Now in my 40s, one of the most unforgettable experiences of my life was the day I crossed the finish line of a 15K race at the Biltmore Estate here in Asheville, NC. The Many Faces Of Vegan Tzatziki

My first version of this authentic vegan tzatziki sauce was a tofu based one. This was at the beginning of my creative journey before I knew the magical power of cashews. Since we do not have nut allergies, cashews are my go to for ultimate creaminess. I have other players in the creamy game , but my core creaminess comes from my fave little cashew.

Paleo Tzatziki Sauce is a garlicky and flavorful sauce thats made with just 6 simple real food ingredients. You know us, were all about simplicity here! Tzatziki is a mediterranean Greek dish thats traditionally made with yogurt, cucumbers, garlic, lemon juice and herbs and is served over grilled meats or as a dip for pita bread and veggies. The perfect accompaniment to your Greek inspired meals! To make it paleo, Whole30 compliant and dairy-free, I combined full-fat canned coconut milk and mayo to take the place of the yogurt. However, if yogurt is your thing you can certainly keep it traditional and make it with plain yogurt instead.

When it comes to carbohydrates, choose nutrient-dense ones, like whole grains, potatoes, legumes and fresh fruits. Try non-dairy milks and yogurts. And definitely do eat lots of vegetables.

Tips For Making This Recipe

  • Soaking cashews or not. I have a Vitamix blender and so dont take the time to soak my cashews. That thing is powerful and everything that goes into it comes out creamy. However, if your blender isnt jet engine speed, soaking the cashews in warm water for at least 30-minutes will help this recipe come out more creamy.
  • Potatoes to use. You really can use almost any variety of potato. I love to use russets, red potatoes, or even sweet potatoes. Just make sure they are cooked until soft.
  • Save that broth. One of the steps of this recipe is to boil the potatoes, onions, and carrots on the stove. Remember to save some of that broth for adding to the blender.
  • Tweaking to your taste preference. Most likely this cheese sauce will come out amazing as soon as you dip that spoon into the blender to give it a taste. However, if it needs a little tweaking, first try adding a little more salt or nutritional yeast, as those two ingredients can make a big difference, in my opinion.

  • Drain the cucumber well: If you dont, the sauce will get watery and unpleasant much sooner. The only time its not AS important is if you plan on eating it all in one go.
  • Its best to marinate: While its not essential, I DO recommend leaving the tzatziki to marinate for 2+hours for the best overall flavor.
  • If your yogurt isnt thick enough: You can manually strain it through several layers of cheesecloth or a nut milk bag, allowing the excess liquid to drain for a thicker yogurt. This will take several hours based on how thick the yogurt is.
  • If your cucumber has lots of seeds: You might prefer to de-seed it first before grating. That way, it wont water down the dairy-free tzatziki.
