When I Was Growing Up My Mom Loved To Elevate The Canned Cranberry Sauce She Served With Roast Chicken Potatoes And Of Course Thanksgiving Turkey

  • Wash the cranberries. Rinse the cranberries in cool water and remove any stems or soft berries.
  • Cook the cranberry sauce. Combine the cranberries with water and cook until soft. Then mash, add sugar, and boil for three minutes.
  • Heat and fill the jars. Ladle the hot sauce into clean, hot canning jars. If the jars are cold, they can crack.
  • Prep the jars. As with all canning recipes, you must remove air bubbles, wipe the lid, and apply canning lids and bands to each jar.
  • Process in a waterbath. This recipe requires 15 minutes of waterbath canning. After placing the jars into simmering water, cover the pot and bring the water to a boil. Start the timer only when the water reaches a boil.
  • Cool in the pot for 5 minutes. After the processing time completes, turn off the heat and remove the lid from the pot. Allow the jars to cool in the pot for five minutes. Again, use a timer for this step.

    Making homemade cranberry sauce with orange juice is as easy as boiling water!

    Add your cranberries, sugar, orange zest, orange juice, cinnamon, and salt to a large saucepan then bring to a boil.

    Once boiling, cook until the fresh cranberries break down into a sauce, roughly 10 minutes for a small batch.

    Process The Cranberry Sauce

    Using a jar lifter, carefully place the filled jars onto a rack in the pot of simmering water. The water should be about 180 degrees F.. The water should cover your jars by one to two inches.

    Cover the pot and bring the water to a rolling boil. When the water reaches the boil, start your timer. Pints and half-pints of cranberry sauce should be processed for 15 minutes.

    When the processing time completes, turn off the heat and remove the lid from the pot. Allow the jars to cool in the pot for five minutes.

    Lift the jars out of the canner with a can lifter and place on a dry towel. Allow the jars to cool for 24 hours. Do not touch the lids and bands during this time.

    However, be sure to use all-natural orange juice that is not made from concentrate and has no added sugar. If the juice you are using contains added sugars, eliminate or significantly decrease the amount of granulated sugar in the recipe.

    And as a side note, I prefer pulp-free juice for this recipe so you dont have to worry about the added texture of the pulp completing with the cranberries and orange zest.

    How To Make Easy Cranberry Sauce

    Start by zesting an orange. I recommend using a citrus zester to easily remove the orange peel. However be sure not to go too deep into the skin.

    You want to avoid getting the white pith that is underneath the peel as this surface produces a bitter taste. Once the zest has been removed, use a sharp knife and chop it into fine pieces.

    Although you want the flavor and texture of the zest, large pieces scattered throughout your sauce can be annoying.

    Once you have your zest ready, add it to a sauce pan. Then add the cranberries, sugar, orange juice, cinnamon, and salt.

    Stir and bring the mixture to a boil. Once the liquid begins to boil, reduce the heat to a simmer and cook for 10-15 minutes.

    How To Know When The Cranberry Sauce Is Done

    Store any leftovers in a covered container for up to 1 week in the refrigerator.

    Canning Time At The Factory

    Throughout the day, frozen cranberries are transported from the receiving facility to Ocean Sprays production facility, pictured here in Kenosha, Wis., where theyre inspected with a laser, to make sure each one meets the companys specifications for color and size.

    The berries are sent through a machine that removes their skins and seeds, producing a smooth purée. A second purée is made with what the company calls presscake, other reserved skins and seeds from Ocean Sprays other products, which contains the pectin that gives the sauce its gelatinous texture. Corn syrup is mixed in while making the purée. Once the mixtures are filtered and blended together, theyre sent off to be packaged in cans.

    Empty cans move down a conveyor, where theyre inspected for defects and rinsed before they travel to the filler, the device that fills the can. There, the hot cranberry sauce is poured into the can, and a lid is added. Random cans are inspected to make sure that theyve been filled to the proper height and that the sauce has the right texture. The sealed cans are then sent to a rotary can cooler to chill.

    The cans are coded, labeled, packed into cases, shrink-wrapped and put into pallets for shipment.
