Homemade SOY FREE Soy Sauce and Teriyaki Sauce! NON-GMO

A nice and easy 15-minute recipe! Teriyaki-seasoned salmon is firstly pan-seared and then set aside. We toss the noodles in the same pan before returning the salmon to the skillet and breaking it up into nice big chunks to mix through.

Flavour tip: more caramelisation on the noodles = more flavour!

  • Teriyaki Sauce Mix the ingredients in a bowl.

  • Coat salmon in 1 tablespoon of the Teriyaki Sauce. No need to marinate were cutting the salmon into thin-ish strips, which affords a good amount of salmon surface area for the Teriyaki Sauce to cover. The strips mean it also speeds up the cooking time. Win, win!

  • Cook salmon for just 1 1/2 minutes on each side until golden and just cooked through. The thin strips cook quickly! Once cooked, remove to a plate and set aside.

  • Sauté aromatics Give the pan a quick wipe . Next we give the onion and garlic a head start before adding the Chinese broccoli stems. We wont add the leafy part of the Chinese broccoli until towards the end as they take barely a minute to wilt.

  • HALF the sauce Add the noodles then just HALF the sauce. This allows the noodles to absorb the sauce faster so we can get nicer caramelisation on the noodles as they cook. If you add all the sauce at the same time, it takes almost double the time for the sauce to reduce.

  • Toss the noodles until the sauce is absorbed and you no longer see any traces of it in the pan.

  • Add remaining sauce then toss to disperse.

  • Toss for another 1 minute or until the leaves wilt.

What Does Teriyaki Sauce Taste Like

Teriyaki sauce has a complex flavour a mixture of sweet and savoury, tangy and salty. The sweetness comes from the sweet wine and the caramelisation of the sugar, honey or syrup, which also gives the sauce its shiny glaze. The soy, ginger and garlic tone down this sweetness, resulting in a savoury, indulgent flavour that transforms even the simplest chicken, beef or vegetable dish into a real treat.

In almost every cuisine, soy sauce and teriyaki sauce are widely used. Teriyaki, on the other hand, is made with a much more complicated sauce that is made with soy sauce and water. Because both sauces contain high levels of sugar and salt, they can be substituted for reduced amounts. The soy version ofTerriyaki is a jazzed up version of the soy version. A typical teriyaki sauce is loaded with refined sugar a serving of a store bought brand has close to 15 grams of sugar for a serving similar to this recipe . There are options in case youd prefer to use gluten free Tamari or regular soy sauce in place of it.

The first few times I made this I put it in the microwave! It certainly works just fine but Ive been making it in a sauce pot the last few times because I find it gets a bit thicker. Do what works for you in the time you have!

This version has toasted sesame oil so much delicious flavor and healthy fats! I like this addition because I typically serve this with poached chicken or fish, and steamed veggies and rice. Sesame oil is a great source of vitamin E and is one of my favorite oils to cook with.

You can use leftover roast chicken, or just lightly poach chicken breasts or saute them in sesame oil. In a pinch, you can use a microwave bag of steam-fresh vegetables . Otherwise, just chop up a few stir fry veggies and lightly steam them.

How To Prep Your Fresh Ingredients

This sauce is very easy to make. Preparing the ginger and garlic is the only semi-tedious step.

To grate ginger: You dont have to peel your ginger first if youre using a fine grater . Heres my favorite tool for the task .

To peel and mince garlic: You can use a garlic press or mince it by hand. Im all for the garlic press.

Garlic and ginger shortcuts: Unfortunately, I couldnt find any that work. I dont ever recommend using store-bought minced garlic. It isnt the same. I also tried this sauce with ginger and garlic powder instead of fresh , and it wasnt nearly as good. In fact, it bordered on gross. Fresh is best!

When you are craving teriyaki chicken, you can make a super simple version that will satisfy your craving. And, have I mentioned it is only three ingredients, including the chicken?!? To make this recipe, first, cut the chicken thighs into strips.

Next, cook the chicken strips for about 5 minutes in a skillet over medium heat. Flip the chicken strips and add the soy sauce and brown sugar. Mix the ingredients together and cook for another 12 minutes or so. The chicken is fully cooked when it reaches an internal temperature of 165°F.

Once cooked, use a slotted spoon to remove the chicken, leaving the sauce in the skillet. Place the chicken on a plate or in a bowl, tented with aluminum foil to keep warm. Continue to cook the sauce for about 5 minutes, or until thickened.

Finally, remove the skillet from the heat and add the chicken back into the pan. Toss to coat the chicken in the sauce. Serve on top of white rice, garnished with green onions.
