  • Add the breadcrumbs. If your finished sauce isnt thick enough, Lidia suggests adding one tablespoon of breadcrumbs to thicken it up. I ended up using the breadcrumbs and loved the final texture of the sauce. It was the perfect consistency and you couldnt tell the breadcrumbs were there.

The grated stuff in the can doesnt melt and can end up tasting grainy, and the pre-packaged shredded Parmesan wont melt as well either because of the coating they add to it to keep it from sticking together in the bag. Use freshly grated Parmesan for the very best results.
  • How to thicken a thin Alfredo sauce: Sauce not thick enough for you? Add a couple ounces of softened cream cheese to your sauce and it will give it a creamier texture and will help it thicken up a bit. You could also add a rou to the mixture. To do this, melt a couple of teaspoons of butter in a small saucepan, and add a couple teaspoons of flour. Cook until golden, then add to your simmering sauce and stir until its completely incorporated.
  • Let it simmer. Be sure to turn the heat down when you add the Parmesan cheese. You dont want to boil this sauce at all, just a simmer will do fine. Boiling can result in a broken sauce, and nobody likes that.

    In theory, yes you can boil frozen shrimp in a pot of hot water although I never recommend this method. To make shrimp Alfredo, its best to defrost the shrimp before cooking it.

    An easy and super quick way to defrost shrimp is to place it in a colander under cold running water, giving it a toss every 2-3 minutes. It takes about 10 minutes for the shrimp to thaw out completely.

    • You’ll need at least one large 22-ounce jar of Alfredo sauce. If you can’t find this larger size jar in your store, purchase two smaller jars and measure out about 2 ½ cups of sauce total. One smaller jar won’t be quite enough.
    • If using larger shrimp, they will require a couple of extra minutes in the oven. Plan accordingly and add them to the dish a little bit sooner than called for.
    • Total cooking time will vary depending on the type of pan that you use and your individual oven. Glass or ceramic baking dishes will take longer than metal pans, for instance.     • The shrimp. We used U21-25 shrimp for this recipe which means there are anywhere from 21-25 shrimp per pound. As with all of our shrimp recipes, we suggest adding baking soda to the shrimp as it helps the shrimp to remain plump while cooking. Be sure to not overcook the shrimp – they really just need a few minutes.
    • The pasta water. It is always a good rule of thumb to save pasta water, but even more so when making cream sauces which tend to dry out. Add just a ladle at a time and remix the pasta to bring it back to a creamy consistency.
    • The pasta. We used egg fettuccine here which is much lighter than semolina fettuccine. We think it pairs really well with the Alfredo sauce and shrimp. You can use regular fettuccine if you’d like, or pappardelle would also be a great choice.

  • Cook the Pasta: Bring salted water to a boil and cook the pasta according to package directions. Cook the pasta until al dente and then drain, reserving some of the cooking water.
  • Cook the Shrimp: While the pasta is cooking, season the shrimp with salt and pepper to taste. Melt some of the butter in a large skillet and cook the shrimp for about 2-3 minutes per side. Remove the shrimp from the skillet and set aside. Remember that shrimp cooks fast! Dont over cook it.
  • Make the Sauce: In the same skillet, melt the remaining butter and cook the garlic until it becomes aromatic . Whisk in the heavy cream and the nutmeg and simmer for a few minutes. The sauce will thicken a bit. Turn the heat to low and add the Parmesan cheese stirring constantly until the cheese melts. Season with salt and pepper to taste and return the shrimp to the skillet.
