How To Peel And Dice Butternut Squash

Some markets carry peeled and cut butternut squash. This is a great time-saver but I find that it can be pretty expensive. So heres an easy way to do it at home.

Use a vegetable peeler to remove the skin. A Y shaped peeler works best.

Peel down to the bright orange flesh

Peel the bottom

Trim the top and bottom to create flat surfaces

Cut in half lengthwise, top to bottom

Use a spoon to scoop out the seeds. The seed pod is slimy, so scrape all the way down to the firm flesh and it will come out much easier.

This was a 1 1/4 lb squash , so I just cut off the rounded part on the bottom. The remaining large piece was about 1 thick. If you have a larger squash you may want to cut it in half to make the slabs about 1 thick.

Cut into approximately 1 strips then cut across into cubes.

Creamy Pasta With Chicken Sausage And Broccoli

This easy Parmesan cream sauce is a little lighter than Alfredo, and it pairs especially well with chicken sausage . Add some garlic for a bit more kick as well.

If you plan on having leftovers, you may want to make some extra sauce and reserve a bit to mix in the next day, as the pasta will absorb a lot of it overnight.

Why You Need This Dairy Free Alfredo Sauce In Your Life

No Tomato, Low Acid Pasta Sauce

I think creamy pastas might be one of the first things you miss when you switch to a dairy free diet. Personally, the only thing I miss more is cheese itself.

For a while, we were making lactose free Alfredo sauce which is really just a creamy, garlic sauce using lactose-free milk. When we went fully dairy free, I just tried not to think about it, but, eventually, I found myself craving creamy, garlicky pasta.

I made a few different versions with store-bought vegan cream cheese. They were definitely good, but since I try really hard not to rely solely on those kinds of products, I didnt want to make it very often.

It wasnt until I started experimenting with cashew cream and my dairy free queso, that I realized the creamy base I was developing would work equally well as a pasta sauce. And, now I have a million different creamy pasta recipe ideas floating around in my head.

This homemade garlic sauce contains a little vegan butter, a lot of fresh garlic, plant-based milk, spices and a little cornstarch to thicken. You can use any other starch of choice, for example, arrowroot flour/starch, or potato starch. Tapioca flour or regular flour should be fine too.

I also love adding a little lemon juice which adds a nice refreshing kick! I once replaced a part of the dairy-free milk with white wine which turned out to be a success. Very flavorful and delicious! But this is of course optional. If you decide to give the wine a try, then I would recommend leaving out the lemon juice.

This pasta dish is not as greasy as pasta Aglio e Olio, yet its creamy like pasta carbonara without containing egg yolks, heavy cream, or Parmesan cheese.

Alfredo Sauce With Cashews

Isnt it great that we live in a time when we can create dishes in so many ways? This recipe is vegan-friendly and gluten-free, making it an ideal sauce that can easily feed a crowd. You will need two and a half cups of cashews and two cups of unsweetened cashew or oat milk to make eight servings of this sauce. Other ingredients you will need include dairy-free parmesan cheese, garlic cloves, lemon juice, Italian seasoning, onion powder, salt, and black pepper to finish off the alfredo. Using a high-powered blender will crush the nuts efficiently. However, with a food processor, soaking the cashews overnight is the preferred method in this recipe. Alternatively, you can boil the cashews for 30 minutes to soften them up.

You may choose to serve it with some noodles, but consider making a batch of stuffed mushrooms instead if you want to use this vegan-friendly alfredo sauce in a more inventive way. At any rate, this sauce can last in an air-tight container in the fridge for up to one week.

Spaghettini With Oil And Garlice

Tip: Hummus makes pasta creamy without dairy

Yield: 6 servings. Adapted from Lidias Favorite Recipes by Lidia Matticchio Bastianich and Tanya Bastianich Manuali

1 pound spaghettini, vermicelli or thin spaghetti

5 tablespoons extra-virgin olive oil, divided

6 to 8 garlic cloves, peeled and sliced

1/2 teaspoon crushed red pepper, or more to taste

1/2 cup chopped fresh Italian parsley

1 cup freshly grated Grana Padano or Parmigiano-Reggiano cheese, optional

Bring a pot of salted water to a boil over high heat. Stir the spaghettini into the boiling water. Return to a boil, stirring frequently, and cook, semi-covered, until the pasta is tender but still very firm, about 6 minutes for spaghettini or vermicelli and 7 minutes for thin spaghetti.

