When Wilbur was trying to replicate In-N-Outs famous burgers, he struggled to figure out how many slices of American cheese to include per patty. When he looked at promotional photos of the burger, it appears to have two slices of cheese on top of each burger patty. But making the burger with four slices of cheese was way too cheesy of an experience .

Then, he learned the chain instructs its employees to make the burger smile by folding the cheese over in the front. By folding down the top quarter of each cheese slice and facing this doubled-cheese piece at the front of the burger, In-N-Out employees give their burgers the appearance of having twice the cheese without actually having to double-down. We gave the hack a try, and sure enough, it worked! As the cheese melts, it makes its way to the back of the burger anyway, so we didnt miss that quarter of cheese in our last bites of the burger.

The final step to creating your In-N-Out Burger copycat recipe is to add the patties. Using a spatula, stack the cheese patty on top of the onion-topped patty. We’re talking onions slow-cooked to oblivion, French-onion soup style. They’re melted into a near fondue-like consistency.

    I’ve had some experience cooking onions, but my first try at these, done by simply slow cooking a fine dice of onions in a little oil fell miserably short. They were brown, but they still had a distinct, crunchy, oniony texture. I was cooking them over the lowest heat possible, but they simply weren’t meltingthey were threatening to burn before they sufficiently broke down.

    Then I thoughtif onion soup-like texture is what I’m after, why don’t I use the onion soup method? I slowly caramelized onions in a little oil, then deglazed the pan with a little water and repeated this process several times, allowing the liquid to evaporate and the onions to brown further with each iteration. By doing this, the onions cool as they cook, allowing for slower caramelization, as well as distributing the browned sugars more evenly throughout the mix, improving texture and flavor.

Since In-N-Out is all about consistency this policy remains in-tact even in states where they could serve less than medium burgers.

    • The buns are placed on a Teflon sheet to the left of the grill for at least one minute before the burger is grilled
