How To Make It
As all Italian or Italian-inspired recipes this one is extremely easy. The creamy and slightly sweet tasting vodka sauce is what makes the dish. I also added shrimp to mine but it is optional.
We start by gently sautéing diced onions or shallots in olive oil, then adding garlic and herbs. The next step is where the vodka comes in. Its important to deglaze the hot pan with some vodka to release the flavour!
The rest is straightforward. In go crushed tomatoes, then we wait a bit while the sauce is simmering and in the last step we hit it with some heavy creamy, which gives the sauce a pleasant creaminess and that distinct orange colour.
Shrimp Penne Alla Vodka Sauce
Quite a while ago I did a post on Penne with Vodka Sauce. Its a tasty but time consuming recipe involving oven baking the sauce for quite a while. This vodka sauce is similar but with no oven time. Just reduce the sauce for a while on the stovetop. Much easier.
Vodka seems like an odd partner to tomato sauce, but the alcohol in the vodka becomes an emulsifier. It holds the acids and the oils together and the result is a creamy smooth taste.
The shrimp in this recipe pairs well with the richness of the sauce. And the shrimp is so easy to cook right in the sauce. You should use pretty big shrimp20 to 30 shrimp per pound size. The sweetness of the shrimp combined with the smooth tasting sauce is what makes this a super dinner.

At the same time that I was making our dinner, MJBakesaLot.com, was baking bread to have with our meal. MaryJo sliced and buttered some of her bread, and I toasted it on the stovetop in a cast iron griddle. The combination of the shrimp, pasta and bread was amazing.

Can I use any other pasta instead of penne?
Use any other pasta in place of penne such as fusilli, ziti, rigatoni, mostaccioli or farfelle. Even linguini or spaghetti will work.
Is there any alcohol content in this chicken pasta vodka sauce?
Yes. Some of the alcohol is cooked off when the sauce is simmered, but some of the alcohol is still retained.
Do I have to use vodka?
If you are making a penne vodka with chicken, then yes, you will need to use vodka. The acidic flavor of vodka enhances the flavor of tomato. You can replace the vodka with water to make it kid friendly.

Important: How Much Vodka To Use
When adding vodka to this sauce, less is more.
The role that vodka plays in this recipe is solely to enhance the flavors of the other ingredients. If you add too much, it will create a bitter taste. Just the right amount will bring out the sweetness of the tomatoes and cream, in a very appetizing way.
3-4 tablespoons is all you need.
Harold McGee, an expert on food chemistry explains:at very low concentrations,around 1% or less, alcohol actually enhances the release of fruity esters and other aroma molecules into the air.
Its also very important to let the vodka fully reduce. Literally, until its almost nothing.

Is Pink Sauce And Vodka Sauce The Same
Almost, but not quite.
A pink sauce is typically a tomato sauce with cream in it.
A vodka sauce also has the tomato sauce and cream, but it also uses vodka.
The vodka burns off so it is safe to serve for kids. If desired, you can skip it altogether however the flavor does change a little and lose some of its brightness.
If skipping vodka, I recommend adding a very small amount of lemon juice . Not so much that it tastes like lemon, but just enough to lighten it up.
