Yes, you can pick these peppers when theyre still green, but they are much better when they mature and turn bright red or orange-red. They are sweeter and fruitier with a much better overall flavor when they have ripened. However, if it is the end of the season and you are concerned about frost, then it is best to pick them green and attempt to finish ripening them indoors or use them to make a salsa verde or cook them into other meals.

How Tabasco Sauce Is Made

One of the most popular hot sauces in the world is Tabasco.

Everyone wants to know how its made.

The recipe and process are very simple First you start with the peppers. Tabasco peppers planted and grown on Avery Island are allowed to ripen to a deep red color.

The peppers, when ripe, are picked by hand and then mashed, mixed only with a small amount of salt the salt comes from the salt mines under Avery Island.

The mashed peppers are then packed into wooden barrels and topped with a bit more salt. The barrels full of mashed peppers are then left to ferment for up to 3 years.

Youve got to have some serious patience to make Tabasco!

Finally, after 3 years, the barrels of mash are ready to be mixed with distilled vinegar. The mashed peppers are mixed and steeped for several weeks in vinegar then the mixture is strained and bottled.

The steps are easy, but it takes a bit of work to make authentic Tabasco pepper sauce.

It Wouldn’t Be Tabasco Sauce Without The Red Stick

When it comes to American-made hot sauce brands, one name stands above the rest: Tabasco. The Tabasco company was founded in 1868 in the rural community of Avery Island in southern Louisiana. New Orleans banker Edmund McIlhenny, tired of the bland cuisine of the Reconstruction era, used pepper plants of the Tabasco variety brought from Latin America to create a spicy and delicious sauce.

McIlhenny called his creation Tabasco Pepper Sauce, patenting the name. The hot sauce quickly gained popularity in America and Europe in the 1870s thanks to the recipes the company created to use with the sauce. It is now an important part of Louisiana’s famous cuisine, added to dishes like shrimp etouffee. Relatives of the McIlhenny family still run the company.

The pepper sauce production process has remained relatively unchanged over the last 150 years. The field hands that originally worked on Avery Island used what’s known as le petit bâton rouge, or a “little red stick,” to determine the Tabasco peppers’ ripeness. The pepper had to match the color of the deep red on the stick in order to be picked.

Surprisingly, despite technological advancement, the company still uses the sticks, as workers still pick peppers by hand. So far, a machine hasn’t been developed that can make that determination on ripeness, John Simmons, the great-great-great grandson of Edmund McIlhenny, told Louisiana Farm & Ranch. Versions of the red sticks are sold in Tabasco’s gift shop.

The Louisiana brand’s new Scorpion Sauce is available today, along with a milder Roasted Red Pepper Sauce.

The summer weather is certainly heating up and while that means doubling down on ice cream and Popsicles for some, the hot weather causes many of us to crave spicy foods even more. To celebrate that love of summertime spice, Tabasco is introducing two new limited-edition hot sauces today: Scorpion and Roasted Red Pepper.

The two new hot sauces are very different, with the Scorpion Sauce being way hotter than the Roasted Red Pepper Sauce and the latter of the two serving more as a savory condiment than as a hot sauce.

The Scorpion Sauce is the hottest sauce available from Tabasco and is made from a combination of scorpion peppers blended with guava, pineapple and a dash of Original Tabasco Sauce. The final product is a tangy sauce with untamed heat and a touch of Caribbean sweetness. Scorpion Sauce, however, is not for the faint of heart as it is nearly 20 times hotter than the Original Tabasco Sauce.

The Roasted Red Pepper Sauce, on the other hand, is made with slow-roasted Tabasco peppers, onions, basil and balsamic vinegar. The result is a rich, smoky sauce that has similar flavor notes to the Tabasco Chipotle Sauce, but with less raw heat, and is a great condiment, rather than just a source of spice.

Who knows what the next world’s spiciest pepper will be, but we can safely guess that it’ll be a hot one.

It’s Aged In Barrels Like Bourbon

Tabasco has stuck around for over 150 years, so it’s safe to say that it’s proved to be worth any wait. The original recipe calls for creating a mash of red tabasco peppers and salt that mash is then aged in barrels for three years before being combined with distilled vinegar to become the highly concentrated sauce that goes into the bottle.

Does Tabasco Sauce Need To Be Refrigerated

You dont need to refrigerate Tabasco after opening, but its not a bad idea to do so. Refrigeration helps the condiment retain quality for longer and prevents it from darkening that quickly.

In other words, you dont need to keep your half-open Tabasco bottle in the fridge.

Read labels. Some future Tabasco flavors might actually require refrigeration after opening.

The bottom line is: if youre going to finish the Tabasco bottle within a couple of months of opening, leaving the condiment at room temperature is fine. But if you expect it to sit around for longer than that, its better to keep it in the refrigerator.
