I have used this recipe for years and it never fails. I usually make it in the summer as we usually have a vegetable garden and always end up with too many tomatoes, I then make in batches,for the freezer. I use a lot of garlic in this recipe but thats because we love it and the garlic sweetens in the roasting process. I have strained the sauce at times to remove the seeds. Though most people don’t mind tomato seeds.

1 teaspoon dried Italian herb seasoning
1/2 teaspoon sugar
  • Preheat the oven 400°f.
  • Slice tomatoes in half, set aside.
  • Pour the olive oil onto a large baking sheet and spread it around the sheet.
  • Sprinkle evenly the garlic, herbs, sugar, salt and pepper over the oil.
  • Place the tomatoes cut side down onto the baking sheet.
  • Roast for about 30-40 minutes, or until the skins start to lift from the tomatoes.
  • Allow to cool.
  • Remove the skins and put the sauce into a large bowl and break up the flesh with a fork.
  • Reheat sauce if using immediately.

Making Pasta Sauce Or Spaghetti Sauce Using Fresh Tomatoes

This is a quick homemade pasta sauce recipe using tomatoes without onions.

If you wish to add onions, you can chop one large onion finely and saute it really well before adding the tomatoes or you can use onion powder to just add the flavor easily.

If you want the sauce to be more of a smooth texture, you can puree a couple of tomatoes and cook along with the tomato sauce that we are going to prepare from scratch.

You can even process the entire tomato sauce in your food processor if you dont want any chunks of tomatoes at all, which will give you a very fine and smooth puree of sauce if that is what you like.

This is a wonderful sauce to make with fresh home grown tomatoes. I freeze this after its made for use as a quick and easy pasta meal. This sauce even tastes better the next day! It is the perfect way to use an abundance of tomotoes!

2 kg medium tomatoes, peeled and chopped
1 teaspoon salt
1/2 cup dry red wine
2 teaspoons brown sugar
2 tablespoons fresh basil leaves, finely chopped
2 tablespoons fresh parsley, finely chopped
2 tablespoons fresh oregano, finely chopped
1/2 teaspoon cracked black peppercorns
2 bay leaves

Steps:

  • Heat the oil in a large saucepan, cook the onion and garlic together, stiriing until the onion is soft. Add the tomatoes, salt and wine and simmer uncovered for about 15 minutes or until the tomatoes are soft.
  • Add the remaining ingredients, simmer uncovered for 10 minutes or until thickened. Remove bay leaves from sauce.
  • When cooled refrigerate for up to 3 days.
  • Use sauce as desired.

  • Cook onions, garlic and carrots

    In a pot or braiser, add a couple tablespoons of extra virgin olive oil. Heat over medium/medium-high until just shimmering. Add chopped onions, garlic and finely grated carrots. Cook, stirring regularly for 5 minutes or so.

  • Add tomatoes, water, and seasoning

    Now, add in crushed tomatoes and a little bit of water . Season with kosher salt and black pepper to your liking. Stir in dry oregano, paprika and fresh herbs . Bring this party to a boil briefly, then lower heat.

  • Simmer till nice and ready!

    Cover and let the sauce simmer for 15 to 20 minutes . You should end up with a gorgeous sauce that is the perfect thickness. Add a bit of fresh basil or parsley if you have some left.

  • Add pasta & serve

    If you’re after the best tasting pasta, add your just cooked pasta to the sauce and cook for another 5 minutes or so to allow the pasta to absorb the flavors and goodness of the sauce!

  • Tips For Making Crockpot Tomato Sauce

    Select meaty, plumb or paste tomatoes for a thick and flavorful sauce. My favorites are Roma, San Marzano, Amish Paste, and Juliet. Paste tomatoes have very little water content. You can still use other types of tomatoes, but it will take longer for the sauce to thicken.

    Cooking the tomatoes with the skins and seeds helps to thicken the sauce with the fruits natural pectin.

    Run the cooked sauce through a food strainer to remove seeds and skins.     4 large green peppers, seeded
    4 large onions, cut into wedges
    2 cans tomato paste
    1/4 cup canola oil
    2 teaspoons dried parsley flakes
    2 teaspoons dried basil
    2 teaspoons crushed red pepper flakes
    2 teaspoons Worcestershire sauce
    1 cup plus 2 tablespoons bottled lemon juice

    Steps:

    • In a Dutch oven, bring 2 quarts water to a boil. Using a slotted spoon, place tomatoes, one at a time, in boiling water for 30-60 seconds. Remove each tomato and immediately plunge into ice water. Peel and quarter tomatoes place in a stockpot., Pulse green peppers and onions in batches in a food processor until finely chopped transfer to stockpot. Stir in next 11 ingredients. Add water to cover bring to a boil. Reduce heat simmer, uncovered, 4-5 hours, stirring occasionally., Discard bay leaves. Add 2 tablespoons lemon juice to each of 9 hot 1-qt. jars.
