Steps

Process the Ingredients. First, add the tomatoes, onion, peppers, garlic cloves, cilantro and lime juice to a food processor, then process them until they are fairly smooth.

Into the Pot with Seasonings. Next, heat a large pot to medium heat and add olive oil. Add the salsa and it will sear quickly. Add cumin and bit of salt.

Boil and Simmer. Bring the whole thing to a quick boil then reduce heat to a simmer. Simmer for 15-20 minutes. Remove from heat. Season with salt if needed and stir.

Thats it! Cool and refrigerate until ready to use. Serve it up in a squeeze bottle like they do in Mexican restaurants for fun!

It doesnt take much work at all. Just a bit of processing and simmering to let the fresh flavors develop and mingle with one another. Such a perfect, simple recipe. Great with any Mexican food.
