Oven Roasted Tomato Sauce
I have used this recipe for years and it never fails. I usually make it in the summer as we usually have a vegetable garden and always end up with too many tomatoes, I then make in batches, for the freezer. I use a lot of garlic in this recipe but thats because we love it and the garlic sweetens in the roasting process. I have strained the sauce at times to remove the seeds. Though most people don’t mind tomato seeds.

If you want the sauce to be more of a smooth texture, you can puree a couple of tomatoes and cook along with the tomato sauce that we are going to prepare from scratch.
You can even process the entire tomato sauce in your food processor if you dont want any chunks of tomatoes at all, which will give you a very fine and smooth puree of sauce if that is what you like.

Tips For Making Crockpot Tomato Sauce
Select meaty, plumb or paste tomatoes for a thick and flavorful sauce. My favorites are Roma, San Marzano, Amish Paste, and Juliet. Paste tomatoes have very little water content. You can still use other types of tomatoes, but it will take longer for the sauce to thicken.
Cooking the tomatoes with the skins and seeds helps to thicken the sauce with the fruits natural pectin.
Run the cooked sauce through a food strainer to remove seeds and skins. After the sauce has simmered for a while and the ingredients have softened, run though a through a food strainer or food mill to remove skins, seeds, and to smooth out the sauce. If you dont mind the seeds and skins, you can use an immersion hand blender to smooth out your sauce.
Using fresh herbs: I like using fresh herbs because they are readily available from the garden during the summer, but dried herbs are better for slow cooking because the flavor doesnt diminish from cooking. If you are using fresh herbs, add extra at the end of the cooking time.
This homemade crockpot tomato sauce pairs perfectly with Ricotta Gnocchi, Homemade Egg Noodles, Zucchini Lasagna, spiralized veggies, spaghetti squash, and as a pizza topping. Helpful Hints For A Perfect Spaghetti Sauce:
1.) Pick the right crushed tomatoes.
There are so many ways to make sure your sauce can be perfect every time. You first need to start with the best quality crushed tomatoes. When you buy your crushed tomatoes, make sure that you are buying ones that do not have any seasoning added. Often times you can buy crushed tomatoes with basil and salt already added, which can throw off the taste when you take into account the spices I add to my tomatoes.
You also want to decide if you like a chunky or smooth spaghetti sauce. We prefer a smooth sauce, so I like to buy Tuttorosso or Hunts crushed tomatoes. If you prefer a chunky sauce, you may want to use whole tomatoes or buy a chunky canned crushed tomato.
2.) Add Ground Beef or Italian sausage.
You can easily add ground beef or Italian sausage to this sauce. We typically brown it before adding it to the sauce. Another thing that we like to add is the big sausage links. That way, if the kids dont like them they can pick them out without it affecting the entire pot of sauce.
3.) Use canned crushed or fresh tomatoes.
When using canned tomatoes vs fresh tomatoes there are a few things to consider. If you are growing your own tomatoes at home, it is obviously going to be cheaper to make a sauce using your own tomatoes. You will need approx 15 medium-sized tomatoes to equal 3 28 oz cans of crushed tomatoes.
Lets take a look at how to make a homemade spaghetti sauce using fresh tomatoes.
