It all started with a feisty lady named Mrs. Wages who loved to put up food from her garden. She and her husband had a country store near Tupelo, Mississippi, way back in the early 50s that was a gathering spot for local farmers.
1960
A friend, Mr. Erskin Dacus of Dacus Drug Co., dropped by the store to inquire about a pickling lime recipe to add to a line of home canning products he was developing. Customers overheard the conversation and recommended Mrs. Wages recipe. Mr. Dacus tried her recipe and the rest is history! He bought her recipe on the spot and it became an instant hit.

Mrs. Wages includes original pickle mixes , vinegar, sealing wax, pickling lime, pickling salt, citric acid, fresh fruit preserver, and Home-Jell Fruit Pectin.

Tomatoes: A Family Tradition
Growing tomatoes is a family tradition of sorts for us. Our Uncle Larry is arguably the best gardener ever. He always has an immaculate garden, and has studied and taught about gardening. How To Make And Can Homemade Spaghetti Sauce From Fresh Tomatoes

Making and canning your own spaghetti sauce issomething families remember years later. No store bought spaghetti saucecompares with the taste of that made from your own tomatoes from your garden orfresh-picked from a local farm! In the middle of the winter, you can makea meal with your spaghetti sauce and taste the summer flavor of fresh tomatoes. This recipe is for spaghetti sauce WITHOUT meat, so you can use a water bath canner or a pressure canner. The USDA does not have a recipe for spaghetti sauce for a water bath canner , but both the prepackage season mixes and the Ball Blue book do have a water bath canner version. The homemade version , which they call “seasoned tomato sauce” requires the addition of lemon juice to help acidify it.

Pressure Canning Spaghetti Sauce
For a weighted-gauge pressure canner, you will want to process 20 minutes for pint jars and 25 minutes for quart jars. Process at 10 lb for altitudes between 0-1,000 feet. Hello, i just made pasta sauce using mrs wages pasta sauce and i was ready to do quarts, but noticed there was a process time of 40 minutes for pints, has anyone done quarts? and how much longer would i process it?thanks

I’m sorry but you can’t safely increase the jar size in any recipe. You’d just be guessing at the processing time. Smaller jars done for the same recommended times yes, larger ones no.
We use Mrs. Wages sauce mixes here sometimes and the reason for restricting it to pints is the amount of citric acid included in the mix – the amount is for pint sized jars only – so long term stability couldn’t be guaranteed.
Can it in pints and then just open 2 jars when you need it. )

Mix Or Your Own Seasoning

Either works equally well. The spaghetti sauce mix for canning has the advantage of being tested and VERY easy to use. It’s basically a type of corn starch, onion powder, salt and seasoning. It doesn’t have any preservative to improve the canning, so the advantage is just that it is easier and safe. Remember, this recipe is for NO meat!

Water Bath Canning Spaghetti Sauce
This particular recipe for canned spaghetti sauce hasnt been officially tested for water-bath canning. However, after MUCH research, weve found that if you add lemon juice to the jars this recipe is acidic enough for canning. Tomatoes are in the gray area of having enough acidity, so they might be just fine on their own. But adding a bit of lemon juice ensures their acidity. If youre still worried, you can pressure can them or add more lemon juice or red wine vinegar.

Copycat Recipe For Mrs Wages Spaghetti Sauce
Does anyone have a mimic or a copycat recipe for the spices in Mrs. Wages Spaghetti Sauce? I love the taste of it, but I hate buying mainly salt. All the pre-mix spices seem to be about 90% salt and filler and about 10% of what you actually want to buy. Plus, we prefer to use sea salt in the stuff we are going to eat fresh.
Although I am violating the secret Italian code, the secret to a great tomato sauce is pork.

Pork is good sweet meat. I like it. But, my wife prefers a no-meat sauce. We’ve tried a lot of spaghetti sauce recipes, but just can’t quite get that really rich taste of that Mrs’ Wages spice mix. I know this will sound like heresy to all my meat loving buddies out there. But…. I actually like Mrs. Wages Sauce better than sauces with meat. GASP!It’s the spice mix combo for which I search my carnivorous friends.

Absolutely! This spaghetti sauce recipe freezes beautifully and lasts for several months in freezer bags or freezer-safe containers. Just make sure to thaw the sauce completely in the refrigerator before re-heating. If you DO want to add more random ingredients like ground beef or extra veggies, freezing is a good way to go if you are worried about acidity levels.
