This recipe is so simple! Yay! Start by soaking your cashews. Just pour boiling water over them and let them sit for an hour. . Also, be sure to steam or microwave your cauliflower before making the oil free alfredo sauce.
Next. drain the cashews and add all the ingredients to the blender. Blend until completely smooth. At this point, taste the sauce and see if you need to add any more salt or lemon juice. Adjust to your liking.
You can serve this vegan alfredo sauce on any pasta dish, but I love to serve it over fettuccini. Top with torn fresh basil leaves. The Many Faces Of Vegan Tzatziki
My first version of this authentic vegan tzatziki sauce was a tofu based one. This was at the beginning of my creative journey before I knew the magical power of cashews. Since we do not have nut allergies, cashews are my go to for ultimate creaminess. I have other players in the creamy game , but my core creaminess comes from my fave little cashew.
I left the original recipe in the notes, for all my nut free friends, but I have updated the main recipe to the version we make now. Its creamy, its garlicky and has a nice little tang. And it goes perfect on my favorite vegan Greek gyros or Vegan Shawarma!

As of right now, Olive Gardens alfredo sauce is not vegan. The sauce contains heavy cream and Parmesan cheese, which are both dairy products. Hopefully in the future, Olive Garden will come out with a vegan version of their alfredo sauce!
My obsession with Bettuccine alfredo began when I was a child. The sauce is only made with one pan because it does not require blending. The cheeses used in traditional Alfredo are salty and have a lot of flavor. We dont use cheese, so add salt. If you dont have almond milk, use any type of non-dairy milk, but make sure its unsweetened and unflavored. The cornstarch slurry can be created with warm water and warm water to thicken the sauce instead of the flour. Remove the pasta from its bag and add it directly to the reduced sauce with tongs.
How To Make Vegan Alfredo Sauce:
STEP 1: Cut the cauliflower into florets. Place them in a sauce pan together with the cashews, the garlic, and the almond milk.
STEP 2: Add the nutritional yeast. Stir everything with a wooden spoon until well combined.
STEP 3: Cover with a lid and cook for 20 minutes. There wont be much liquid left. Transfer everything into a high speed blender. Add the lemon juice, a pinch of nutmeg, the apple cider vinegar, and 1/2 cup more unsweetened almond or soy milk as well as salt and pepper.
STEP 4: Process until smooth. This should take about 30 seconds.
STEP 5: Cook the fettuccine according to the instructions on the package. Set aside.
STEP 6: Pour the blended sauce into a pan and cook for a minute.
STEP 7: Then add the cooked fettuccine and stir until well combined. Season with salt and pepper again if you want.
STEP 8: Serve immediately and sprinkle with freshly chopped parsley. Enjoy!

- 2 small cauliflowers, cut into florets
- cup nutritional yeast
- 1 cup plain soymilk, or other non-dairy milk
- 4 oz raw cashews
- 1. Bring two medium pots of water to a boil over high heat.

This can happen if your blender isnt very strong. In this case, pour the sauce through a fine-mesh sieve to remove any pieces that didnt blend properly.

How To Make Vegan Alfredo Pasta
To make the recipe, start by gathering all of your ingredients.
In a saucepan, whisk the cornstarch into the milk or creamer until its completely dissolved, with no lumps.
Whisk in the salt and oil or vegan butter spread. If desired, also add 2 tsp minced garlic.
Over low-medium heat, slowly bring this mixture to a boil. Stir occasionally at first, then constantly once it begins to thicken. The whole process should take under 10 minutes.
Once thick, turn off the heat and whisk in the nutritional yeast or vegan Parmesan until it melts. Taste the sauce, and season with salt and pepper as desired.

How To Make This Sauce
To make this delicious Vegan Cauliflower Alfredo Sauce, you want to start by boiling your cauliflower florets. I boiled mine for between 8 to 10 minutes until softened. Alternatively you can steam your cauliflower for approximately 15 minutes.
The next step is to add all of your sauce ingredients to a blender. This includes the boiled cauliflower, nutritional yeast, a plant-milk of choice , garlic powder, sea salt and lemon juice . As you blend the sauce, add more liquid as needed to get a smooth consistency. I like to give mine a taste once blended to adjust the salt content as needed.
Finally, you want to add the sauce to a saucepan with your pasta of choice. I used whole wheat fettuccine, but chickpea pasta or another alternative would work great as well!
Enjoy served with freshly cracked pepper.
