In the last few years, several seafood boil restaurants have popped up in the Greater Cleveland area. I kept meaning to try one, but hadn’t gotten around to it. So when The Sauce Boiling Seafood Express opened their new location in Downtown Cleveland and they invited us in to try the menu, I jumped at the opportunity .

The Sauce Boiling Seafood Express Makes Quick

University Heights upcoming restaurant The Sauce serves up boiled seafood bags.

UNIVERSITY HEIGHTS, Ohio — Over the past few years, boiled seafood bags have grown in popularity at restaurants around the country, inspired by menus Louisiana eateries. Northeast Ohio will soon get a new take on the concept with The Sauce Boiling Seafood Express, a restaurant that will open in a few weeks at 13888 Cedar Rd., University Heights.

Boiled seafood bags are plastic bags filled with seafood, potatoes, corn and sausage, mixed with a buttery sauce. Typically, the food is eaten by hand while consumers wear a bib.

Kyler Smith, the owner of The Sauce Boiling Seafood Express, saw the trend growing in Northeast Ohio, but often noticed that wait times were long — 45 minutes to an hour to get a bag.

As the name of his restaurant suggests, Smith found a way to make the process faster. He estimates that it will take customers about five minutes to order and get their food.

You walk in, you say you want a shrimp bag, a lobster bag, a crab bag. It comes with half a pound of whatever seafood you want, two corns, three potatoes and five sausages in each bag, he said.

The restaurant is designed in a line-order fashion, similar to a salad bar or a Chipotle, where customers can pick what they want in their bags and its fresh and ready to go.

Smith expects to have a high demand for his quick-service seafood bags.
