Hot sauce began very simply as a way of preserving flavorful, spicy peppers. The earliest hot sauces were likely from the Mayans and were probably just fermented pepper mash mixed with water. The oldest commercial sauce still in production today is Tabasco, founded in 1868, which is a pretty simple mixture of pepper mash, vinegar, and salt. Typically when people think of hot sauce they think of something like Tabasco that is very watery and very acidic. This is one style of hot sauce but there are many different versions you can make.

It is possible to overdose on capsaicin, the chemical that makes chili peppers hot. However, the only way you can die from eating ghost peppers is if you eat them in sufficient quantity. A study performed in 1980 calculated that it would take consuming 3 pounds of superhot pepper powder, like ghost pepper powder, to kill a person weighing 150 pounds. The story of Yellowbird, the current No. 1 hot sauce sold by Whole Foods/, celebrating its 10th year with a Hot Ones collaboration, is a triumphant one. But its no fun to start there.

In the beginning, it was very bad. So bad that folks couldnt even keep it down.

It was 2012 and Yellowbird co-founder George Milton had been experimenting with hot sauces at home. He entered the annual Austin Chronicle Hot Sauce Festival as an individual with his latest recipe. As he walked around sampling from each unmarked ramekin, he figured out which one was his and parked himself nearby to gauge the reaction among attendees.

The facial expressions were 100 percent negative, he says.

Milton cringed inside as one after another hot sauce lover cringed on the outside. He even saw a couple people spit out his creation onto the pavement.

That was that was definitely one place where I could have ended my hot sauce journey, Milton says. It was a great learning experience.

We know that he learned from that experience because the Austin-based brand is everywhere: H-E-B, onHot Ones, on the table at your favorite restaurant. Lets go with another failure before we get there, though.

How about the time Milton sent out a bottle of fermented sauce that exploded in a local chefs car?

We popped some of those bottles in our backyard and it literally shot up like 15, 20 feet in the air, he says. Link laughs.

    Ghost peppers grow well when temperatures are at least 70 degrees Fahrenheit .

    You can prepare your peppers to go outside around the 8 week mark, when plants are about 4 inches tall and the last threat of frost has passed. The process of hardening off your ghost seedlings is a controlled, systematic way in which you toughen them up so they arent shocked when they go outside.

    To sum up, this is a two-week process: indoors and outdoors. During the first week, point a small fan at your seedlings for 15 minutes the first day.

    Its important to remove a piece of jerky from the smoker, dehydrator, or oven and allow to cool 5 minutes before testing. Testing warm jerky will hint that the jerky isnt finished drying when it actually is.