Meanwhile, heat 3 tablespoons of the oil in a large skillet over medium heat. Add the garlic and cook, shaking the skillet, until pale golden, about 2 minutes. Remove from the heat, and add the crushed red pepper. Ladle about 11/2 cups of the pasta-cooking water into the sauce, then add the parsley, the remaining 2 tablespoons of olive oil and salt to taste, and bring to a boil.

Fish out the pasta with a large wire skimmer or tongs and drop it directly into the sauce in the skillet. Bring the sauce and pasta to a simmer, tossing to coat pasta with sauce. Cook about 1 minute. Remove the skillet from the heat and toss in the grated cheese, if using. Check the seasoning, adding salt and crushed red pepper if necessary. Serve immediately in warm bowls.

I’ve been updating some older blog posts and came across the Tomato Cream Sauce recipe I shared with you back in 2013. I love love loved that recipe, but haven’t made it in years because I so rarely add cream to my recipes. For a few minutes, I thought of turning that post into a Throw Back Thursday post, but I still didn’t want to pour 2 cups of cream into my pasta sauce.

Note: If you’re down with cream, don’t hesitate to make the recipe!

Instead of remaking an old recipe, I thought I’d give it a fresh and healthy update instead. I’ve got a little trick for making things creamy. Can you guess what it is? Here, I’ll show you a picture instead

That’s right, cashews win again! Those little gems are the secret to making dairy-free everything as creamy as the real deal.

A Quick & Easy Pasta Sauce

Prepping and cooking the squash is a little time consuming, so I wanted the rest of the recipe to be quick and easy. I used dried herbs and spices to speed up the process. If you would like to use fresh ingredients, heres how to do it:

  • Sauté 1/4 c chopped onion for 5 minutes. Add 1-2 minced garlic cloves and cook , stirring for 1 minute.
  • Add to the blender along with a handful of fresh basil leaves, 1 Tbsp fresh oregano leaves and leaves from 2 sprigs of thyme.

In order to get a little tang like you would have with tomatoes, I include 2 tsps of lemon juice. I know that some low acid diets include lemons. You can also use lemon zest. This is the yellow outer layer of the skin and it has all the bright lemony flavor. If you need a quick tutorial on how to zest a lemon, check out this post. Leave out the lemon out if you do not tolerate it.

Ingredients For The Crispy Garlic Breadcrumbs:

  • Olive Oil similar to the sauce, you can substitute a different fat if youd like. But, I prefer the flavor of the olive oil.
  • Minced Garlic Either fresh cloves that you mince or crush yourself, or you can use the pre-minced stuff in the jar.
  • Panko Breadcrumbs You can use regular bread crumbs as well if thats what you have on hand. I like the extra crispiness of panko breadcrumbs.

Whats In Nomato Sauce

The ingredients in this anti inflammatory recipe are wholesome and nourishing. You know REAL FOOD ingredients.

NOTE: This isnt the entire ingredient list just the key components. You can see the full list and amounts in the recipe card at the bottom of the post.

  • Beets You can use purple beets or golden beets. Nutritionally, they are equal. The difference is in the flavor, because purple beets have a sweeter flavor than the golden variety. Of course, the color of the sauce will be more of an orange-red color. But hey, you wont end up with purple fingers after peeling them!Beetroot is an antioxidant-rich vegetable. Its full of nutrients, including:
  • Vitamins B9 and C
  • Manganese
  • Among other things, beets may help reduce inflammation and improve digestion!
  • Carrots- The beta-carotene and Vitamin A in carrots helps to fight oxidative stress on your eyes. Plus, this is another antioxidant veggie. Woo-hoo TWO FOR TWO!
  • Pumpkin puree If you prefer another squash, butternut, acorn, feel free to make homemade puree. Its as easy as boiling or steaming the fresh squash, then pureeing it with a stick blender, or tossing it into a high speed blender for a couple of minutes.
  • Garlic- There are plenty of nutritional benefits to be found here! Garlic is a super defense against bacteria and viruses. Supposedly, itll chase away a vampire or two as well. Or, so Ive heard.

What Can You Substitute For Milk In Alfredo Sauce

For this recipe, Ive used my favorite combination of dairy free milks: cashew cream and canned coconut milk. Normally I find the coconut milk to sweet, and the cashew cream a little nutty, but paired together, they mask each others non-dairy flavor.

They also make the creamiest base for dairy free Alfredo. With just a little garlic and some nutritional yeast, you wont believe there isnt cheese in this Alfredo sauce.
