This sauce is so simple to make!

  • Start by grating the cucumber. Youll want to make sure you get as much moisture out of it as you can so that it doesnt make the sauce watery. Place the cucumber in a heavy duty paper towel, cheesecloth, or a clean dish towel, wrap it up, and then squeeze to remove the water from it.
  • Add the dried cucumber to a large bowl along with all of the other ingredients and then stir to combine.
  • Thats it! Some people put theirs in a food processor to make the dip smoother but I like the little bits of cucumber. Feel free to do whatever you like best.

    Note: The longer you let this dip sit the more the flavors develop. I recommend making it the night before and letting it sit in the refrigerator overnight. If you are in a hurry give it at least 1 hour before using.

    If you are wondering if this is a difficult recipe to make, let me clear that up right now: no! This recipe is super simple. Youll see below that it really takes almost no time to prepare this recipe. Once the cucumbers are ready you can mix and refrigerate until its ready!

    Sprinkle salt on cucumber chunks and let sit for 5 10 mins.

    Dice cucumber on a cutting board so they are finer and push down slightly to remove water. You can also grate them with a box grater.

    Carefully scoop cucumber in to a mixing bowl while leaving water behind.

    Combine the cucumber with the onion, yogurt, sour cream, mayo garlic, garlic powder and dill using a spatula, spoon, or whisk.

    Refrigerate for at least 2 hours before serving. Add additional salt to taste.

    How To Drain Water From Cucumbers

    You want to get out as much water from the cucumber as you can with salt and letting the cucumber sit out on paper towels.

    I usually wait about an hour however if you are in a rush, I find that 15 minutes is enough time of them sitting out for me to then squeeze enough of the water out of them to get the results I want. But I much prefer the hour time for sitting out as there is less for me to squeeze out. You want as much moisture out of the cucumbers as possible.

    First wash the cucumber. Then peel, de-seed, mince it, and set it aside.

    In a medium sized mixing bowl, mix together the sour cream, mayo, and lemon juice.

    Add in the crushed garlic, garlic powder, dill weed, salt, and pepper. Stir together.

    Finally, add in the cucumber, mixing everything together well.

    I am going to say this ahead of time, do NOT skip out on the time for drying out the cucumbers. It is important to dry them out so that you do not have a liquidy sauce.

    Peel the cucumber and then slice it in half and then in half again lengthwise and scoop out the seeds in the middle.

    Slice it up into smaller pieces and put them on top of paper towels and sprinkle the pieces of cucumber with the 1 tablespoon kosher salt and let them dry for a bit.

    Using the paper towel, wrap the cucumber and squeeze the slices to get out as much moisture as you can, you want them as dry as you can get them.

    Put the cucumbers into a blender or a food processor with the garlic, dill and lemon juice and chop till fine and combined.

    Add the garlic, dill and lemon juice mixture with the sour cream and Greek yogurt in a large mixing bowl and add kosher salt and pepper keep adding salt until you get a balanced flavor.

    Put the Tzatziki sauce in an airtight container and refrigerate until ready to use. The longer it sits, the better the flavors will mix, so feel free to make this ahead of time.

    Personally, Im a huge fan of gyros and nothing completes a wrap quite like a fresh, light tzatziki sauce.

    Kim, on the other hand, prefers that classic gyro sauce as a dip. For todays recipe, were sharing the best of both worlds.

    Similar to our roasted garlic hummus, this homemade tzatziki sauce with sour cream is smooth, creamy and can be used as dip or sandwich dressing.

    This condiment is made with plenty of fresh ingredients and a mixture of Greek yogurt and sour cream.

    This is a slight twist on traditional Greek tzatziki sauce because it is made with sour cream instead of yogurt. Its absolutely mouth-watering. You can put it on left-over lamb, or use as a dip or salad dressing. If you want, you can even freeze this if you would like to, for about 3 months. Just put it into a glass jar with a lid that keeps it air tight.

