How To Make Alfredo Sauce:

  • The first step to making Alfredo is to warm your butter and cream in a large saucepan over low heat. You will let it simmer for about 2 minutes.
  • Next, you will whisk in your garlic and seasonings. Whisking constantly for about one minute just to let the garlic cook.
  • Lastly, you will add your parmesan cheese and stir just until the cheese has melted and your sauce is smooth.

Note that it is best to use freshly grated parmesan cheese right off of the block so that your sauce isn’t grainy. I do not recommend using the “shaker” style container grated cheese for this recipe.

The Parmesan will thicken this sauce up. If it isn’t quite thick enough, allow the sauce to stand for 2-3 minutes before serving.

  • 1Figure out how much Alfredo sauce to use. You’ll need the same number of sauce servings as pasta servings. For example, if you made enough pasta for two people, heat enough sauce for two people. Check the nutrition label on the sauce jar to find out how much sauce is in one serving it should be about 1/4 to 1/2 cup per person.
  • 2Pour the sauce into a medium pan or pot. The pot you use needs to be large enough to fit both the Alfredo sauce and the pasta, so choose accordingly.
  • 3Heat the sauce over medium heat. Place the pan on a burner, turn the burner to medium, and let the sauce begin to heat. Stir it occasionally using a spatula or spoon to keep it from scorching on the bottom. It should take about five minutes to heat. Taste the sauce to see if it’s hot before going to the next step.

    Once you find the reason, itll be easier to avoid this issue in the future. So, lets go through the following factors. And see what went wrong.

    Added Too Much Flour

    In most cases, flour is the main thickening agent on your sauce. You might have put it in the wrong amount or havent mixed it properly. Thats why the sauce is thickened.

    So our basic recipe is that we add 4 tablespoons of plain flour for the sauce. It will thicken it and it serves 2 people. And the formula is to keep stirring the flour with a manual egg beater. So that it mixes with other ingredients.

    You might have messed up with any of these factors. That can be the reason behind your thickened sauce.

    Pasta-Sauce Ratio

    Well, its another factor that gets unnoticed. Youve put a lot of pasta compared to your sauce. So it can be the reason behind thickening. As pasta has starch, it soaks up the sauce and makes it thick.

    So the perfect amount should be 100gm pasta for 1 cup sauce. Thats how we like our pasta. So if youve put 200gm of pasta into this amount of sauce, its causing the thickening.

    One trick you can follow is that dont pour the pasta into the sauce. Instead, pour the sauce over cooked pasta. You can apply this trick if youre not sure if theres enough sauce for the pasta.

    Heat Intensity

    Putting the sauce in higher heat can be the reason for sauce thickening.

    How To Make Shrimp Alfredo:

    Boil water and cook your fettuccine until it is done, strain your fettuccine in a strainer.

    Prepare your shrimp, I used pre-cooked deveined shrimp from the meat department for less work.

    Melt in skillet butter with minced garlic to your liking, I used about 2 Tbsp worth of minced garlic.

    Cut up your bacon and fry it up to the doneness that your family prefers, we like chewier bacon vs crispy.

    OR if you want to take it to the next level fry up the shrimp in the bacon grease and then add it into the final product.

    In a pot mix together your alfredo sauce and all the extra cheeses to melt together, allow to cook on low to make sure the cheese is melted.

    Add in your noodles and shrimp!! I top mine with shredded parmesan cheese!

    Preheat oven to 350f degrees. Spray 9×13 baking dish with nonstick spray. Cook spaghetti noodles according to package directions. Drain noodles very well.

    While the spaghetti noodles are cooking, brown and crumble ground beef in a large sauce pan. Drain excess grease.

    Put ground beef back in pan and add spaghetti sauce. Stir to combine well.

    I added chopped chicken that I cooked earlier to make chicken Alfredo. If you dont have fresh cooked chicken, you can use the canned version. After its added to the cream sauce with the other ingredients, you probably wont be able to tell the difference.

    As you add ingredients, you may want to turn the burner up to medium heat to keep the sauce hot. After everything has been added and the flavors have blended, its time to serve it.

    First, youll need to choose the thinning agent. But choosing the perfect thinning agent can be a tough job. So we prefer you to pay attention.

    Stock

    Now if youre trying to make a veg pasta, add the vegetable stock. If youre trying to make chicken alfredo, add chicken stock. But while adding the stock, make sure you add it gradually.

    Start with 1/4th cup of stock, then stir and repeat until it reaches the desired consistency.

    Make sure to put the low while adding the stock. So that the sauce doesnt get any more thicken.

    Milk

    For a creamy texture, add some more milk to the sauce. Add half a cup of milk to thin your sauce. For four cups of sauce, youll need to add half a cup of milk. Now keep on stirring. See if the texture improves or not. If not then add a little more.

    And your sauce will be thinned. If youre avoiding dairy products, use almond or soya milk as well. In this case, the taste might be a little different. To adjust tha,t put ½ teaspoon garlic powder and ½ teaspoon ground nutmeg. And youll be all good.

    Pasta Water

    When you boil your pasta, do not drain the water. Instead, you can add this pasta water to thin out your alfredo sauce. You can add up to 1 cup of pasta water to your sauce. This amount is appropriate if youre making it for 4 people.

    After putting the pasta-water in, let it simmer for 10 minutes. See if it comes to the perfect consistency. If it seems too thin then simmer it for another 5 minutes. And it will be all good.
