How To Peel And Dice Butternut Squash

Some markets carry peeled and cut butternut squash. This is a great time-saver but I find that it can be pretty expensive. So heres an easy way to do it at home.

Use a vegetable peeler to remove the skin. A Y shaped peeler works best.

Peel down to the bright orange flesh

Peel the bottom

Trim the top and bottom to create flat surfaces

Cut in half lengthwise, top to bottom

Use a spoon to scoop out the seeds. The seed pod is slimy, so scrape all the way down to the firm flesh and it will come out much easier.

This was a 1 1/4 lb squash , so I just cut off the rounded part on the bottom. The remaining large piece was about 1 thick. If you have a larger squash you may want to cut it in half to make the slabs about 1 thick.

Cut into approximately 1 strips then cut across into cubes.

Creamy Pasta With Chicken Sausage And Broccoli

Isnt it great that we live in a time when we can create dishes in so many ways? This recipe is vegan-friendly and gluten-free, making it an ideal sauce that can easily feed a crowd. You will need two and a half cups of cashews and two cups of unsweetened cashew or oat milk to make eight servings of this sauce. Other ingredients you will need include dairy-free parmesan cheese, garlic cloves, lemon juice, Italian seasoning, onion powder, salt, and black pepper to finish off the alfredo. Using a high-powered blender will crush the nuts efficiently. However, with a food processor, soaking the cashews overnight is the preferred method in this recipe. Alternatively, you can boil the cashews for 30 minutes to soften them up.

You may choose to serve it with some noodles, but consider making a batch of stuffed mushrooms instead if you want to use this vegan-friendly alfredo sauce in a more inventive way. At any rate, this sauce can last in an air-tight container in the fridge for up to one week.

1 pound spaghettini, vermicelli or thin spaghetti

5 tablespoons extra-virgin olive oil, divided

6 to 8 garlic cloves, peeled and sliced

Bring a pot of salted water to a boil over high heat. Stir the spaghettini into the boiling water. Return to a boil, stirring frequently, and cook, semi-covered, until the pasta is tender but still very firm, about 6 minutes for spaghettini or vermicelli and 7 minutes for thin spaghetti.

Meanwhile, heat 3 tablespoons of the oil in a large skillet over medium heat. Add the garlic and cook, shaking the skillet, until pale golden, about 2 minutes. Remove from the heat, and add the crushed red pepper. Ladle about 11/2 cups of the pasta-cooking water into the sauce, then add the parsley, the remaining 2 tablespoons of olive oil and salt to taste, and bring to a boil.

Fish out the pasta with a large wire skimmer or tongs and drop it directly into the sauce in the skillet. Bring the sauce and pasta to a simmer, tossing to coat pasta with sauce. Cook about 1 minute. Remove the skillet from the heat and toss in the grated cheese, if using. Check the seasoning, adding salt and crushed red pepper if necessary. Serve immediately in warm bowls.

This crazy delicious Dairy Free Tomato Cream Sauce is truly the creamiest pasta sauce around. It tastes like it’s made with a carton of cream, but it is 100% dairy free. Even if you eat cheese you will LOVE this healthy recipe! It’s also paleo + gluten-free + Whole30 compliant and can easily be made vegan.

Here’s what you need to know: I’m literally doing a happy dance I’m so excited to share this recipe with you. It’s embarrassing, but it’s true.

I’ve been updating some older blog posts and came across the Tomato Cream Sauce recipe I shared with you back in 2013. I love love loved that recipe, but haven’t made it in years because I so rarely add cream to my recipes. For a few minutes, I thought of turning that post into a Throw Back Thursday post, but I still didn’t want to pour 2 cups of cream into my pasta sauce.

Instead of remaking an old recipe, I thought I’d give it a fresh and healthy update instead. I’ve got a little trick for making things creamy. Can you guess what it is? Here, I’ll show you a picture instead

They’re what I used in the Not Yo Mama’s Pork Chops and Mushroom Soup recipe. They also showed up in the Cashew Butter Chicken and have been used in nearly every vegan ice cream recipe on the blog.

A Quick & Easy Pasta Sauce

Prepping and cooking the squash is a little time consuming, so I wanted the rest of the recipe to be quick and easy. I used dried herbs and spices to speed up the process. If you would like to use fresh ingredients, heres how to do it:

  • Sauté 1/4 c chopped onion for 5 minutes. Add 1-2 minced garlic cloves and cook , stirring for 1 minute.
  • Add to the blender along with a handful of fresh basil leaves, 1 Tbsp fresh oregano leaves and leaves from 2 sprigs of thyme.

In order to get a little tang like you would have with tomatoes, I include 2 tsps of lemon juice. I know that some low acid diets include lemons. You can also use lemon zest. Leave out the lemon out if you do not tolerate it.

Cheesy Cashew Carrot Sauce

Every vegan or vegetarian needs a cheesy sauce in their back pocket for those sudden mac & cheese cravings, and this Cheesy Cashew Carrot Sauce might be your new go-to sauce. The secret, Becky says, is using cashew butter instead of raw, soaked cashews for a truly creamy sauce. Carrots for color, nooch for flavor, and some vegan bacon and peas too!

  • Olive Oil similar to the sauce, you can substitute a different fat if youd like. But, I prefer the flavor of the olive oil.
  • Minced Garlic Either fresh cloves that you mince or crush yourself, or you can use the pre-minced stuff in the jar.
  • Panko Breadcrumbs You can use regular bread crumbs as well if thats what you have on hand. I like the extra crispiness of panko breadcrumbs.

What Can You Substitute For Milk In Alfredo Sauce

For this recipe, Ive used my favorite combination of dairy free milks: cashew cream and canned coconut milk. Normally I find the coconut milk to sweet, and the cashew cream a little nutty, but paired together, they mask each others non-dairy flavor.

They also make the creamiest base for dairy free Alfredo. With just a little garlic and some nutritional yeast, you wont believe there isnt cheese in this Alfredo sauce.
