My Favorite Hot Sauces

In Louisiana anything that can be put on a grill is called barbecue, from fish to crawfish to nutria . The first bottled hot sauces came out of Louisiana, home of Tabasco Sauce and in Louisiana, hot sauce goes on everything. But the classic New Orleans Barbecue Shrimp is served in a buttery hot sauce that is used to pan cook shrimp. It is served on rice or reaches its peak in a traditional sandwich called a po-boy. But it can also be used on andouille or other sausages, pork chops, pulled pork, or chicken.

What is sauce for the goose may be sauce for the gander but is not necessarily sauce for the chicken, the duck, the turkey or the guinea hen.

Benchmark Barbecue Sauces And How To Make Them

By: Meathead

Much of a nations culture resides in its cuisine. Although grilling and smoking meat has been done since before recorded time on all continents, although every cuisine has its mother sauces, barbecue sauces are distinctly American.

To most Americans, barbecue sauce is red, sweet, and smoky and it comes from a shelf near the ketchup. To those who travel and would rather lunch in back of a rickety shack under a shade tree than under the golden arches, barbecue sauce comes in a rainbow of colors and flavors, and most are tied to the area of origin and its ethnic roots. Barbecue sauce is thick with American history and culture.

Just look at the Carolinas for proof. In the eastern half of North Carolina barbecue sauce is practically transparent with cayenne pepper flakes that flurry in the bottle like a snow globe. In western half of the state it is pink going on garnet from tomato sauce. In much of South Carolina it is yellow from mustard, popular with German settlers.

To add a patriotic flair to your next cookout, serve your guests a choice of several sauces from around the nation.

How To Make The Gordon Ramsay Grilled Ribeye Recipe

Coffee ancho chile rub

  • 1 tablespoon of broad chilli powder
  • 2 tablespoons of finely ground coffee or espresso
  • 2 teaspoons of smoked paprika
  • 3 tablespoons of brown sugar
  • 1 teaspoon mustard powder
  • 2 tablespoons of Aleppo pepper
  • 1 teaspoon dried ginger
  • 1 teaspoon of freshly ground black pepper

For the ribeye, cover the steak generously with 2-3 tablespoons of the rub on each side. Let the steaks reach room temperature for at least 30 minutes to an hour.

Plus, extra rub can be stored in an airtight container for up to a month. Although this rub is intended for the steaks, it can also be used for other proteins.

The steaks are cooked on the grill, in a cast iron pan, or other preferred method. A good char on the steaks will help seal all of that flavor.

Its time for some new adventure. Dont miss the premiere of Uncharted starring Gordon Ramsay on May 31st at 9/8 a.m. on National Geographic.

National Geographic May 31, 2021

While these steaks are delicious on their own, in the Gordon Ramsay Uncharted episode they are served with grilled nopales chimichurri. The nopales are combined with herbs, onions, garlic and olive oil to make chimichurri. The combination of the brightness of the Chimichurri and the strong flavors of the steak is perfection.

Rodney Scotts Bbq Sauce Recipe Secrets

Dont be afraid to go a little citrusy in your mop sauce, Scott said in a Garden & Gun interview. Lemons help break down any toughness in the meat, he says. Just strain the lemons out before you bottle the sauce or use it.

Scott warns, however, to stick with white vinegar instead of apple cider vinegar when using citrus, noting that the combination gets a little too funky with apple cider vinegar.

Youll note that Rodney Scotts BBQ sauce recipe as written below sticks to the baseline of the basic vinegar sauce recipe. However, looking at the photo above, we can all agree that the restaurant recipe might contain a little more.

Scott even alludes to that fact in the Garden & Gun article, entitled Rodney Scotts Barbecue Sauce Secrets.

The three must-grab spices that you should have in your cabinet are cayenne, paprika, and dark chile powder, Scott says. Those add head and nuance. Additionally, black pepper gives bite, and pepper flakes build both heat and flavor.

Youll note that paprika and dark chili powder are absent from the recipe he provided to the Today Show, but hes pretty clear those should be some of the first ingredients you grab from your spice rack when making a mop sauce.

Barbecue Sauces Designed For Vegetables

Doing a Barbecue Right: Butterflied Leg of Lamb | The New York Times

The vegan barbecue chef Kerry Fitzmaurice now sells barbecue and hot sauces with grilled vegetables in mind.

By Florence Fabricant

With her plans for a vegan barbecue restaurant in Greenwich Village on hold since last year, Kerry Fitzmaurice pivoted and put her expertise in a bottle, introducing Pure Grit BBQ: The BBQ Kit, designed specifically for vegetables and plant-based proteins instead of the usual meats. Its a mild, vinegar-based sauce, with a tomato and pepper component designed, as she puts it, so it doesnt overpower vegetables. You can also use it as a salad dressing with sturdy ingredients like kale. And if youd like more fire, there is a hot sauce, too.

