Vegan Pickled Herring In Cream Sauce

House Pickled Herring with Cream Sauce and Onions

Moin moin ! After we recently uploaded a vegan smoked salmon alternative made from carrots to the blog, today a vegan pickled herring in cream sauce made from eggplants follows. Sounds strange at first, but it works really well. Because peeled and cooked eggplant has a relatively soft, almost slippery, but still chewy consistency that comes very close to the fish fillet. Once again, the good old algae is responsible for the fishy taste in the eggplant.

We had made vegan cream herring years ago. We still knew the trick with the eggplants. But what else is in a herring in cream sauce? Phew, good question. But the recipe should be as authentic as possible. Thats why we secretly sneaked to the refrigerated shelf with the fish products in the supermarket to study the lists of ingredients. We probably looked paranoid over our shoulders every now and then. After all, as a vegan you have a good reputation to lose.

But afterwards we were smarter. In addition to herring, the industrially manufactured herring fillets in cream sauce usually consist of cream, yogurt, mayonnaise , onion, cucumber, apple and a few spices. And thats exactly what we used to mix our cream sauce for the vegan herring. We used the fully plant based alternatives, of course. In any case, we are more than satisfied with the result. And now were going to get another plate.

What Drink Goes Well With Pickled Herring

Eating Pickled Herring in a Wine Sauce

Heres an important question: What wine do you drink with pickled herring?

The Swedes pair it with Akvavit. Typical seafood wines like Muscadet or Chablis just seem wrong. There is too much acid, and the flavors would grate on each other. How about Blanc de Blancs Champagne? It would be overwhelmed.

Fino or Manzanilla Sherry work beautifully with pickled herring. The flavors are bold enough not to be overwhelmed, and briny enough to work with the fish. The oxidized nature of the wine somehow works with the pickle. You should try them.

How To Eat Sour Herring

Pickled herring on steroids has an even bolder flavor. Sour herring is made from Baltic herring which is a small-sized subspecies caught in the brackish waters of the Baltic Sea.

Sour herring is brined for at least six months, and enough salt is used to prevent actual rotting. Sour herring has its roots in northern Sweden, where it has been consumed since the 16th century.

According to Swedens own official government website, sour herring has a strong, pungent smell of rotting fish and should be opened outdoors. Its usually served with food which is more decidedly bland because of its intense flavor, such as a simple buttered slice of bread or boiled potatoes.

Its aroma is difficult to overcome. However, it tastes better than it smells.

Polish Herring In Sour Cream

I know youre already thinking this cant work I admit, it seems this one is for more adventurous eaters, but if you like fish, you will like this rendition of a very under-appreciated piece of fish.

Poles eat A LOT of herring. I would be willing to bet, that there is some kind of herring dish in every Poles fridge at any given time. Its like the Bubba thing with shrimp in Forest Gump, only with herring. Herring in oil, pickled herring, salted herring, herring in sour cream, herring roll-ups, herring in onions, herring salad you get the point.

This particular recipe is always served for Christmasin my home, and a few times throughout the year. The combination of hot potatoes and cold, sweet and crunchy mixture of onion, apple and salty, fishy taste of herring. Im a huge fan.

The proper way of making this dish is with salted filets, but I was not able to find it here, so I used pickled herring in wine sauce. The salted herring is made by curing in salt only. Salt cooks it and its then stored in oil. The process also softens the fish bones, so no need to worry about deboning. Pickled herring on the other hand is preserved with vinegar and spices, therefore the two have slightly different taste. If you can find the salted kind, or you have time to have it delivered, Id suggest to go with it. All you have to do after opening the container, is patting them dry with a paper towel.
