One Sauce Five Ways: Kikkoman Teriyaki Marinade

Ingredients:

  • 1 Tablespoon cornstarch

Directions:

Combine all ingredients in a medium saucepan.

Using a whisk, give it a stir. Be sure to scrape the bottom so all of the cornstarch and sugar arent sticking. mix it well with your whisk.

Bring to a low boil. Continue to boil until the sauce thickens. This happens kind of fast once it reaches a boil. So stir it constantly so it does not burn.

Japanese Cooking Sake Is The Secret Ingredient

Most Japanese recipes call for cooking sake, which is Japanese rice wine made for cooking. Its a lower grade sake and not for drinking.

Sake rice wine infuses the sauce with the earthy aroma, making this dish absolutely tantalizing.

If you have an Asian store or Japanese store where you are, pick up a bottle of cooking sake. If not, you can always order it online. If you cant take alcohol, just skip this ingredient and use water instead.

The Story Of Soy Sauce

Even people who love soy sauce and use it all the time are often surprised to learn what it is and how its made. We make ours from just four simple ingredientswater, soybeans, wheat, and salt. Those ingredients are transformed through a traditional brewing processmuch like making wine or beerthat has remained unchanged for centuries.

Spicy Teriyaki Chicken Thighs

Starting as a simple mixture of soy sauce and spices, teriyaki has been popular since it was first created in Japan. The lustrous sheen of the sauce inspired the name teriyaki, or glaze-broiled. Japanese-Americans in Hawaii added fresh ginger, brown sugar, pineapple juice and green onions to produce the teriyaki we know and love.In 1961, Kikkoman began producing the original bottled teriyaki sauce Kikkoman Teriyaki Marinade & Sauce setting the standard for teriyaki flavor. A blend of traditionally brewed soy sauce for umami flavor, wine, sugar and spices, teriyaki marinade & sauce has the depth of flavor that makes it an ideal marinade or brush-on sauce, right from the bottle.

Imagine tender and juicy chicken thighs doused in sweet and savory teriyaki chicken sauce, served with steamed white rice in a bowlyummy.

You can make this delicious dish using pantry ingredients that you already have at home.

There are many Japanese teriyaki chicken recipes. What I am sharing with you is a super easy and quick homemade recipe with simple steps.

  • First, marinate the chicken with the marinade: soy sauce, sugar and Japanese cooking sake.
  • Transfer the marinated chicken and the teriyaki sauce to a skillet and let cook slowly.

My recipe calls for only four simple ingredients: chicken thighs, soy sauce, sugar and Japanese cooking sake. I also have an authentic chicken teriyaki recipe with skin-on chicken thighs.

How To Use Teriyaki Marinade

One of the best things about teriyaki marinade is how versatile it is to use. Teriyaki is wonderful on everything from chicken to the salmon, beef, pork, and tofu. You don’t need to marinate proteins for very long about15 to 30 minutes will do if you’re in a rush. However, for the best flavor, you can marinate chicken, beef, or pork overnight. Salmon can be marinated for up to 6 hours. You can use teriyaki sauce to flavor your favorite stir-fry.

Tips For Variations On Diy Teriyaki Sauce

Kikkoman Marinade & Sauce Teriyaki, 15.0 FL OZ

Honey Teriyaki Sauce Simple to adapt this recipe by cutting the brown sugar in ½ and replacing the quantity with honey. This is great for using on BBQ ribs that you might want a more finger-licking thick sauce.

Hawaiian Teriyaki Sauce If Im making something, I usually opt to have hints of Hawaiian style teriyaki. In which case Ill use my Huli Huli Teriyaki BBQ recipe. If you dont want to whip that together you could make a pared-down version by adding ¼ cup pineapple juice instead of the amount of water listed to make the slurry. Making the slurry with the cornstarch and pineapple will give you a definite Hawaiian feeling!

Stir Fry Teriyaki Marinade Use the exact same recipe except dont add the slurry to the sauce right away. You can marinate the meat in a small amount of the marinade minus the slurry for a minimum of 30 minutes. Then Youll Saute/Stir fry your vegetables and meats then add the rest of the marinade and cook until its just about ready. Right before serving it, youll add the slurry to thicken up the marinade.

Freezing And Slicing The Beef

If you bought pre-sliced beef, you can skip this step. But if you didnt, youll need to freeze and slice your beef before moving on.

Put your beef in the freezer for an hour or two before slicing it. This makes the beef a little firmer and easier to cut into thin slices.

When youre ready to slice, cut the beef against the grain. Try to keep your slices under ¼ inch thick to speed up the drying time later on.

What Ingredients Do You Need For Teriyaki Sauce

You only need five ingredients to make this homemade sauce. Heres the rundown:

  • Low-Sodium Soy Sauce Soy sauce adds color, lots of flavor, and seasoning to the sauce. Its salty and strong by itself, but when you mix it with the other ingredients, it tastes incredible.
  • Sugar Regular granulated sugar is all you need to make teriyaki sauce. It balances the salt from the soy sauce and helps to make the sauce sweet and glossy. Other forms of sugar work, too. Brown sugar, coconut sugar, and even honey will work. Swapping for other forms of sugar will affect the taste of the sauce slightly and can taste sweeter . As an example, we recently made this sauce with honey and found it much sweeter than when we make it with regular sugar. This isnt necessarily a bad thing, just something to keep in mind when substituting other ingredients.
  • Sake We dont cook too much with sake , but we love it when making homemade teriyaki. You dont need to break the bank when buying sake for this. Treat it the same as when using wine in cooking. Use something youd drink, but not something youd save for a special night. If you cannot find sake, there are some alternatives. Mirin is a sweeter version of sake. You can either swap it for the sake and leave the sugar amount as is or pull back on the amount of sugar slightly to accommodate the extra sweetness. Dry vermouth or dry sherry also work as a substitute.