Buy A Benchmark: Scotts Barbecue Sauce From Goldsboro Nc

Scotts Family Barbecue Sauce goes back to 1917 when Adam Scott first got into the barbecue business in Goldsboro. A local minister, Scott said the exact ingredients in the sauce were revealed to him in a dream. That original sauce recipe was served on Scotts barbecue for nearly 30 years, until 1946 when Adams son, A. Martel Scott, Sr., spiced up the mixture a bit. Interestingly, they dont have a restaurant, just a sauce business. Today Scotts is nothing but vinegar, water, salt, peppers, and a few other spices . Tangy from the vinegar, spicy, but not scorchin, this is the kind of stuff that made North Carolina barbecue famous. You will not like it straight from the bottle. Sprinkle it on pulled pork and then tell me what you think. It is a perfect example of 1 + 1 = 4.

Los Angeles Rams Blood Orange And Mint Mocktail/cocktail

Barbecue Sauces Designed for Vegetables

Los Angeles Rams blood orange and mint mocktail/cocktail.

Los Angeles is heating up with football fans ready to cheer on their team. But did you also know that the California citrus season is in full swing? Lemons, limes, grapefruit and every type of orange you can think of. Most exciting is finding fresh blood oranges. Not only is the blood-red/orange color potent and powerful but the sweet, low acid flavor makes it the ideal citrus for drinks.

Here I make a simple syrup and simmer it up with blood orange juice . The syrup can be made days ahead of time.

Fresh mint is muddled in this mocktail/cocktail. The mint leaves are muddled in a serving glass with the syrup or light rum, vodka, or tequila, then seltzer is added and finally ice for a refreshing cocktail or mocktail . This recipe can easily be doubled.

serves 4

  • Fresh pomegranate seeds, optional

  • Make the simple syrup: In a medium saucepan mix the sugar and water together over high heat. Bring to a boil, reduce the heat and simmer for 5 minutes. Add the orange juice and simmer for 5 additional minutes.
  • Remove from the heat and cool. Place in a covered jar in the refrigerator for up to 5 days.

    Rodney Scotts Bbq Sauce Recipe

Listen to this Destination: BBQ article.

The long-kept secret is out! Here is Rodney Scotts BBQ sauce recipe direct from famed SC BBQ pitmaster Rodney Scott himself.

This is the mop sauce that he seasons the hog with on the turn and puts in bottles on the table.

Rodney Scotts BBQ sauce recipe has long been a secret, but in a recent appearance on the Today Show, Scott shared the recipe for Rodneys Sauce, the magic elixir that helped make him a James Beard award winner.

Know When Your Ribs Are Done

Pork ribs come with their own version of the pop-up thermometer that signals that a turkey is done: The meat shrinks back from the ends of the bones. When you see a quarter- to a half-inch of clean bone at the end of each rib, it is ready. You should be able to pull the individual ribs apart with your fingers. The meat should resist, but just a little.

Many Americans are accustomed to meat that falls off the bones a style that may have begun with the doleful practice of boiling or steaming ribs before grilling. The notion of soft ribs took root in our collective culinary consciousness.

Root out that idea now. Yes, ribs should be tender, but they should definitely retain a little chew. Thats why we have teeth.

    Barbecue In The United States

Nick Mangold – Seventy Four BBQ Sauce – Former New York Jets Center

    A Southern Barbecue

In the United States, barbecue refers to a technique of cooking meat outdoors over a fire often this is called pit barbecue, and the facility for cooking it is the barbecue pit. This form of cooking adds a distinctive smoky taste to the meat barbecue sauce, while a common accompaniment, is not required for many styles.

Often the proprietors of Southern-style barbecue establishments in other areas originate from the South. In the South, barbecue is more than just a style of cooking, but a subculture with wide variation between regions, and fierce rivalry for titles at barbecue competitions.

    Is That The Whole Story

It is also obvious in photos that his original sauce is rich and deeply red. That is not going to be what you get using the Today Show recipe. So we have added a few notes to the recipe.

Just take a look at his mop as he mops some ribs with his sauce:

    , photographer.

In his defense, Rodney Scotts BBQ sauce recipe as provided to the Today Show is intended for use on ribs, so maybe, just maybe, that is his actual rib sauce recipe, but we have our doubts given the depth of color in the photo above.

In fact, we have long been confident Scott also uses Accent as one of the ingredients in his mop sauce recipe, but there has never been any official confirmation.

That said, he did note on the Today Show that MSG is a product he uses. It may be a controversial ingredient, Scott wrote, but I unapologetically use MSG in my seasoning rub. It is a flavor maker!

In fact, given what he says in the Garden & Gun article, were pretty sure the Today Show recipe is not the whole story.

One last tip for a backyard barbecue, Scott said. Make sure youve got lots of alcohol and great musicand tell plenty of lies.

Whatever the case, Rodney Scotts BBQ sauce recipe is one were sure youre going to enjoy.
