Few Pointers on how to make a yummy Penne Pasta…

What Is Tomato Sauce

Tomato sauce is typically made from pureed ripe tomatoes. It has a thick consistency and typically comes in a jar.

Unlike tomato paste, tomato sauce isnt a name given to one specific condiment as it can refer to several varieties of sauces available that include ingredients such as onions, garlic, peppers, and herbs.

Tomato sauce has a grainy texture which is achieved by cooking the tomatoes until they reach a liquid state ensuring that the fleshy parts of the tomato still remain. Tomato sauce can taste different depending on the seasonings and ingredients that have been used to create it. Simply put, tomato paste has a more concentrated and richer flavor and it has been made from tomatoes that have been cooked until the moisture has been drained from them.

Tomato sauce on the other hand doesnt share the same intense flavor as paste because it isnt as concentrated. It is commonly used to flavor pasta dishes or as a base for Mexican salsas.

Due to the density of tomato paste, you will typically find that it comes in smaller quantities. Unlike tomato sauce, where a whole jar is typically used per dish, you will only require a very small amount of tomato paste.

The Womp: Trader Giottos Organic Tomato Basil Marinara 25 Oz

Spaghetti with Marinara Sauce

The Sauce: From cult favorite Trader Joeâs comes the marinara with the lengthiest ingredient list of the bunch. Along with the expected ones, youâll find some surprise Parmesan cheese and expeller pressed soybean oil, which has been physically squeezed out of the soybean rather than drawn out with chemical solvents.

The Taste: While Trader Joeâs often hits the mark, this marinara was a miss. More ingredients did not equal better flavor. The sauce was the right viscosity to coat pasta, but had a âkind of oddâ flavor profile, says Sinha. âThis tastes like old water,â adds Aguiano. To Asbrink, it almost seemed âsoapy,â and there was too much tomato skin floating about. âI would use this in an apocalypse,â concludes Gurjar.

The Verdict: If you do find yourself experiencing some of the aforementioned dark times, this marinara would be perfectly fine in a chicken stew, soup, or anywhere else where it may be allowed to fade quietly into the background.

Heat Your Sauce Separately

With few exceptions , pasta should be tossed with sauce that is already hot and ready. You don’t want your cooked pasta to heat up in a cold pan of sauce, slowly absorbing more water and becoming mushy.

I use either a wide saucierâthe sloped sides of a saucier make it easier to use for tossing pasta than a straight-sided saucepanâor a large skillet for my sauce.

The Right Way To Sauce Pasta

Marinara sauce & Penne pasta 🙂 easy recipe

“I’ll have a glass of the grappa, please,” I said to the bartender at the Italian restaurant down the street from my house.

“You are the first person I have ever seen order that,” she exclaimed in response. I asked her how long she’d been working there, figuring it might be her first week or two. “Almost two years now,” she said.

You see, this isn’t the kind of Italian restaurant where one would go to order grappa. It’s the kind of Italian restaurant where the house wine comes in a box and the Parmesan comes pre-grated in a shaker on the table. It’s the kind of Italian restaurant I imagine Billy Joel crooning about. I actually kinda like these sorts of restaurants, in a cheesy way . I like ripping off chunks of overly soft and saturated garlic bread, and the waiters who come around with the oversize pepper mill, as if it can rescue limp baby spinach . And then there are the meatballs as big as your face, and the extra-extra-fried calamari with its ramekin of tomato sauce for dipping.

The one thing I don’t like about them? The way they serve pasta. It’s almost inevitably a plate with a nest of reheated noodles that have been tossed in oil to prevent them from sticking to each other, with a big ladleful of sauce poured over the center. What exactly is the problem? Aren’t you getting pasta and sauce on your plate anyway? Who cares if it’s been tossed together beforehand, right?

    Transfer Cooked Pasta To Sauce

There are a couple of ways to get your pasta from the pan to the sauce. The easiest is to grab a set of tongs for long, skinny pasta, or a metal spider to fish out short pasta shapes, and transfer them directly to the pan with the warm sauce. Alternatively, you can drain your pasta through a colander or fine-mesh strainer, making sure to save some of the pasta water.

What If I Cant Find Fire Roasted Tomatoes

Fire roasted tomatoes are key in this recipe, because of their sweet flavor right out of the can. These tomatoes have been charred over an open fire, then canned. Other tomato varieties can taste bitter out of the can, and need to be cooked for longer.

Want to order them online? If you love online shopping like we do, heres a link to buy .

If you cant find fire roasted tomatoes for this recipe, you can substitute any high quality variety of canned tomatoes. You may find you have to cook the sauce a little longer to remove the bitterness. Take a taste at the end, and see if it needs a little extra love.

    Penne Pasta With Easy Marinara

How To Make Homemade Spaghetti With Marinara Sauce | #StayHome With Pasta Grannies

Marinara sauce is an extremely simple recipe to make. Similar to pomodoro sauce where fresh tomatoes are used, in this recipe were using canned tomatoes that are available any time of year. The rest of the ingredient list is short and sweet for a sauce thats easy and light.

    • Whole San Marzano tomatoes in their purée. Be sure to choose legit San Marzano tomatoes that are canned whole in a sauced tomato purée. I use DeLallo San Marzano style tomatoes that are grown in Italy and imported to the U.S. Interestingly, 95% of the San Marzano tomatoes sold in the U.S. arent actually from Italy as they claim, and are actually grown in the U.S. instead.
    • Extra virgin olive oil. The olive oil imparts a LOT of flavor in this recipe so choose the best extra virgin olive oil you can afford. I prefer olive oils with a clean taste that are clean, fruity and bright.
    • Garlic. Choose firm cloves of garlic you will be cooking whole.
    • Tomato paste. Tomato paste is simply concentrated tomato, and adds depth to this sauce. I prefer using it from the tube rather than the can for less waste.
    • Basil or oregano. Regardless of which herb you choose, make it fresh.
    • Kosher salt and freshly ground black pepper. Salt is what balances the tomatoes acidity in this recipe with black pepper bringing the heat.

    About The Book: Yogurt Culture

The book is dedicated entirely to yogurt, and while that might sound overwhelming, the recipe ideas are varied and inventive. It features fruit compote toppings, savory Mediterranean yogurt dips with olive oil and lemon, lamb kebabs, mocha cupcakeseverything from sweet to savory to in between. I read a lot of cookbooks, so its meaningful when I say I truly enjoyed immersing myself in the pages of this book.

What surprised me was the significant use of yogurt in Mediterranean dishes , which for whatever reason I was not expecting, thinking a yogurt cookbook might simply be a list of granola and fruit toppings. Cheryls writing voice is clear and comforting, and her instructions are thoughtful. Even from this simple creamy marinara sauce recipe, you can sense her culinary finesse, for example choosing to temper the thick yogurt with a bit of the warm marinara sauce before mixing it all together.
