    Some condiments are so old we don’t know for sure how or when they were first made. Soy sauce, for instance, is thought to have been introduced to Japanese cuisine some time between 250-710 CE, according to Kikkoman. By comparison, oyster sauce is a very recent invention.

    Back in 1888, the proprietor of a food stall in the Guangdong province of China accidentally forgot about a pot of oyster soup he’d left simmering on the stove. When he returned several hours later, he was greeted with a thick brown paste instead of the clear oyster soup he’s intended to make, according to Great British Chefs. And, this spicy beef lettuce wraps with oyster sauce from Americas Test Kitchens The Ultimate Meal Prep Cookbook has earned a spot on my repeat list.

    It is one of those dishes that was so quick to make, it shocked me. I had it on the table in less than 20 minutes. The dish features simple ingredients: browned ground beef and chopped poblano peppers.

    But it gets big flavor boosts from two lightning-fast combos of ingredients: a bit of chile-garlic sauce and minced garlic that you mash together and saute for just 30 seconds, and a sauce of water, oyster sauce and Shaoxing wine that you whisk together and add right at the end.

    In fact, the only problem I had with the dish was that we enjoyed it a little too much. It ruined my meal planning! My idea was to make it and have it over two nights, but we ate and ate until, well, there wasnt enough for two more meals.

    Im betting that might happen to you, too, so I changed the servings from the recommended four in the cookbook to just two to three servings. Thats a good sign though, dont you think?

    If youre going to try it, I highly recommend using the recommended salty, sweet oyster sauce because it is ideal for this dish. But if you dont have it, you can use soy sauce, hoisin or fish sauce in its place.

    Unlike fish sauce, which is decidedly fishy, lick a dollop of oyster sauce off your finger and you wont think, Wow, oysters! But it is absolutely loaded with flavor, according to test kitchen director Chris Morocco. Its sweet. And salty. But the flavors run deeper than that.     Ingredients For Crispy Cantonese Beef Chow Mein

    • Chow Mein Noodles – Chow mein noodles can be found at any Asian grocery store, in the refrigerator section where they sell fresh noodles. They are yellow in colour and are usually made with wheat flour and egg. Since we are using fresh pre-steamed chow mein noodles, we don’t need to boil them before using them.
    • Oyster sauce – You can find oyster sauce at an Asian grocery store or online. There is no true substitute for the slightly sweet, and briny sauce but if you can’t find oyster sauce you can try to substitute it with 2 tablespoons of hoisin sauce, and 2 tablespoons of soy sauce.
    • Maple Syrup – I like to use maple syrup or honey as sweeteners in the kitchen, but you can substitute this with sugar if that is all you have in the kitchen. If you use sugar, use half the amount.
    • Beef – For this beef chow mein recipe, you can substitute it with any kind of meat. You can also make this vegetarian by omitting the meat steps. I like to use flank steak for this but this recipe also works well with any type of steaks, as long as it’s cut into smaller pieces

    When you are cutting the beef, you want to cut it against the grain to keep it tender . When you lay your meat down, you will notice the meat grains will go a certain direction, you want to cut against it to create shorter fibers per slice. This works with beef, chicken, and pork.
