If you live in California or New Mexico, you can always find a good chili to satisfy your taste buds. California chiles are typically cooler than those grown in New Mexico. Cayenne peppers, which are also known as hot dogs, can reach temperatures of 700 to 4,000 Scoville degrees Fahrenheit.

In The Mood For Something Else

  • DriedChile Pods – Available at most grocery stores in the Hispanic section. Look for dried chili pods in clear packaging and hanging by their label.
  • Red Chile Powder – You can find this at most grocery stores in the Hispanic section as well. This powder is different then the chili powder you find in the seasoning section. This also is typically sold in a clear package hanging by the label. I do not recommend using powder with this recipe.
  • FrozenRed Chiles – The frozen red chilies are in a tub at the end of the vegetable section in my store. You might have to search in your store to find them. But if you can find them, it is worth it. These chiles are close to fresh, roasted, and peeled, and are super easy to make a sauce with.
  • FreshRed Chiles* – In some of the larger cities in the west, you can find roadside stands where the chiles are being fire-roasted on site. It is fun to watch the roasting, and the flavor is amazing. * Fresh chiles are not pictured due to lack of availability in most places.

If you cannot find chiles where you live, you can purchase dried chiles or chile powder online.

History Of Chile In The Southwest

The affinity for chile pre-dates European arrival. The ancient Puebloans grew peppers and each strain grows best in its heritage soil. For example, Acoma Pueblo chile is mild, with a flavorful pungency, Isleta chile develops a sweet, fruity flavor as it turns red, and the Zia chile becomes bitter-sweet as it ripens. Ancient Puebloan varieties should not be confused with the chile grown in Pueblo, Colorado, because the two are not related. Whereas Pueblo, Colorado is well known for a variety of the guajillo chile, also known as the mirasol pepper, they are genetically distinct from New Mexico chile.

Appreciation for the culinary versatility of this staple ingredient extends beyond our borders. Every year when the chile starts to ripen, visitors from throughout the country make autumn pilgrimages to agricultural communities throughout the state, with Hatch being the most well-known chile destination. Hatch has done a brilliant job marketing themselves as the chile capital of the world, with many people perceiving Hatch as a variety rather than a place. That is to say farmers in Hatch grow numerous strains of chile, from mild to wild. However, New Mexicos chile crops extend beyond Hatch. What Are Ancho Chiles

An ancho chile is a poblano pepper that’s been allowed to stay on the vine until it’s turned red. After it’s harvested, it’s dried and turns a deep red/purple/brown. Anchos are commonly used in Mexican, Tex-Mex, and Southwestern cuisine.

Their color and their mild heat make them useful in sauces like red chile sauce. For an added dimension to the flavor of this recipe, using half guajillo chilies will bring in some fruity notes that complement the anchos’ earthy notes.

Although ancho and pasilla chile peppers are two different species of pepper, in Michoacan, Mexico, anchos are called pasillas. Parts of the U.S. where Michoacans immigrated sometimes interchange the terms pasilla and ancho.

First up, youll need to prepare your chiles. Simply tear off the stem and shake out the seeds. Then reach inside the chile pod to remove additional seeds off and pull off dried veins.

Now youll need to soften the dried chiles. Place your chiles in a pot and barely cover with water. Bring the water to a boil, then drop the heat to a simmer. Simmer the chiles until soft, about 20 minutes, turning halfway.

Drain your chiles and allow them to cool. If you dont, the steam can build up in your blender and be dangerous!

TIP: Work in batches so as not to overwhelm your blender.

Add about half of your chiles to the blender with half the water, garlic, flour and salt. Blend until smooth. Tip into a conical strainer and use a pestle, spoon or spatula to push it through. Continue blending and straining until complete.

TIP: If you dont have a conical strainer a mesh strainer will work too.

TIP: Have a high-powered blender? Straining the sauce might not be necessary, but I still do.
