Raos meatballs are the best meatballs I have ever tasted. They are simple but somehow magical at the same time. Its totally worth the effort to make these at home.

The version floating around the internet is close I think except for two little details. The internet version has you make the meatballs 1 1/2 inches in diameter. And you only simmer the meatballs in the marinara for 15 minutes. In the restaurant, Raos meatballs are bigger. Way bigger.

I am not a great cook. There, my dark little secret is out in the open. So what does a not so great cook due when tasked with attending a potluck super bowl party? Well, cheat of course.

Ive been meaning become an expert chef for a while now, but that annoying little thing called work keeps rearing its ugly head. As the party was approaching my anxiety began to grow as my time to master the art of baked ziti was dwindling. In desperation, my mind turned to Grandpa Pete.

Several years ago I attended my very first garlic festival in Saugerties New York with Paula. There we discovered a stall that was dishing out samples of tomato sauce. Grandpa Petes had started out as a small family operation and slowly grew their business until they had created some of the best jarred tomato sauce out there. Ingredients:16 ounces ziti pasta, uncooked3 1/2 cups of Grandpa Petes Vodka Sauce2 cups ricotta cheese2 cups shredded mozzarella cheese1/4 cup chopped fresh parsley1 eggs, slightly beaten1 tablespoon grated Parmesan cheesecooking spray

Directions:1. Cook ziti according to package directions drain.

2. In large bowl, combine ziti, 1 1/2 cups Grandpa Petes Vodka Sauce, ricotta cheese, mozzarella cheese, parsley, egg, oregano, garlic powder and pepper.

My husband and I like fettuccini Alfredo. Since I have a gluten sensitivity, I get fettuccini pasta thats gluten-free.

You can serve this however you like, but Ive found this to be the best way to serve this easy recipe.

After cooking the pasta and putting it on the plate or in the bowl, I scoop some pasta sauce over it.

Then I top it with parmesan or a blend of parmesan and Romano.

Or, if you prefer, you can mix the pasta into the Alfredo sauce. For a baked dish, mix all of it and put it in a greased baking dish.

Top it with mozzarella cheese and pop it into a 350 oven. Bake it until the cheese on top melts and then serve it hot.

Traditional Alfredo sauce typically has nutmeg in it, but I kept it as an optional ingredient to keep it simple. I noticed some people were surprised by this when I shared the recipe with them, but its actually a very common component in Alfredo sauce recipes.

Lately Ive been making spices optional in recipes when I can, not because I dont use them liberally myself, but just to offer flexibility when possible. I do recommend the nutmeg for that familiar flavor in your keto Alfredo sauce. Even if youre not expecting it, it fits in amazingly well!

Speaking of flavor, you may want to add more salt and pepper at the end, to your taste. You probably need more than you think!

When adding salt, keep in mind that the low carb Alfredo sauce will be more concentrated when tasting it plain. Taste: Tough the basil shreds were visible to the eye, they were undetectable to the taste buds. Unfortunately, this sauce was lacking the authentic flavor its packaging foreshadowed.

Eat This, Not That! Verdict:

Considering the rustic labeling and Italian name that translates to antique kitchen, I expected this sauce to boast more pronounced Mediterranean flavors. Rather than getting a refreshing whiff of tomato and basil, my nostrils were hit with an unpalatable dish detergent scent. My colleague also affirmed that the taste is almost Windex-like. What in the world? To say the least, I was confused.