    Ingredients1 cup sour cream 3/4 cup fresh grated cucumber 2 TBSP fresh lemon juice1 TBSP olive oil2 3 small garlic cloves, minced1/2 TEA Himalayan sea salt 2 TBSP fresh dill, chopped finely 1 TBSP fresh spearmint leaves, chopped or scissored finely Optional: 1 TEA brine from a jar of olivesNote:I know that other chefs include parsley in their tzatziki sauce, and you can certainly do that. I didnt include it here because for me, it sometimes overpowers the whole dip, and the flavor of the dill due to its bitterness. DirectionsOne very important factor is to dry the grated cucumber as best you can squeezing out the moisture with a paper towel, then you can integrate it into this recipe without concern to it getting too watery.Mix everything together in a small bowl, and adjust the flavor according to your taste.     First, you need to prep the fresh cucumber. Start by peeling it and discarding the rind. Go ahead and shred it or finely chop the vegetable.

    Next, place it into a mesh sieve and allow it to drain. Kim used a coffee filter to help absorb the liquid.

    Additionally, you may need to squeeze the cucumber in a paper towel to dry it completely. Once thats done, set it aside.

    In another mixing bowl, add the yogurt, sour cream, olive oil, lemon juice, minced garlic, and chopped dill.

    Use a whisk to combine the ingredients. The mixture should be silky smooth, for the most part.

    Then, use a wooden spoon to gently fold in the shredded cucumber. Believe it or not, thats all there is to recipe.

    Tzatziki Sauce Recipe Ingredients

    • Cucumber. Fresh cucumbers are a must. It is important to make sure that your cucumber is not soggy and wrinkly before making this sauce.
    • sour cream. Be sure you are using full fat sour cream so that you get the creaminess that is wanted in this sauce recipe.
    • Greek yogurt. Plain, full fat greek yogurt is a must with this recipe. It is important that you have the full fat version so you get the full creaminess. Greek yogurt is also referred to at times as strained yogurt.
    • Fresh Garlic. You will need 1 clove of garlic for this recipe, it is best to peel the garlic clove right before using this recipe. I also find that I am not a fan of using prepeeled garlic when making this sauce.
    • Fresh dill. If you dont have access to fresh dill, you can use dried however I find the sauce more flavorful when using fresh.
    • kosher salt. You will use salt when draining the water from the cucumber and for making the sauce. I start with 1/4 teaspoon of salt and work my way up from there and end up with 1/2 teaspoon to 3 teaspoons of salt depending on how things are blending when I am making it. As you are adding salt, know that every sprinkle makes a big difference in how the sauce tastes.
    • Black Pepper.
    • lemon juice. Fresh lemon juice is best, however if you only have bottled lemon juice that will work too.

    Do You Peel Cucumber To Make Tzatziki

    Short answer: you dont have to! To make the Worlds Best Tzatziki recipe youll need a cup of cucumber . If yours has seeds, get those outa there before anything. I like to leave the peel on for more nutrients and fiber !

    Sprinkle with a touch of salt then lay the cucumber out flat on a few layers of paper towels and let sit while you prepare the other ingredients. The salt helps to draw out moisture from the cucumber!

    Homemade Tzatziki Sauce Recipe: Ingredientssubstitutions

    This is a recipe that I have made so many times and it is absolute perfection as-is. However here are a few possible substitutions:

    • Greek yogurt/sour cream. I have made this recipe with all these ingredients from fat free to full fat, and it always turns out amazing. Obviously, the higher the fat content the richer and creamier the taste will be!
    • White Balsamic Vinegar. Any other light colored vinegar works well in this recipe, but white balsamic is my favorite!
    • Garlic powder. Fresh minced garlic can be used in place of garlic powder. If you love loads of garlic feel free to add more until your heart’s content.
    • Dill. My favorite is using fresh dill straight from the garden, but dried dill works great as well!
