Its hard to pin down the first time that white bbq sauce was served, but it is known that ever since Bob Gibson opened his BBQ restaurant in 1925, it has been on the menu.
Today, many have heard of Big Bob Gibsons Bar-B-Q, which is located in Northern Alabama, because of the awards that Pitmaster, Chef, and part-owner Chris Lilly has amassed for his delicious smoked chicken and barbecue.
If you are in Alabama or the southeast, you can easily pick up a bottle at your local grocery store. If not, then use this recipe to make your own homemade barbecue sauce. Its a versatile condiment that is low-carb and tangy.
This BBQ staple is made with simple ingredients it has a mayonnaise base, black pepper, horseradish, spices, and the addition of vinegar, making it a tangy sauce perfect for chicken breasts, pork chops, pork tenderloin, pulled pork, and just about any piece of meat that youd like. Some people even use it as a dipping sauce for things like chicken nuggets and French fries. Its not like traditional barbecue sauce recipes that are tomato-based.
We all probably have all of the ingredients already in our pantry and it comes together in no time. The hardest part about making it is waiting a few hours for the flavors to meld before using it.
Alabama White Barbecue Sauce Ingredients
If youre used to a regular, ketchup -based BBQ sauce, the ingredients here may throw you off a little bit, but once combined, theyre really delicious. Heres everything youll need:
- Mayonnaise to start, youll need 1 cup of mayonnaise. THIS is our favorite store-bought option.
- Apple Cider Vinegar 2 tablespoons of apple cider vinegar add some tang and acidity to the sauce.
- Brown Mustard youll also need 2 tablespoons of brown mustard.
- Honey 1 tablespoon of honey provides a touch of sweetness.
- Lemon Juice just like the apple cider vinegar, 1 tablespoon of lemon juice adds acidity and tang, while also brightening everything up a bit.
- Horseradish 2 teaspoons of prepared horseradish adds a touch of spice to the finished sauce.
- Spices and Seasonings to add more flavor, youll need a ½ teaspoon of onion powder, a ½ teaspoon of garlic powder, a ½ teaspoon of salt, a ¼ teaspoon of black pepper, and to top it all off, a ½ teaspoon of cayenne pepper.

How To Make White Bbq Sauce
One thing is for sure, this white BBQ sauce is so much easier to make than regular BBQ sauce. Our Smoky Bourbon BBQ sauce, which is incredible, takes at least 20 minutes to make, because you have to cook down the onions and allow the flavors to blend. In contrast, this white sauce can be mixed up in just 2 minutes.
Mix all of the ingredients in a bowl and whisk it all together until combined. You can refrigerator the sauce until youre ready to use it.
Or go ahead and brush it onto the meat youre grilling. I just use a basting brush and slather it on. Then you can also drizzle more sauce on after cooking, as desired. The flavor changes quite a bit depending on whether the sauce is cooked or not, so give it a try both ways to see how you like it best.
What Is Alabama White Sauce Made Of
Just as with any true southern recipe, especially when it comes to barbecue, the ingredients are a bit vague. There are two main ingredients in this white sauce, which are mayonnaise and vinegar. The rest of the ingredients are my best guess and personally think its pretty close to the original.
- Mayonnaise: this ingredient is the base of the recipe and responsible for the creamy white color and smooth texture.
- Apple Cider Vinegar: the vinegar in this recipe brings out the tartness as well as thins the mayonnaise.
- Worcestershire Sauce: this southern staple sauce
- Dijon Mustard: adding just a small amount of this bold condiment will add a wasabi-horseradish kick, but tone down the tanginess.
- Garlic Powder and Onion Powder: these two spices blend together in this sauce and Ive made a suggestion over how much to add, however, you can always add more.
- Salt: always a key spice in just about any southern recipe. Add as much as you like.
- Freshly Ground Pepper : You really want to see the flecks of freshly ground black pepper in this sauce, so again, this one you can add as much or as little as youd like.

