But I dont use wine in my recipes, so I will use white vinegar instead of wine in this lemon chicken piccata. Feel free to use white wine if you are ok with it.

    For a quick fry of the chicken breasts, use a large stainless steel or cast iron skillet. Avoid using a non-stick pan. To build flavor, you want the chicken to leave bits in the bottom of the pan for the piccata sauce. A non-stick pan wont create those bits.

    When frying, I use a combination of butter and oil. The oil tempers the butter so it doesnt burn, and the butter adds that golden color and flavor to the chicken. If youre worried about the added fat, start by adding less of both and add more as needed. But dont leave one or the other out for the best results.

    Making Perfect Lemon Chicken Piccata

    Take the time if you need to, to pound your chicken the same size or at least thinned out. You wont regret it. They will cook faster and more evenly.

  • Chicken: Heat 2 Tablespoons butter and 2 Tablespoons of oil in a large skillet over medium high heat. Salt and pepper each side of the chicken breasts
  • If They Are Thick: If the chicken breasts are overly thick, pound them to be thinner. Cooking time will be shorter.
  • Flour: Dredge the chicken in the flour
  • Brown: Put the chicken breasts in the skillet. Cook for about 3 minutes on each side, or until it is cooked throughout and no longer pink. Remove from the skillet and set aside on a plate.
  • Sauce: Turn the heat to medium low. Add broth juice from both lemons, heavy cream, and capers. Bring the sauce to a boil and return to medium low heat. Test the sauce and season with salt and pepper as needed. Allow the sauce to cook and bubble for about 3 minutes.
  • Dish: Serve the chicken over cooked pasta and spoon the sauce over broth. Sprinkle with fresh chopped parsley.

    Be sure use to use real lemon juice and garlic for the best flavor, and blanched almond flour for the best texture. If you are not low carb or gluten free, you can use regular all purpose flour.

    Because this recipe is made entirely on the stovetop, thinner cuts of cod work best. If you can only find thicker cuts, you may have to finish cooking it in the oven .

    Butterflying is the technique that splits the chicken breast horizontally and opens it up like a book.

    Pressure Cook Chicken Piccata

    Add ½ cup unsalted chicken stock, ¼ cup drained capers, and optional 1.5 tsp regular soy sauce in Instant Pot. Then, give it a quick mix.

    Finally, add the browned chicken breasts and all the meat juice in Instant Pot.

    *Pro Tip: Try to get the browned chicken breasts as close to the bottom of the inner pot as possible. So theyre partially submerged in the cooking liquid.

    With Venting Knob in Venting Position. Close the lid. Then, turn Venting Knob to Sealing Position.

    Chicken Piccata with Lemon Sauce Recipe: How to Make It ...

    Its simply easy to make this piccata sauce. Heres how you make one:

  • Melt butter in a pan and sauté onion and garlic about a minute or two.
  • Pour the white wine , chicken stock and freshly squeezed lemon juice and bring to a boil and cook until wine almost evaporates.
  • Reduce the heat to low and add capers and the remaining butter then adjust the taste with salt and pepper.
  • Dont be tempted to thicken the sauce with flour or cornstarch, IT WILL eventually thicken slightly. Be patient in this process to allow the flavors to fuse well together.

    Tip: If for some reasons your sauce doesnt thicken, mix 1 teaspoon of cornstarch with 1 tablespoon of water until you no longer see any lumps. Then slowly pour it into the center of the pan while the sauce is boiling and whisk it in to fully blend into the sauce. It should thicken by then, and you can now add your chicken back into the pan.

    • 1. Whisk together flour, salt and pepper.
    • 2. Dredge both side of chicken cutlets in flour mixture, then add to skillet.
    • 3. Sear chicken on both sides until browned and cooked through.
    • 4. Transfer chicken to a plate and keep warm.
    • 5. Add garlic to the same pan and saute until golden.
    • 6. Pour in chicken broth and bring to a simmer. Allow broth to simmer until reduced by half.
    • 7. Whisk cornstarch with a little broth, then add to skillet along with the lemon juice.
