Lets Make Grilled Hanger Steak With Homemade Steak Sauce

Preheat the grill. The key to a great char on a grilled steak is a super hot grill, so make sure to preheat it. I like mine to reach a temperature of at least 500 degrees before adding the steak. This is usually a high to medium-high setting.

Make the sauce. Because hanger steak cooks so incredibly fast, I like to get the sauce going before I throw the steaks on. First, melt the butter over a medium-high heat in a small saucepan. Let the butter start to brown and then swirl the pan until it turns a deep brown color and smells nutty.

Browning the butter isnt a mandatory step, but I like to do it to add another layer of flavor to the homemade steak sauce.

Once the butter is brown it will be HOT, so let it cool off for about 30 seconds before adding the onion and garlic. When you do add the onion and garlic, sweat them over a medium-low heat. If at any point you see the onion or garlic start to brown, turn the heat down even more.

Steak sauce is a controversial subject: some love it, and some judge those who use it. Even at mighty steakhouses like Peter Luger in Brooklyn, where some of the best beef in the country can be found, they always bring it out. But to some a steak sauce is a crime: Why cover up the taste of great beef with a sugary ketchup-like goop? If you have good beef, leave it alone with just salt and pepper, and leave the condiments to the lesser joints.

Still, I had to trust a recipe from a book called Steak with Friends by celebrated Chicago chef Rick Tramonto. He augments the ketchup base with umami-rich dried shitake mushrooms, soy sauce, dry mustard, and dark brown sugar, plus a few more secret ingredients. Everything simmers together for 45 minutes, which is enough time to roast some oven fries and cook the steak with time to rest. The result is round and rich, sweet and tangy, and quite balanced.

If you like steak sauce, this is a serious winner. And it might make a few converts, too.

  • Reserve 1 Tablespoon steak drippings from your cooked steak in the pan over medium heat. If you haven’t cooked a steak, melt 1 Tablespoon butter in a cast-iron skillet. Then, add garlic and shallots and saute, stirring until tender, about 1 minute.
  • Add red wine, beef stock, balsamic vinegar, and fresh thyme sprigs. Bring liquid to a rapid simmer over medium-high heat.
  • Allow the wine mixture to reduce until thickened, approximately 3 to 5 minutes.

    Oh My Steak Sauce: My Favorite Secret Family Recipe For The Best Flavored Buttery Steak Sauce This Steak Sauce Is Gluten Free Low Carb And Keto Approved

    I am finally sharing the recipe for my all time favorite insanely flavorful steak sauce!!

    I know you are all probably rolling your eyes HARD at the name: Oh My! Steak Sauce.

    But I seriously could not come up with a better name that would properly describe it.

    With the giant range of flavorful ingredients included, its really hard to wrap up into an easy name that also explains what is in it.

    I even begged my family to help name it and this was the best we could all come up with!

    Its a butter based sauce loaded with horseradish, dijon mustard, garlic, chives, shallot, fresh thyme, a pinch of cayenne, salt and pepper.

    You melt the butter and quickly whisk all of the ingredients together in a bowl.

    THATS IT. It seriously couldnt be any easier and I swear to you the flavor is phenomenal.

    I like to let the sauce sit for a few minutes after whisking it all together. However, that is 100% optional.

    If you let it sit for just 10 minutes, the butter will cool and thicken a little and then its PERFECTION.

    While I call this a steak sauce, we use it for everything. We even dip vegetables in it and roasted chicken!

    While we grill a lot living here in Florida during the winter, the boiling hot afternoons are on their way.

    During the Summer, I much prefer to cook our steak inside in a cast iron skillet in butter.

    A few tips I have for cooking the best steak in a cast iron skillet:

    One thing that used to prevent me from making things like Hollandaise and Béarnaise Sauce at dinner parties was the inevitable stress of making these sauces just before serving. Though they can be made ahead, refrigerated and then reheated, its quite risky and easily prone to splitting. And Béarnaise more so than Hollandaise, Ive found.

    Restaurants never, ever make Béarnaise Sauce ahead, I keep getting told!

    So anyway, theres two easy solutions:

  • Prep everything ahead and make while protein is resting I did this last weekend with salmon and it really was a no-brainer. Just have the butter cut and in a jug ready to melt, the vinegar already infused, herbs chopped, jug and stick blender out and ready to use. Then it really was a 2 minutes job to blitz it all up while the salmon was resting or

  • Keep finished sauce warm in a thermos Admittedly I havent done this for a gathering, but I did it when taking the photos. It was as good as new 1 hour later as if it were freshly made!

    • I use a thermos to keep Béarnaise sauce warm for ~ hour.