Use A Higher Smoking Temperature
Traditionally, the low-and-slow cooking method of BBQ is used for tough cuts of meat that contain high amounts of connective tissue. Meats such as brisket and pork shoulder are usually cooked in a temperature range of about 225-250°F . But chicken breast meat is very lean and tender, so we dont need those same low temps.
BBQ expert Malcom Reed of HowToBBQRight.com gives a great recommendation for what temperature your chicken should be smoked at:
Bring the smoker to 275-300°F this higher temperature will render the skin and create bite-through texture.
For chicken, that slightly higher cooking temperature is perfect: its hot enough to render the collagen and fat in the dark meat, but not so hot that the white meat will dry out quickly. To keep an eye on the temps as they climb, well use Smoke X2 and well verify the internal temps of the chicken with the fast and accurate Thermapen®.

South Carolina arguably the birthplace of barbecue is home to four native barbecue sauces: a heavy tomato, a light tomato, a vinegar-pepper, and a mustard-based sauce.
Recently, however, an interloper has crossed the border, and we find ourselves with a fifth sauce: the Alabama White Sauce.
Alabama White is, obviously, a mayonnaise-based sauce that reminds many of a simple coleslaw dressing however, there is no question that Home Teams Alabama White is popular on things other than cabbage, especially with their Smoked Chicken Wings.

The head pitmaster of Big Bob Gibsons restaurant, Chris Lilly, first shared their restaurant original recipe which was measured in gallons and is a fairly simple mixture of mayonnaise, corn syrup, vinegar, and salt/pepper. My zesty version has the same sweet and tangy notes that make all BBQ sauces the perfect complement to smoked meats, but an Alabama white sauce is mayonnaise based, instead of tomato based, which gives it a great creamy flavor profile.
I first met Chris at a Guinness World Record event for the Largest Grilling Lesson in 2017 , and I was so incredibly impressed with his knowledge of all things BBQ. I consider my recipe an homage to the restaurant-style original with a little Hey Grill Hey kick.

After many trips to Alabama for football games I was first intrigued with the sauce because its so different from many others associated with barbecue. The zesty sauce was popularized in Decatur, Alabama and is commonly served on smoked chicken though I enjoy it slathered over crispy, fried chicken as in this recipe.
Other Considerations For Bbq Chicken: Dry Brining
Malcom brings up an important point that applies to both the white and dark meat areas of the chicken. Even though most of the meat is lean and tender, the skin is very fatty tissue. The fat in the skin needs to be fully rendered for the best results in the final texture and eating experience. The higher temp helps with that. But dry-brining the chicken will also help! Rubbing the chicken with salt and spices the night before you cook will draw out excess moisture in the skin, allowing the heat from the smoker to go right to work on the fat rendering without first having to heat up a bunch of skin water.
Also: we brushed the white sauce on the chicken near the end of the cooking process so it has a chance to melt into the surface of the chicken, flavoring deep into the cracks and the pores. Brush with more white sauce after you pull it from your smoker, and serve with additional sauce.
Splitting the chicken into halves, smoking at a higher temperature, and spritzing all work together to make this BBQ chicken flavorful, rich, and incredibly tender and juicy. This smoky and mildly spicy project will be a delicious, simple addition to your backyard BBQ, and you know itll turn out great if you keep an eye on your pull temps with high-accuracy thermometers like Smoke X2 and Thermapen.

When salt and baking powder are combined, it allows for the chicken skin to dry out and get extra crispy. This works great on whole chickens or wings, but be sure to leave out the baking powder if youre using skinless meat.

What Is White Bbq Sauce Made Of
Breaking with the tradition of making barbecue sauce from tomatoes, Alabama white sauce starts with a mayo base. I like mine extra tangy so I like to use plain Greek yogurt instead. The other ingredients are as follows.
- mayonnaise/Greek yogurt/Miracle Whip
- Worcestershire sauce
- other spices
Some recipes like to add a little sugar to balance out the tang but I dont. If you like that little added sweetness feel free to add in some honey, brown sugar, or white sugar. Just be sure to start small.
The spices are the typical ones for bbq like garlic powder, paprika, salt, and pepper. Cayenne is another one that is added but I prefer a few dashes of hot sauce.
The mustard used can be varied as well. Spicy brown is a great one to use. If you are looking for a slightly different profile, try adding Dijon or honey mustard.
If you like it hot, you can add extra hot prepared or grated horseradish but I like to use a prepared horseradish sauce. You can find it near the deli section.
