Ingredients Needed

  • 1 pound red chili peppers , chopped
  • 1 quart unchlorinated water
  • ½-1 cup white wine vinegar to your preference

The Method

First, ferment the chili peppers. Chop the peppers then pack them into a jar, leaving at least 1 inch of head space. The peppers may rise a bit when fermenting.

Next, mix 1 quart unchlorinated water with 3 tablespoons sea salt. Pour just enough brine over the peppers to cover them, pressing them down a bit as you go. It is important to keep the peppers covered with brine to avoid spoilage. Check this daily.

Screw on the lid and set the jar away from direct sunlight to ferment for at least 1 week. Ideal temperatures are between 55-75 degrees F. The most active fermentation period is between 1-2 weeks, so be sure to monitor it during this time. Burp the jars often by unscrewing the lid a bit to let out some of the accumulating gases. After 1-2 weeks, the fermenting activity will diminish and the brine will turn cloudy and taste acidic.

Pour the fermented peppers, including brine, into a pot along with the vinegar. Bring to a quick boil. Reduce heat and simmer for 15 minutes. Alternatively, you can strain out the fermented peppers and discard the brine, then boil the peppers with 1 cup vinegar and 1/2-1 teaspoon salt. Some people prefer to use the brine.

This sauce competes with Texas Pete Original on scovilles, but is unique among all that I tested. Until the taste test, I had never realized how flavorful this sauce is. It really brings out the flavor of chile peppers over the heat. The heat is there for sure, but it takes a backseat. Ill keep this in stock for when Im not feeling a lot of heat, but do want to add a good bit of flavor like to a turkey sandwich or breakfast eggs.

    Q: I work at a very large grocery store in town, and just discovered that Garner Foods is discontinuing Texas Pete hot dog chili. We cant keep it on the shelf, it sells so fast. Why would they discontinue something that sells so well?

    Answer: First off, no, T.W. Garner Food Co., the company behind Texas Pete hot sauces, has not closed.

    Were in our 86th year of operation and are very much in business and looking forward to the future, said Steve DeCorte, executive vice president of sales for Garner. We continue to be a family-owned company.

    But it is true that the company has discontinued production of one of its products, Texas Pete Chili Sauce.

    According to a statement from the company, There were many factors that went into the decision and we regret any inconvenience it has caused.

    He estimated that Texas Pete had been making the chili sauce for more than 30 years, but has decided to exit the hot dog chili market.

    In the consumer products world, products are discontinued for one reason or another, and we have decided to discontinue chili, DeCorte said. We do not plan to launch another chili item at this particular point in time.

    Texas Pete Cha Hot Chile Sauce

    This sauce directly competes with Sriracha sauce, which is most famously made by Huy Fong Foods . Sriracha though is more of a style than a brand of sauce so this is Texas Petes take. It was the oddball in the taste test. It has a distinct Asian / West Coast flavor rather than a Deep South / Tex-Mex flavor. The heat seems to come after the bite instead of before. I definitely like Texas Petes take over the name brand Sriracha sauce. Ill keep it in stock, but will likely only break it out with Asian dishes and some rice.
