Capsaicin Is Responsible For Hot Pepper Heat

Hot Sauce Expert Guesses Cheap vs Expensive Hot Sauce | Price Points | Epicurious

Capsaicin is the chemical compound in a pepper that is responsible for heat. This occurs as a natural deterrent to prevent natural predators from consuming the fruits. It seems to work the opposite for humans because they seem to be drawn toward hot sauce. The hotter the pepper, the more capsaicin it has and this is a good thing. Capsaicin has many health benefits to it but the advantages could be lost in the hot sauce. Capsaicin does not have any flavor to it so the amount of heat in a hot pepper will not affect the flavor of a hot sauce.

How To Make Fermented Louisiana Hot Sauce

Ingredients Needed

  • 1 pound red chili peppers , chopped
  • 1 quart unchlorinated water
  • ½-1 cup white wine vinegar to your preference

The Method

First, ferment the chili peppers. Chop the peppers then pack them into a jar, leaving at least 1 inch of head space. The peppers may rise a bit when fermenting.

Next, mix 1 quart unchlorinated water with 3 tablespoons sea salt. Pour just enough brine over the peppers to cover them, pressing them down a bit as you go. It is important to keep the peppers covered with brine to avoid spoilage. Check this daily.

Screw on the lid and set the jar away from direct sunlight to ferment for at least 1 week. Ideal temperatures are between 55-75 degrees F. The most active fermentation period is between 1-2 weeks, so be sure to monitor it during this time. Burp the jars often by unscrewing the lid a bit to let out some of the accumulating gases. Or, use an airlock or membrane for easier fermenting. See our page, How to Make Fermented Pepper Mash, for further instruction.

After 1-2 weeks, the fermenting activity will diminish and the brine will turn cloudy and taste acidic.

Pour the fermented peppers, including brine, into a pot along with the vinegar. Bring to a quick boil. Reduce heat and simmer for 15 minutes. Alternatively, you can strain out the fermented peppers and discard the brine, then boil the peppers with 1 cup vinegar and 1/2-1 teaspoon salt. Some people prefer to use the brine.

Chocolate Bhutlah 2000000 Shu

Dont be fooled by the name of this chili you wont be popping these into your mouth like your favourite bonbons. Called the Chocolate Bhutlah, this fiery friend does have a similar colour to cocoa, but with a potential 2,000,000 SHU, its a force to be reckoned with. Unlike some peppers on our list, this one is fast-acting and instantly heats the mouth as soon as you bite into it. And once the heat hits, its going to be there for a while, so it might be worth having some milk, yoghurt, or ice cream to hand to try and put out this fire as soon as it gets going.

Because of its instant and relentless heat, the Chocolate Bhutlah is often included in scorching sauces. Just a drop or two is enough to take your dish to the next level so use sparingly, and youll be in for a spicy treat.

Pot Barrackpore 1300000 Shu

From the town of Barrackpore, located in southern Trinidad and Tobago, the 7 Pot Barrackpore bears a red, fleshy appearance culminating in a pointy end, which could almost serve as a warning. In short, it looks mean. With the potential to be 520 times hotter than the average jalapeño, the 7 Pot Barrackpore provides a SHU of anywhere up to 1,300,000, which is bound to blow many away when they get their hands on it.

Leaning toward a much more bitter taste, this is a savoury pepper with very little sweetness going for it. However, it works as a superb ingredient in hot salsas and sauces. The 7 Pot Barrackpore is definitely a rare one on our list, with it being quite hard to find in food shops. Many have taken to growing this one at home to produce their own supply.

How Long Will This Sauce Keep

It should keep a few months easily in the fridge, or even longer. It’s all about the acidity. Target level ph for shelf stable foods is below 4.6 ph, but should probably be lower for home cooks, around 3.5 or so, to account for errors. If you’re concerned, add more vinegar to lower the ph.

The best ph meters that I recommend are from Thermoworks. Get yourself a ph meter from Thermoworks today. I am a happy affiliate.

Soil Conditions Determine Heat Level

The proper pH balance of soil can make a difference in how hot the peppers will become. However, even the most acidic soil will not make a bell pepper any hotter. Growing peppers in soil with lower acidic levels can be achieved by adding organic matter like compost or natural acids like vinegar. The soil conditions wont affect the color of hot peppers as much as the right harvest time.

Homemade Carolina Reaper Hot Sauce Recipe

  • First, heat your oven to 400 degrees. Set 8 ounces of Carolina Reaper peppers, 1 heat of garlic and halved onion on a baking sheet. Bake them for 15-20 minutes, or until the skins slightly char. Keep an eye on these. You dont want them to burn, and watch out for any fumes. You may want to turn on the oven fan and open some windows. See my safety notes below.
  • Add the peppers and onion to a food processor. Squeeze garlic out of their skins and into the food processor they go.
  • Add in the vinegar and salt. Process until you get a chunky mixture. Watch out for the fumes!
  • Add in a half cup of water and process again until the sauce starts to smooth out. Check it for thickness. If youd like a thinner sauce, add in a bit more water a little at a time, processing, until you reach your desired consistency.
  • If desired, you can strain the sauce to smooth it out, or use it as-is. If you do strain it, you can discard the pulp or dehydrate it to make a superhot seasoning powder.
  • Pour into sterilized bottles and enjoy. The longer you let it sit, the more the flavors will meld.
  • Thats it, my friends! This is pretty much the hottest sauce around. It will truly bring on the heat! Go for it, you crazy chilihead, you! I know you love cooking with hot peppers.
